Grilled Seafood Foil Packs with Lemon-Chive Butter image

32 shell clams (littlenecks or cherrystones)
32 uncooked medium shrimp in shells (about 1 1/4 lb), thawed if frozen
32 sea scallops (about 2 1/2 lb)
4 ears fresh sweet corn, husks removed, cleaned, cut into fourths
32 large cherry tomatoes
1/3 cup butter or margarine, melted
2 tespoons grated lemon peel
2 teaspoons chopped fresh or 1/2 teaspoon freeze-dried chives
Fresh chive stems or chopped fresh chives, if desired

Steps:

  • Heat gas or charcoal grill. Cut 8 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray.
  • Place 4 clams, shrimp and scallops in center of each sheet; top each with 2 pieces of corn and 4 tomatoes. In small bowl, mix butter ingredients. Drizzle about 2 teaspoons butter over seafood and vegetables in each packet.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill over medium heat. Cover grill; cook 15 to 20 minutes, rotating packets 1/2 turn after 10 minutes, or until clam shells have opened, shrimp are pink, and scallops are white and opaque. (Cooking time may vary depending on ingredients selected) Discard any clams that don't open.
  • To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape. Top with chives.

2 small potatoes (thinly chunked)
1 tomatoes (diced)
2 cups frozen seafood, mix
1/2 cup frozen shrimp (peeled)
2 tablespoons fresh rosemary
2 garlic cloves (thinly sliced)
2 tablespoons olive oil
1 tablespoon white pepper
2 small bell peppers (gutted and diced)
1 (6 ounce) can tomato juice
2 tablespoons tomato paste
1 tablespoon soy sauce
1 teaspoon cumin
2 tablespoons fresh parsley (chopped)
1 teaspoon powdered thyme

Steps:

  • Place two sheets of aluminum foil in a cross section and bring up edges.
  • Place potatoes, seafood mix, shrimp, tomato, and bell peppers in center of foil.
  • Thoroughly mix rosemary, garlic, pepper, cumin, thyme, parsley, tomato paste, soy sauce, tomato juice, and olive oil.
  • Pour on top of items in foil.
  • Gather the foil from the outside towards the center. Place one more layer of foil on the top of the foil circle. Turn over and cover with one last layer of foil.
  • At cooking time, place on grill on medium heat 15 - 20 minutes.
  • Flip over and cook for another 10 - 15 minutes
  • To keep warm, place on far edge of grill until ready to serve.
  • ***To complete the dinner, mini-croissants and a small salad of greens dressed with a simple vinaigrette was added.

This easy grilled salmon in foil recipe is totally foolproof, resulting in flaky fish with a garlic-herb butter sauce. And did we mention cleanup is a breeze?

1 Tbsp. honey
1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt
1 tsp. finely grated lemon zest
6 garlic cloves, finely chopped
4 Tbsp. unsalted butter, room temperature
2 Tbsp. finely chopped dill, plus more for serving
1 (1 lb.) boneless salmon fillet, preferably skin-on
4 Tbsp. fresh lemon juice, divided

Steps:

  • Prepare a grill for medium heat. Whisk 1 Tbsp. honey, 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt, and 1 tsp. finely grated lemon zest in a small bowl to combine. Add 6 garlic cloves, finely chopped, 4 Tbsp. unsalted butter, room temperature, and 2 Tbsp. finely chopped dill and whisk again to combine (some lemon zest may remain separate and that's okay).
  • Tear off a large piece of foil according to the length and thickness of salmon (15x15" or larger) and place on a rimmed baking sheet. Place one 1 lb. boneless salmon fillet, preferably skin-on, arranging skin side down if skin is on, in center of foil (the skin will stick slightly to foil and brown while the fish cooks; you want this as it will add to the sauce). Spread garlic butter over fish, then drizzle 3 Tbsp. fresh lemon juice on top. Carefully fold one side of foil up and over fish so lemon juice stays contained, then bring other sides up to meet it and fold together to seal, leaving about a 4" opening on top for steam to escape (this will help sauce reduce a bit).
  • Place foil packet on grate and grill fish until opaque throughout and firm, 16-20 minutes. Transfer packet to a cutting board and let fish rest 5 minutes.
  • Carefully open foil packet and cut fish in half. Transfer to plates; pour juices from packet over. Drizzle fish with remaining 1 Tbsp. fresh lemon juice, dividing evenly, and top with more finely chopped dill.

