¼ cup honey
¼ cup soy sauce
¼ cup oyster sauce
2 tablespoons brown sugar
4 teaspoons minced fresh ginger root
1 tablespoon ketchup
1 tablespoon minced garlic
1 tablespoon chopped fresh parsley
¼ teaspoon onion powder
¼ teaspoon cayenne pepper
¼ teaspoon ground cinnamon
2 (12 ounce) pork tenderloins

Steps:

  • Whisk honey, soy sauce, oyster sauce, brown sugar, ginger, ketchup, garlic, parsley, onion powder, cayenne pepper, and cinnamon in a bowl; pour into a resealable plastic bag. Add pork, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for up to 24 hours.
  • Preheat grill for medium heat and lightly oil the grate. Remove pork from the marinade, and shake off excess. Discard the remaining marinade.
  • Cook the pork tenderloins on preheated grill until no longer pink in the center, 20 to 30 minutes, turning occasionally. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

1 (4 pound) pork roast
½ cup Worcestershire sauce
2 tablespoons honey
2 tablespoons cider vinegar
½ teaspoon mustard seed
½ teaspoon mustard powder
1 teaspoon lemon pepper
½ teaspoon celery salt
1 clove garlic, minced

Steps:

  • Prepare grill for indirect heat.
  • In a large resealable plastic bag, combine the Worcestershire sauce, honey, vinegar, mustard seed, mustard powder, lemon pepper, celery salt, and garlic; seal, and mix ingredients. Place the roast in the plastic bag, press air out of bag, and seal. Marinate for 2 hours in the refrigerator, turning the roast occasionally to help coat while marinating.
  • Lightly oil grill grate. Place roast on grill, and discard marinade. Cover, and cook for 1 1/2 to 2 hours, or until internal temperature is 145 degrees F (63 degrees C).

1/3 cup soy sauce

1/4 cup soy sauce
3/4 teaspoon garlic powder

4 Bone-in Pork Chops
1/4 cup Olive Oil
1/4 cup Soy Sauce
2 Tbsp Brown Sugar
2 Tbsp Worcestershire Sauce
2 tsp Minced Garlic
1/2 tsp Black Pepper

Steps:

  • Place all the ingredients except for the pork chops in a large zip lock bag. Seal the bag and shake or massage the bag to thoroughly combine the ingredients.
  • Then place the pork chops in the bag and marinade for at least 30 minutes but you can marinate over night as well.
  • Take the pork chops out of the refrigerator 20 minutes before cooking them.
  • Heat the grill over medium high heat to at least 400 degrees F and rub the grill gates with oil so that the pork chops do not stick while grilling.
  • Place the pork chops on the grill and cook for 4-5 minutes per side (based on the thickness of the pork chops) until the pork reaches an internal temperature of 145 degrees F. The pork will release naturally from the grill gates when it's ready to flip. If the pork is browning too quickly because of the sugar in the marinade, reduce the temperature on the grill.
  • Move the pork chops to a plate and let them rest for 3-5 minutes before serving

2 1/4 pounds (1 kg) skinless, boneless pork shoulder (see Cook's Note)
1 teaspoon finely grated lime zest
2/3 cup fresh lime juice (about 5 limes)
1 teaspoon finely grated orange zest
2/3 cup fresh orange juice (about 3 oranges)
4 garlic cloves, finely grated
2 3/4 teaspoons Morton kosher salt (0.63 oz/18 g)
2 teaspoons recado de todo clase* or 1 teaspoon freshly ground black pepper
Vegetable oil, for the grill
1 medium red onion (10.1 oz/287 g), quartered
8 medium radishes, thinly sliced
Sliced avocado
Cilantro leaves and tender stems
Warm tortillas de maíz*
Salsa de zanahoria (carrot salsa)*
Chiles habaneros encurtidos (charred pickled habaneros)*
Lime wedges

Steps:

  • Place the pork shoulder on a parchment-lined sheet pan and freeze, uncovered, until almost completely frozen, for about 2 hours.
  • Using a very sharp knife, thinly slice the pork crosswise into 1/8-inch-thick pieces. Transfer to a large zip-top freezer bag set inside a large bowl and refrigerate until ready to marinate.
  • In a medium bowl, whisk the lime zest and juice, orange zest and juice, garlic, salt and recado de todo clase. Pour over the pork, seal the bag and squeeze the bag to coat the pork. Refrigerate for at least 30 minutes and up to 90 minutes.
  • Prepare a gas grill for high heat. Use tongs and an old, clean kitchen towel to brush the grates with oil. (Alternatively, prepare a charcoal grill for high heat.)
  • Remove the pork from the marinade, shaking off any excess; brush off the garlic and zests. Grill the pork, turning once, until charred, for 1 to 2 minutes per side. Transfer to a cutting board and let rest for 10 minutes. Cut into 2-inch pieces.
  • Grill the onion quarters, turning them occasionally, until charred on all sides, 3 to 4 minutes per side. Transfer to a cutting board. Cut crosswise into 1-inch pieces and separate the individual layers of the onion.
  • Arrange the pork on a large platter. Top with the charred onion, radish slices, avocado slices and cilantro. Serve with the warm tortillas de maíz, salsa de zanahoria, chiles habaneros encurtidos and lime wedges.

  • Grill the pork chops over direct high heat for 5 to 7 minutes on each side, or until the chops register at least 145 F-the minimum safe temperature for pork-on an instant-read thermometer . If the pork chops are very thick, allow more time but keep a watchful eye.
  • Serve with your choice of sides and enjoy.

1 1/2 pounds boneless rolled pork loin roast, tied
6 fresh green chili peppers, seeded and finely chopped
9 tablespoons peanut oil
6 tablespoons lime juice
3 tablespoons finely minced fresh coriander
1 tablespoon finely minced garlic
1 tablespoon sugar

Steps:

  • Place the pork roast in a glass bowl. Combine the remaining ingredients and pour over the roast to coat thoroughly. Refrigerate, covered, at least 12 hours.
  • Forty-five minutes before cooking, light the charcoal fire.
  • When the coals are medium-hot, remove the roast from the marinade (reserve the marinade), dry with paper towels and grill, turning frequently, for 10 minutes. Cover the grill with its hood or a makeshift lid of tin foil and roast for 20 minutes, basting frequently, or until a thermometer inserted into the thickest part of the loin reads 110 degrees.
  • Remove the roast from the grill. Cut into one-inch-thick slices. Coat the slices with the remaining marinade. Grill uncovered four to five minutes on each side, until cooked but still juicy. Serve immediately.

1/2 cup 7-Up soda or 1/2 cup Sprite
1/2 cup vinegar (preferably white cane vinegar)

1 medium onion, finely diced
1 cup vinegar (preferably white cane vinegar)
1/2 cup soy sauce
fresh ground pepper
1 sliced finger chili (optional)

Steps:

  • Slice pork belly lengthwise about 3/4 in wide.
  • Combine garlic, sprite or 7-up, vinegar, sugar and pepper in a bowl. Pour over pork belly. Cover and marinate 3 to 4 hours in fridge.
  • When ready to cook, drain pork. heat grill to medium and grill pork until thoroughly cooked, about 15 to 20 mins on the first side and 10 mins on the 2nd side.
  • To make the vinegar-soy dip, combine the dip ingredients and mix well.
