This is a fantastic, low carb treat. Different and delicious with only 2 grams of net carbs per tail. It is very simple to make, even for a beginner, yet sure to impress. Great for people who are not low carbing as well! Adapted from the Atkins Calendar.

4 lobster tails
4 ounces butter
1 garlic clove, minced
1 teaspoon chopped fresh ginger or 1/2 teaspoon ground ginger
1 teaspoon chopped fresh tarragon or 1/2 teaspoon dried tarragon
1/2 teaspoon dry mustard
salt

Steps:

  • Preheat grill.
  • Remove the soft part of lobster tail with scissors.
  • Hit shell lightly with a mallet to make it lie flat.
  • Melt butter in saucepan and add garlic, ginger, tarragon, mustard and salt.
  • Spoon some of the butter mixture over tails and reserve remaining.
  • Let stand 20 minutes.
  • Grill lobster 4 inches from heat for 10 - 15 min with meaty side up, basting frequently with reserved butter mixture.

HOT LOBSTER ROLL WITH LEMON-TARRAGON BUTTER



Hot Lobster Roll with Lemon-Tarragon Butter image

Kosher salt
Two 2-pound lobsters
Canola oil, for brushing
Freshly ground black pepper
6 hot dog buns
Lemon-Tarragon Clarified Butter, warm, recipe follows
2 sticks unsalted butter
1 teaspoon finely grated lemon zest
Juice of 1 fresh lemon
1 tablespoon finely chopped fresh tarragon
Kosher salt and freshly ground black pepper
Pinch cayenne, optional

Steps:

  • To par-cook the lobsters: Bring a large pot of salted water to a boil. Add the lobsters and cook about 7 minutes; they will be about three-quarters done. Drain well and let cool. Cut in half lengthwise.
  • Heat a charcoal or gas grill to high for direct grilling. Brush the cut-side of the lobsters with some oil and sprinkle with salt and pepper. Grill, cut-side down, until slightly charred. Flip and continue grilling until lightly charred and heated through. Remove the lobsters from the grill and let cool slightly.
  • Brush the insides of the hot dog buns with some oil and sprinkle with salt and pepper. Grill until just toasty.
  • Remove the tail and claw meat from the lobsters. You can cut them, but just enough to give you about 2 very large pieces per bun. Drop them into the Lemon-Tarragon Clarified Butter and give them a good soaking. Spoon the lobster into the toasted buns and serve immediately.
  • Melt the butter slowly in a medium saucepan over low heat. Let it sit for a bit to separate. Skim off the foam that rises to the top, and gently pour into a bowl, leaving behind the milk solids, which have settled to the bottom of the pan.
  • Put the clarified butter in a large saute pan over low heat. Add the lemon zest, lemon juice and tarragon, and season with salt, pepper and cayenne if desired.

1/4 cup (1/2 stick) butter
2 tablespoons fresh lemon juice
1 1/2 teaspoons grated lemon peel
2 tablespoons chopped chives
1 tablespoon chopped fresh tarragon or 1 teaspoon dried
2 live lobsters, each about 1 1/2 pounds

Steps:

  • Prepare barbecue (medium-high heat). Stir butter lemon juice and lemon peel in heavy small saucepan over low heat until butter melts. Mix in chives and tarragon; season with salt and pepper. Set pan at edge of grill to keep sauce warm.
  • Meanwhile, bring large pot of water to boil. Drop lobsters headfirst into water. Cover pot; boil lobsters 2 minutes. Transfer lobsters to work surface. Using heavy large knife or cleaver, split lobsters in half lengthwise. Scoop out and discard gray intestinal tract, gills and sand sac from head. Leave any red roe or green tomalley intact if desired. Crack claws. Brush cut side of lobsters with 1 tablespoon butter sauce.
  • Grill lobsters, cut side down, 4 minutes. Turn again so that cut side is down and grill until lobster meat is just opaque but still juicy, about 2 minutes. Transfer lobsters to plates. Brush lightly with sauce. Serve, passing any remaining sauce seperately.

1 stick salted butter, at room temperature
2 tablespoons chopped chives
1 tablespoon chopped tarragon leaves
1 clove garlic, minced
Dash hot sauce
Freshly ground black pepper
4 (7-ounce) lobster tails
Olive oil
Kosher salt
Lemon wedges, for garnish
Chive sprigs

Steps:

  • Preheat your grill to direct medium-high heat.
  • In a small bowl blend butter, chives, tarragon, minced garlic, hot sauce, and black pepper with a rubber spatula. Blend thoroughly. Cover with plastic wrap and reserve.
  • Using kitchen shears, butterfly the lobster tails straight down the middle of the softer underside of the shell. Cut the meat down the center without cutting all the way through. Insert a metal skewer down the lobster tail so the tail stands straight. Brush the tails with olive oil and season with salt, to taste.
  • Grill lobsters cut side down over medium high heat about 5 minutes, until the shells are bright in color. Turn the tails over and spoon a generous tablespoon of herbed butter onto the butterflied meat. Grill for another 4 minutes, or until the lobster meat is an opaque white color.
  • Remove lobster tails from the grill and serve with more herb butter and lemon wedges. Garnish with chive sprigs.

