Provided by Kristen Stevens

Categories     Dinner

Time 30m

Number Of Ingredients 16

½ cup toasted walnuts (see notes)
½ cup water
1 ½ tablespoons dijon mustard
1 small garlic clove
¼ teaspoon balsamic vinegar
Salt and pepper (to taste)
4 chicken legs
2 tablespoons dijon mustard
½ teaspoon sea salt
2 tablespoons parsley (finely minced )
1 tablespoon thyme (finely minced )
Chopped walnuts, black pepper, and parsley (to serve)
4 handfuls green beans
1 teaspoon olive oil
¼ teaspoon sea salt
1 teaspoon dijon mustard

Steps:

  • Preheat the grill to medium low.
  • Place the walnut cream sauce ingredients in a blender and blend on high until everything is smooth and creamy. Season to taste with salt and pepper.
  • Rub the chicken legs evenly with the mustard. Sprinkle the chicken with sea salt, parsley, and thyme. Place the chicken legs skin side up on the bbq and let them grill for 15 minutes. Flip the chicken legs over and let them cook for another 5-8 minutes, or until the chicken reaches an internal temperature of 165 degrees.
  • Toss the green beans with olive oil and sea salt. Pop them on the grill once the chicken has been on for 15 minutes. Let them grill for 5-8 minutes, or until they are tender but still crisp and they have many have grill marks on them. Toss them with dijon mustard and serve immediately.
  • To serve, drizzle the chicken with the walnut mustard sauce and sprinkle some chopped walnuts over the top and the green beans on the side.

GRILLED HONEY MUSTARD CHICKEN

Grilled Honey Mustard Chicken image

Perfectly seasoned chicken breast is grilled and basted with homemade honey mustard sauce in this easy recipe for Grilled Honey Mustard Chicken. It's a finger-licking dish that is fast, easy, and full of bright, tangy-sweet flavor!

Provided by Katerina | Diethood

Categories     Dinner

Time 35m

Number Of Ingredients 14

4 boneless, skinless chicken breast
Salt and pepper, (to taste)
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon dried thyme
½ teaspoon dried basil
¼ cup honey
2 tablespoons butter, (melted)
1 tablespoon dijon mustard
1 tablespoon yellow mustard
1 tablespoon wholegrain mustard
2 teaspoons hot sauce, (optional)
½ teaspoon white vinegar
⅛ teaspoon paprika

Steps:

  • Preheat grill to medium-high heat.
  • Season chicken breasts with salt, pepper, garlic powder, onion powder, dried thyme, and dried basil; set aside.
  • In a mixing bowl whisk together honey, melted butter, mustards, hot sauce, vinegar, and paprika; whisk until combined and smooth. Remove ¼-cup of the honey mustard and put it in a bowl - we will use this for basting. Reserve the rest for later for dipping.
  • Brush the grill grates with vegetable oil.
  • Place chicken breasts on the grill and brown for 2 minutes; turn it over and brown for 2 more minutes.
  • Brush the chicken breasts all over with half of the honey mustard basting sauce. Close the grill and cook the chicken for 7 minutes.
  • Uncover, flip and brush the chicken with more basting sauce; continue to cook for 5 to 6 more minutes, or until cooked through. Chicken is cooked when internal temperature registers at 165˚F. The thicker the chicken breasts, the longer it will take to cook through.
  • Remove cooked chicken from the grill and transfer to a cutting board; let stand 8 minutes.
  • Slice the chicken and serve with reserved honey mustard sauce.

Provided by Hayley

Categories     Dinner

Time 50m

Number Of Ingredients 11

2 Lbs Chicken (Your choice of cut)
2 Tbsp Olive Oil
1 Tbsp Dijon Mustard
2 Tbsp Orange Juice (or juice from half an orange)
1/2 Tsp Smoked Paprika
1/4 Tbsp Fresh Oregano (Or 1/4 Tsp Dried)
1/4 Tbsp Fresh Thyme (Or 1/4 Tsp Dried)
1/4 Tbsp Fresh Parsley (Or 1/4 Tsp Dried)
1/4 Tbsp Fresh Rosemary (Or 1/4 Tsp Dried)
1/2 Tsp Salt
1/2 Tsp Black Pepper

Steps:

  • Whisk together in the marinade ingredients in a bowl. Oil, mustard, orange juice, paprika, oregano, thyme, parsley, salt, and pepper.
  • Place chicken either in a bowl or a plastic bag and pour marinade over chicken. Be sure that all of the pieces are evenly coated. Place in the fridge to marinate for 2 hours or up to 24 hours.
  • When ready to cook chicken bring it out on the counter and let it continue to sit for about 20 minutes so it won't be as cold. This will help the meat get a better sear on the grill.
  • On a hot grill set on medium heat place the chicken directly on the grill after shaking off the excess marinade. Grill until cooked through turn once half way through the cooking time.
  • Boneless Skinless Breast: Grill for about 6-7 minutes each side until internal temperature is 165 degrees.
  • Chicken Wings: Grill for about 10 minutes on each side until internal temperature is 165 degrees.
  • Chicken Quarters: Grill for 10 minutes on each side over medium-high heat. After 20 minutes lower temperature to medium and continue to cook until internal temperature is 170 degrees or the juices run clear from the thigh joint.
  • Breast and wings can be served immediately. Allow the quarters to cool for 10 minutes before serving. Serve hot!

