PEPPERONI PIZZA GRILLED CHEESE
When you want a sandwich that will rock the house try my Pepperoni Pizza Grilled Cheese. Just make sure you enough for seconds!

Steps:
- Start building your sandwiches by placing four slices of sourdough bread on the counter Cover each slice of bread with a total of 2 cheese slices on each slice of bread.
- Place the pepperoni on top of the american cheese on each of the bottom slices of the sourdough.
- spread about 1 ounce of pizza sauce on top of the pepperoni on each sandwich
- Place half the mozzarella on top of the pizza sauce on each sandwich.
- Top the two finished sandwiches halves, with the other piece of sourdough that you have cheese already on, with the cheese facing the pepperoni.
- Melt the butter in a small pan over low heat, then using a pastry brush, brush one side of each of the sandwiches liberally with the melted butter
- Heat your pan on the stove top until it is hot enough to toast the bread.
- Place the buttered side down on the pan.
- Turn heat down to medium, and cover the sandwich with a pot lid to keep the heat in and help the cheese to melt. After about 3-4 minutes check the bread on the pan to see how the color is. It should be toasted a dark golden brown.
- Brush butter on the side that is up, then turn it over to repeat the process of toasting the bread. (Use the pot lid again to help melt the cheese) After 3-4 minutes check that side, to see how the color is.
- If the cheese is not fully melted, turn the heat down to low and keep the lid covering the sandwich until the cheese has melted. Just be careful not to burn the bread.
- Place sandwich on plate, cut in half, serve and enjoy!

PIZZADILLA (GRILLED PIZZA SANDWICH)
I was watching TV the other day, and I saw a commercial for something called a Papadilla. What follows is my attempt to make one of these things. What this relatively fast and easy procedure allows you to do is make a single portion of what's very, very close to pizza in a pan on top of the stove in just a few minutes, without ever having to turn on the oven. Serve your pizzadilla with a side salad topped with Parmigiano-Reggiano cheese.

- Divide dough into 4 equal pieces. Roll each piece into a 1/8-inch thick circle on a lightly floured surface.
- Heat a pan over medium-high heat and brush with oil. Add 1 piece of dough and reduce heat to medium. Cook for 2 minutes and flip. Spread 1/4 of the sauce over the dough. Sprinkle 1/4 of the mozzarella cheese and some sausage, mushrooms, and red onion on top, leaving about 1/2 inch of dough around the outside. Press gently into the middle of the dough with a spatula to make a crease; fold in half.
- Brush crust with a little more olive oil and flip over. Repeat on the other side and continue cooking until both sides of the pizzadilla are as browned and crisp as you like.
- Repeat with remaining pizza dough and toppings. Cut each pizzadilla in half and serve.

- Spread 1 side of each bread slice with about 1 teaspoon butter.
- Spread 1 tablespoon pizza sauce onto 1 bread slice, buttered-side down. Top with 1 slice cheese, 1/4 pepperoni, 1 1/2 teaspoons chopped basil leaves, 1/2 cup salad greens, 1 slice cheese and 1 bread slice, buttered-side up.
- Heat 12-inch skillet or griddle over medium heat.

- Lay out 2 slices of bread.
- Place 7 pepperonis on one slice of bread.
- Top pepperoni with 2 Tablespoons marinara sauce.
- Lay 2 fresh mozzarella slices over sauce, then place 2 tomato slices on mozzarella.
- Sprinkle 2 Tablespoons Parmesan cheese over everything, then top with other slice of bread.
- Spread garlic butter (or if you don't have garlic butter, regular unsalted butter will work great) on one side of the sandwich and place that side down on the preheated griddle.
- Then butter the slice on top so it will brown when you flip it over.
- Grill until golden brown on both sides and the cheese is melted (about 2-4 minutes per side).
- Repeat all the steps for the other 3 sandwiches.
- Serve with a side of marinara sauce for dipping.