1 pound unsalted butter
1/2 cup basil chiffonade
Salt and freshly ground pepper to taste
4 (2 1/2 pound) whole lobsters
2 tablespoons olive oil

Steps:

  • Combine the butter, basil, and salt and pepper to taste in a food processor and blend until smooth. Pack the mixture into a medium ramekin, cover with plastic wrap and refrigerate for at least 30 minutes. Split the lobsters in half lengthwise. Bring the knife down through the tail, making sure to cut just through the meat and to leave the shell connected. Lay the lobster open, leaving the two halves slightly attached. Pull off claws and legs from the lobsters and crack them slightly with the knife handle. Place the claws and legs on the grill over medium-low heat and cover with a pie pan. Cook them for 5 to 7 minutes per side. Brush the lobster bodies with the oil and season with salt and pepper to taste. Place them fleshside down on the grill over medium heat. Grill 8 to 10 minutes
  • Remove the lobsters and slather with the basil butter.

½ cup salted butter, softened
2 tablespoons minced garlic
1 dash hot sauce
freshly ground black pepper to taste
4 (6 ounce) lobster tails
4 (10 inch) skewers
1 tablespoon olive oil, or to taste
kosher salt to taste
1 medium lemon, cut into wedges

Steps:

  • Combine butter, minced garlic, hot sauce, and pepper in a bowl; mix until fully combined. Set aside.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Butterfly lobster tails by cutting lengthwise through the centers of the hard top shells and about halfway through the top of the meat with kitchen shears. With your fingers, press shell halves of the tails apart. Flip them over, and insert a skewer down the lobster tail so that the tail is easier to remove after cooking and doesn't curl up. Brush tails with olive oil and season with salt.
  • Place lobster tails on the preheated grill with the cut shell sides down; grill until shells are bright in color, 5 to 8 minutes. Flip and spoon 1 tablespoon butter mixture onto the butterflied meat through the cut in the shell. Grill until lobster meat is an opaque white color, 4 to 7 more minutes, basting once more with butter mixture.
  • Remove lobster tails from the grill and serve with more garlic butter and lemon wedges.

1 shallot
1/4 cup unsalted butter

1 tablespoon white-wine vinegar

Steps:

  • Fill a 6-quart pot three fourths full with salted water and bring to a boil. Plunge lobsters headfirst into water and boil, covered, 7 to 8 minutes. Transfer lobsters with tongs to a colander and drain head down to remove excess liquid.
  • Finely chop shallot. In a small saucepan melt butter with shallot, tarragon, vinegar, and salt and pepper to taste.
  • Arrange lobsters on a platter and using kitchen shears remove thin, hard membrane from underside of each tail by cutting just inside outer edge of shell.
  • Spoon some tarragon butter over each lobster tail and serve remainder on the side.

Grilled Stuffed Lobster With Ginger Butter image

This is a slightly tricky recipe because even the slightest overcooking can leave the flesh of the lobster dry and rubbery. A good way to grill it is to halve the lobster, searing it briefly meat side down, then flipping it and continuing to cook with the grill's lid on, in effect roasting it. This technique gives the lobster a wonderful smoky edge yet retains the moisture. A ginger-butter sauce and a stuffing combining seasoned breadcrumbs and the lobster roe add a special touch.

3 lobsters, 2 1/4 to 2 1/2 pounds each (half lobster per guest)
1/2 cup breadcrumbs
1/4 tablespoon fresh chopped tarragon
10 tablespoons sweet butter
Salt and freshly ground black pepper
2 tablespoons vegetable oil
2 large shallots, finely diced (about 1/4 cup)
2 teaspoons freshly grated ginger
2 tablespoons white wine vinegar
2 tablespoons heavy cream

Steps:

  • Kill the lobsters by plunging a large chef's knife into the joint where the head meets the body. Halve the lobsters lengthwise and cut off the claws. Set aside. Discard the sac on each half lobster near the head. Also remove the the long white strip along the meat, which is the intestines. Remove the lobster roe and reserve.
  • In a bowl, combine the breadcrumbs, tarragon, 4 tablespoons butter, the lobster roe, salt and pepper. Set aside.
  • Brush the meat of the lobsters with vegetable oil and place them, meat side down, over the fire, along with the claws. Cover and cook about 5 minutes.
  • Flip the lobsters and the claws and fill the cavities where the roe was with the breadcrumb mixture. Place one tablespoon of butter and the shallots in a saucepan and place over the grill. Cover the grill and continue cooking.
  • When the butter in the saucepan is melted, about 2 minutes, add two tablespoons of white wine vinegar and 2 tablespoons grated ginger. When the vinegar has reduced, another 2 minutes, add 2 tablespoons heavy cream and stir well. Bring to a boil, reduce by half, then stir in remaining butter. When all the butter has melted, remove sauce from heat and keep warm.
  • Return the cover and cook the lobster about 8 more minutes. Serve each guest a lobster half with sauce over the meat, and a claw.
