GRILLED CHEESE & PEPPER SANDWICHES
This is a tasty and wholesome sandwich to make for one or two. It's a nice twist on a grilled cheese, very tasty and filling and especially good with rye bread. -Arline Hofland, Deer Lodge, Montana

Steps:
- In a skillet, heat oil over medium-high heat; saute onion and peppers until tender. Divide between 2 bread slices. Top with cheese and remaining bread. Spread outsides of sandwiches with butter., In a large skillet, toast sandwiches over medium heat until golden brown and cheese is melted, 2-3 minutes per side.

PEPPER JACK GRILLED CHEESE SANDWICH
Steps:
- Heat a grill pan on the stove. Brush vegetable oil onto prepared sweet mini peppers and place in the grill pan. Grill peppers for about 4 minutes on each side. Remove.
- Place slices of bread on a clean work surface. Cover 2 slices of bread with pepper jack cheese. You may need to use more than a slice of cheese for each slice of bread. Layer roasted sweet mini peppers and pastrami on top of cheese. Top with remaining pepper jack cheese and sandwich with remaining slices of bread.
- Melt butter in the grill pan. Place sandwiches in the pan and allow it to cook for 2 minutes. Flip and cook for another 2 minutes.

MARY'S GRILLED CHEESE SANDWICH WITH PEPPER JACK AND BACON OIL
Steps:
- Brush both sides of both slices of bread with the bacon oil. Place the cheese on top of one slice and top with the other slice of bread.
- Heat a griddle on top of the stove over medium-high heat. Place the sandwich on the griddle and grill for about 1 minute on each side, or until the bread is golden brown and the cheese is melted. Slice the sandwich into 8 small serving pieces.
GRILLED PEPPER JACK BACON BURGER SANDWICHES WITH JALAPEñOS
A friend made some grilled cheeseburger sandwiches and I decided to put my own little spicy spin on it. I use potato bread and cajun seasoned bacon. YUM!

Steps:
- Fire up grill. Mix burger ingredients until bacon is evenly distributed and meat soaks up liquid.
- Grill until juices run clear or slightly pink. Cover burgers with foil to keep warm.
- Spread butter, margarine or mayo on one side of each slice of bread. Place four slices of bread, butter side down in large fry pan. Put one slice of pepperjack on each slice of bread. Divide jalapenos into four portions and top each slice with jalapenos. Top jalapenos with rest of pepperjack. Add rest of bread, butter side up.
- Fry on medium until cheese is melted.
- Open up grilled cheese and jalapeno sandwich and place warm burger inside and close sandwich. Slice down the middle.
- Enjoy!
MARY'S GRILLED CHEESE SANDWICH WITH PEPPER JACK, MANGO AND WATERCRESS
Steps:
- Brush both sides of each slice of bread with the butter and spread the mango puree on both sides of each slice of bread. Arrange the watercress over the top of one side of a slice of bread. Place the cheese on top of the watercress and top with the second slice of bread.
- Heat a griddle on top of the stove over medium-high heat. Place the sandwich on the griddle and grill for about 1 minute on each side, or until the bread is golden brown and the cheese is melted. Slice the sandwich into 8 small serving pieces.
GRILLED ROAST BEEF AND MELTED PEPPER JACK CHEESE SANDWICH
I modeled this sandwich after one I enjoyed at a little hole-in-the-wall coffee shop in Cardiff by the Sea, in Southern California. It was wonderful and so is this!

Steps:
- Lay sliced bread on bread board.
- Paint tops of bread slices generously with melted butter.
- Flip bread slices over.
- Spread mayonnaise generously on each slice of bread.
- Assemble two sliced bread pieces with roast beef, cheese and 1/2 teaspoon diced green chilies.
- Sprinkle with salt. Top sandwiches with other two slices of bread, mayo side down, butter side up.
- Grill sandwiches on medium high heat griddle, with lots of butter on the grill beneath, until bottoms of sandwiches are golden brown and cheese begins melting.
- Carefully flip sandwiches over using two utensils and grill again until bottom bread is also golden brown and cheese is melted.
- Remove two sandwiches from griddle, slice each in half and arrange on two plates. Garnish plates.
- Serve with dill pickles, yellow mustard, prepared horseradish and lots of napkins.
- French fries, onion rings and cole slaw make wonderful additions to this meal.
