PITA POCKETS WITH GRILLED VEGGIES



Pita Pockets with Grilled Veggies image

Number Of Ingredients 7

2 small green, red or yellow bell peppers, cut into 2-inch strips
2 slices fresh or canned DOLE® Pineapple
1 medium zucchini, cut into 1/2-inch thick slices
Olive oil to brush
1 pkg. DOLE® All Natural Endless Summer Kit
1/3 cup crumbled feta cheese
8 pita pockets (about 7-inches), cut in half

Steps:

  • Brush bell peppers, pineapple and zucchini slices with olive oil. Grill pieces on each side until tender. Cool slightly; cut into chunks.
  • Combine all ingredients in salad kit except Summer Vinaigrette, in large bowl. Add bell peppers, pineapple, zucchini and feta cheese, toss well. Toss with vinaigrette. Spoon salad mixture into pita breads halves.

This is a wonderful way to do veggies, they are so good prepared this way on the grill. You can make these packets up hours in advance, and keep the foil packets in the fridge, just grill them when ready!

2 cups fresh corn (cut/shaved from the cob)
1 red sweet bell pepper, cut into strips
1 green bell pepper, cut into strips
1 small onion, sliced
8 -10 cherry tomatoes, cut in halves
2 medium zucchini, cut into 1-inch pieces (optional)
1 tablespoon chopped fresh parsley
1/4 teaspoon dried basil
1/2-1 teaspoon lemon pepper (or to taste)
salt
2 tablespoons butter, divided (or to taste)

Steps:

  • In a large bowl, mix all veggies and spices together (except butter).
  • Put the veggies on 2 (12x12-inch) pieces of heavy foil.
  • Dot each with 2 Tbsp butter.
  • Bring ends of foil together, twist to seal(Can poke small holes in the TOP part ONLY! if desired, but is not necessary).
  • Grill packets over hot coals for 15-20 minutes, or until veggies are tender.
  • Serve hot -- delicious!.
  • **NOTE** olive oil may be replaced for the butter, but the taste won't be as good!.

2 medium zucchini, cut into 1/2 inch slices
1 large green bell pepper, cut into 1/2 inch pieces
1 large red bell pepper, cut into 1/2 inch pieces
1 lb fresh mushrooms, halved
1 large onion, coarsely chopped
6 medium carrots, cut into 1/4 inch slices
2 cups small broccoli florets
2 cups small cauliflower florets
1/4 cup olive oil
1/4 cup butter or 1/4 cup margarine, melted
1/4 cup minced fresh parsley
4 cloves garlic, minced
2 teaspoons dried basil
1 teaspoon dried oregano
salt and pepper

Steps:

  • Mix together all the vegetables in a large bowl.
  • Take two pieces of double layered heavy duty foil (18-inches square) and lay one on top of the other.
  • Put the vegetables in the center of the foil.
  • Mix together the dressing ingredients; drizzle over the vegetables.
  • Fold the foil around and over the vegetables and seal tightly.
  • Grill, covered, over medium heat for 30-35 minutes or until the vegetables are tender, turning once.

2 tablespoons vegetable oil
2 tablespoons barbecue sauce
4 cups broccoli florets, cooked and drained
2 cups cauliflowerets, cooked and drained
1/4 cup reduced-fat mayonnaise
1/2 cup each grated carrot, red cabbage and yellow summer squash
6 pita breads (6 inches), halved and warmed
2 cups shredded lettuce

Steps:

  • In a saucepan, cook onions in oil until tender. Add barbecue sauce; cook and stir for 2 minutes. Add broccoli and cauliflower; heat through. Stir in mayonnaise, carrot, cabbage and squash; heat through. , Fill each pita half with about 2 tablespoons lettuce and 1/2 cup vegetable mixture.

1 red pepper (sliced)
1 cup mushrooms (sliced)
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. oregano
1 clove garlic (minced)
1 Tbsp. olive oil

Steps:

  • Spray a 1 foot piece of aluminium foil with a non-stick spray. Put all of the ingredients into the center and wrap up into a foil packet. Ensure that the edges are sealed tightly. Place on grill that is preheated to medium. Grill for 10 min., flip carefully, grill for another 7 min. Remove from barbecue. Open packet and serve.

1 cup fresh whole green beans
4 medium plum tomatoes, quartered
