GRILLED GINGER SHRIMP AND VEGETABLE PASTA SALAD
I have been working and trying to perfect this Asian inspired recipe for years. Here is my latest version, and I'm happy to share.

- Since you'll be grilling the shrimp, soak wooden skewers in water for 1/2 to 1 hour. While skewers are soaking, prepare dressing by combining all ingredients into a medium size jar and shake to combine. Pour half the dressing into a gallon size plastic bag and add shrimp. Let shrimp marinate for 30 minutes. Skewer and cook shrimp on grill (I use my indoor grill pan) about 2-3 minutes per side. Set cooked shrimp aside and assemble the salad.
- Cook linguini according to package directions, drain and rinse with cold water to stop the cooking. While pasta is cooking, chop the cilantro, scallions and celery. Microwave the sugar snaps for 1-1/2 minutes and the sliced red peppers for 45 seconds.
- Combine pasta, cooled sugar snaps and red pepper, scallions, celery and cilantro and toss with remaining dressing.
- Plate and garnish with cilantro and toasted sesame seeds (optional). Serve the shrimp on skewers as I do, but the dish is equally impressive when the shrimp is mixed in with the pasta salad. Serve at room temp or cold.
GRILLED SHRIMP WITH FRESH TOMATO SAUCE AND ANGEL HAIR PASTA
Everything except the pasta is done on the grill in this quick and delicious recipe. Shrimp bathe in a yummy marinade while the rest of the ingredients are prepped. Angel hair pasta cooks in about 5 minutes, so have it ready and out of the way, before you go to the grill. Once you get the ingredients outside, things will go very quickly! A Caesar salad and some hot garlic bread would be great sides!

- Combine 1/4 cup olive oil, lemon juice, salt, and pepper in a large resealable plastic bag. Gently squeeze ingredients in the bag to combine. Add shrimp. Remove as much air as possible, seal, and move shrimp around in the bag to coat in the marinade. Place in a tray or plate so shrimp are in a single layer. Marinate in the refrigerator for 30 to 45 minutes.
- Bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain.
- Preheat an outdoor grill for medium-high heat. Place a heat-proof skillet on one side of the grill to heat with the grill. Thread shrimp onto metal skewers.
- Place shrimp skewers onto the hot grate and grill until the shrimp turn white and opaque, 2 to 3 minutes per side. Remove from the grill.
- Meanwhile, pour 2 teaspoons olive oil into the hot skillet and cook onion, stirring frequently, until softened, 2 to 3 minutes. Add tomatoes, garlic, and red pepper flakes; cook and stir for 1 to 2 minutes. Pour in wine and allow to reduce, about 4 minutes. Stir in cream. Cook and stir for 1 minute. Season with salt and pepper to taste. Add cooked pasta and shrimp to the skillet and stir to combine. Sprinkle with fresh parsley and serve.

SUPER SHRIMP AND VEGGIE PASTA SALAD
This is an adaptation of my Mom's recipe. A very colorful salad that's great any time of the year. A light creamy salad dressing can be substituted to reduce calories. I've also substituted frozen shrimp for canned on occasion, depending on availability.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain and rinse in cold water.
- In a large bowl, combine pasta, green pepper, red pepper, onion, celery, olives and shrimp. In a separate bowl mix together: salad dressing, mustard, sugar, vinegar, salt and pepper; pour over salad. Can be served immediately, but best when chilled a few hours.

- Place a large pot of salted water to boil. (Then cook the pasta according to how you like it. When you drain it, save 1 1/2 – 2 cups of the pasta cooking water.)
- Prep all the ingredients before you start cooking, because the shrimp and vegetables will cook in the amount of time that it will take for the pasta water to boil and the angel hair to cook. Slice the shallots, celery, bell peppers and zucchini into thin slices. Remove the seeds from the tomatoes and chop. Mince the garlic and chop the herbs. Pat the shrimp dry with paper towels and season on both sides with salt and ground black pepper.
- In a large skillet, heat 1 Tablespoons of oil until hot and add the shrimp, in one layer and cook until golden brown and pink, about 2 minutes per side. Repeat with the remaining shrimp, adding about 1/2 Tablespoon more oil and using the same skillet. Set the shrimp aside while you cook the vegetables.
- Use the same skillet, lower the heat to medium, add 1/2 Tablespoon of oil then the shallots and celery. Season with salt and ground black pepper to taste. Cook for 3-5 minutes, until they soften. Use some regular water or some of the reserved pasta water to deglaze the skillet, pouring in the water and scraping the bottom of the skillet with a wooden spoon to remove the brown bits and get them incorporated into the sauce.

- Rinse the shrimp then pat dry with paper towels. Thread them onto wooden skewers (that have been soaked in water for 15 minutes). Season the shrimp with salt, red pepper, and turmeric to taste.
- Place all of the dressing ingredients in a mason jar (or blender) and seal the lid. Shake the jar vigorously (or pulse the blender) to combine and emulsify the ingredients. Taste and adjust seasoning as desired.
