2 small ripe melons
1 "golden" pineapple
2 bunches grapes
1 pint fresh figs
1 pint raspberries
1 pint strawberries
1 pint blueberries
1 red papaya

Steps:

  • I like to begin the platter with a base of ripe, colorful, sliced melons and pineapple--for example, cantaloupe, honeydew, Galia, or Cavaillon melons, plus the new "golden" pineapples. Peel the outside of a whole melon, cut it in half through the stem end, and scoop out the seeds. Place the melon halves cut side down on a board, and slice them straight across into 1/2-inch-thick slices. Fan each half-melon out slightly and arrange it on the platter. Next, cut off the top and bottom of the pineapple, peel the outside, and use a sharp knife to remove the "eyes." Cut the pineapple in half lengthwise and remove the core by cutting a "V" down the center of each half. Again, place the pineapple halves, cut side down, on a board and slice them straight across into 1/2-inch-thick slices. Fan the slices out and arrange them next to the melon on the platter.
  • Once the base is set, you can add any kind of fruit that's available. I like to have one thing that is taller than the rest, such as a large bunch of grapes or a decoratively cut papaya, to give the platter height. Then I add raspberries, strawberries, blueberries, and fresh figs in casual but organized groups. The platter can look like a bowl of M&M's if there are too many colors scattered with no order. Visually, your eye needs to have a focal point and to be able to see each type of fruit. After all the fruit is arranged, I add flat green leaves around the outside of the fruit, to set off the colors. Use lemon and galax leaves from your florist, or fig leaves and grape leaves from your garden. Make sure they are pesticide-free and well washed.
  • Any kind of fruit will work well on this platter. For special occasions, add persimmons, kiwi, passion fruit, Queen Anne cherries, fresh apricots, and mangos. Choose whatever is colorful and seasonal.

Nonstick spray
3 firm but ripe nectarines, halved, pitted
3 firm but ripe purple/black plums, halved, pitted
3 firm but ripe red plums, halved, pitted
6 metal skewers or thick wooden skewers soaked in water 30 minutes
3 tablespoons sugar

Steps:

  • Spray the grill rack with nonstick spray and prepare the barbecue (medium-high heat). Thread 1 piece of each fruit on each of 6 skewers so that the cut sides line up and lay flat. Sprinkle the sugar over the cut sides of the fruit. Let stand until the sugar dissolves, about 10 minutes.
  • Place the fruit skewers on the grill cut side down. Grill the fruit until it is heated through and caramelized, about 5 minutes. Transfer 1 fruit skewer to each plate and serve.
  • *Other fruit substitutions can be apricots and peaches.

Number Of Ingredients 8

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2 Tbsp. KOOL-AID Orange Flavor Sugar-Sweetened Drink Mix
2 Tbsp. honey
1 Tbsp. orange juice
2 peaches, quartered
2 pears, quartered, cored
2 nectarines, quartered
2 plums, quartered

Steps:

  • Place cream cheese, dry drink mix, honey and orange juice in blender; cover. Blend until smooth. Refrigerate until ready to use.
  • Preheat grill to medium-high heat. Grease grate of grill. Place fruit in batches on grill grate. Grill 2 min. on each side or until lightly browned on both sides.
  • Cool fruit slightly. Remove and discard skin from peaches and plums, if desired. Arrange on platter with cream cheese mixture as a dipping sauce.

  • Heat a charcoal or gas grill to medium high. Once hot, scrub the grates with a brush. Or heat a grill pan over medium high heat.
  • Stir the ricotta and maple syrup together. You can use a blender, food processor, mini food processor or stick blender. If mixing by hand, first force the ricotta through a fine-mesh sieve and then stir in the maple syrup for a smooth, creamy texture. Taste and add more maple syrup if you like. Makes a scant 2 cups.
  • Pour the chocolate chips into a microwave-safe bowl and nuke in 30-second intervals until they're mostly melted (should take approx. 1.5 minutes). Stir in the coconut milk and then the spices. Go easy on the black pepper at first as the ginger is also adding a bit of heat. Taste and adjust seasonings if necessary. Makes approx. 1.5 cups.
  • Arrange the grilled fruit on a serving platter. Add bowls of the two sauces, a small bowl or pitcher of honey, piles of the nuts and fresh herbs and a small bowl of flaky sea salt, plus anything else you might like. Serve when the fruit is still warm or at room temperature. For the thyme, hold 1-2 springs over the fruit and strip off the leaves "against the grain," so to speak. If the chocolate sauce gets too thick as it sits, microwave for 30 seconds and stir.