MIDDLE EASTERN-INSPIRED HERB AND GARLIC CHICKEN

Middle Eastern-Inspired Herb and Garlic Chicken image

This recipe was inspired by the Middle Eastern dried seasoning mix called za'atar, a combination of herbs (usually thyme, oregano and marjoram), sesame seeds and sumac, often spiked with salt. Here, fresh herbs are substituted for the dried, which, along with fresh parsley and mint and plenty of lemon and garlic, are used to marinated boneless chicken thighs. If you can't find sumac, just leave it out. It does add a nice tang and vibrant color, but the dish will work without it. Optimum marinating time here is 8 hours. But feel free to leave it for as little as 15 minutes or as long as 24 hours. If you would rather use white meat, substitute boneless skinless breasts but reduce the cooking time by a few minutes.

Provided by Melissa Clark

Categories     weekday, weeknight, main course

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 13

6 boneless skinless chicken thighs (about 1 3/4 pounds)
6 garlic cloves, grated on a Microplane or minced
Juice and zest of 2 lemons
3 tablespoons extra-virgin olive oil, more for serving
2 tablespoons minced fresh parsley, more for serving
2 tablespoons minced fresh mint
1 tablespoon minced fresh thyme
1 tablespoon minced fresh oregano or marjoram
1 1/2 teaspoons kosher salt, more as needed
1 tablespoon sesame seeds, more for garnish (optional)
3/4 teaspoon sumac, more for garnish (optional)
2/3 cup plain Greek yogurt, preferably whole milk yogurt
1/4 teaspoon ground black pepper

Steps:

  • Combine chicken with all but 1 teaspoon of the grated garlic (save that teaspoon for the yogurt sauce), the zest and juice of 1 lemon, oil, parsley, mint, thyme, oregano, 1 1/2 teaspoons salt, and the sesame seeds and sumac, if using. Cover and marinate for 15 to 30 minutes at room temperature; you can refrigerate it for up to 24 hours.
  • Heat grill or broiler. If grilling, cook chicken over high heat until charred in spots, 4 to 7 minutes. Flip pieces and continue grilling until just cooked through, another 4 to 7 minutes. If broiling, arrange a rack 3 to 4 inches from flame. Line a rimmed baking sheet with foil and spread chicken out in a single layer. Broil chicken, turning halfway through cooking, until well colored and charred in spots, 4 to 7 minutes per side. Be careful that it doesn't burn.
  • While chicken cooks, place yogurt in a small bowl. Stir in the reserved grated garlic and lemon zest and season to taste with salt. Serve the chicken drizzled with olive oil, remaining lemon juice to taste, black pepper, parsley and sesame seeds and sumac, if using, with the yogurt alongside for dipping.

LEMON AND HERB MARINATED GRILLED CHICKEN THIGHS

Lemon and Herb Marinated Grilled Chicken Thighs image

Provided by Anne Burrell

Categories     main-dish

Time 1h25m

Yield 4 servings

Number Of Ingredients 8

Juice and zest of 4 lemons, plus 2 whole lemons
5 sprigs fresh rosemary, finely chopped
5 sprigs fresh sage, finely chopped
3 cloves garlic, smashed and finely chopped
1/2 teaspoon crushed red pepper
Extra-virgin olive oil
8 chicken thighs, trimmed of excess fat
Kosher salt

Steps:

  • In a small bowl combine the lemon juice and zest, chopped herbs, garlic, crushed red pepper, and 1/2 cup of olive oil. Whisk to combine.
  • Place the chicken thighs in a wide flat dish so they are in a single layer. Add the herb mixture. Massage the thighs to coat with the herb mixture. Cover and refrigerate overnight. Note: If doing a quick marinade, leave the chicken out of the fridge for up to 1 hour.
  • Preheat grill. Brush and oil the grill to clean.
  • Remove the chicken from the marinade and brush off any excess herbs and oil. Season the chicken generously with salt and drizzle with a little bit of fresh olive oil.
  • Cut the 2 whole lemons in half and cut the tips off the ends; this will allow the lemons to stand up without rolling around. Place the chicken, skin side down, on the preheated grill. Place the lemons, flesh side down, on the preheated grill. Grill the chicken for 3 to 4 minutes and then rotate the chicken 90 degrees to create the lovely crosshatch pattern. Grill the chicken for another 3 to 4 minutes. Turn the chicken over and grill for another 4 to 5 minutes. Check for doneness (the chicken should be well cooked). Check the lemon halves to see if they are beautifully caramelized. Turn over to grill on the bottom for 2 to 3 minutes.
  • Serve the chicken with grilled lemon.