4 16-inch pieces of Reynolds Wrap® Heavy Duty Foil
8 ounces halibut (or fish of your choice)
12 littleneck clams
12 mussels
6 shrimp -shell on (I used 16-20 count)
4 garlic cloves
1 tablespoons olive oil
sea salt and black pepper
1 teaspoon Italian parsley (finely chopped for garnish)
¼ teaspoon crushed red pepper flakes (optional for garnish)

Steps:

  • Start by cutting off four 16-inch pieces of Reynolds Wrap® Heavy Duty Aluminum Foil.
  • Rinse clams and mussels in cold running water
  • Place the Halibut (or fish of your choice) in the center of one piece of the foil. Coat both sides of the fish with olive and season with sea salt and black pepper
  • Add the mussels and clams to the sides of the fish, placing the shrimp on top of the seafood and placing the garlic cloves in the shellfish.
  • Bring up the long sides of the foil, so the ends meet over the food. Double fold the ends, leaving a little room for heat to circulate inside. Double fold the two short ends to seal the packet.
  • Place the foil packet on top of an additional piece of foil and enclose the package. This will help prevent leaks into the grill and offer a little more protection from the heat.
  • Preheat your grill to 350 degrees and place the packets on the grill grates. Close the lid and allow the packets to cook for 15 minutes. This will fully cook the fish and shrimp while steaming the clams and mussels open.
  • Carefully remove the foil packets from the grill and cut them open. *The steam can burn you so take your time and be careful when opening the packets.
  • Using a spatula place the fish in the center of a bowl (or plate) and place the clams, mussels, and shrimp around the fish. Pour the juice from the packet over the seafood and garnish with chopped parsley and crushed red pepper flakes.

The beauty of a foil-pack is that it traps all the juices and flavors of a meal in a tidy bundle. In this recipe, as the shrimps cook, their natural juices combine with butter, white wine and other seasonings to create an abundant pool of broth perfect for dipping crusty bread into.

4 Yukon Gold or red-skinned potatoes (about 1 1/4 pounds)
6 tablespoons unsalted butter
2 ears fresh corn or 4 small pieces thawed frozen corn on the cob, cut into 1-inch-thick pieces
2 cloves garlic, thinly sliced
1 tablespoon Old Bay Seasoning
Kosher salt and freshly ground pepper
1 pound peeled and deveined large shrimp (no need to thaw if using frozen)
1 lemon, zest grated, cut into wedges
1/2 cup dry white wine
2 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill to medium. Microwave the potatoes until softened but not fully cooked, about 5 minutes. Let cool a few minutes, then dice.
  • Put 4 tablespoons butter in a large microwave-safe bowl and microwave until melted. Add the potatoes, corn, garlic and Old Bay and toss well; season lightly with salt and pepper.
  • Tear off four 18-inch-long sheets of foil. Divide the vegetables among the foil sheets, piling them in the middle. Add the shrimp to the same bowl. Sprinkle with the lemon zest and a pinch of salt and pepper; toss well. Add the shrimp to the vegetable piles.
  • Drizzle 2 tablespoons wine over each pile of vegetables and shrimp. Cut the remaining 2 tablespoons butter into 4 pieces and add a piece to each pile. Bring the short ends of the foil together and fold twice; fold in the sides to form a packet.
  • Grill the foil packets until the potatoes are tender and the shrimp is cooked through, 15 to 20 minutes. Remove from the grill and let stand 5 minutes. Carefully open the packets and sprinkle with the parsley; serve with the lemon wedges.

Steps:

  • Heat a grill to about 375 degrees F.
  • Add potato pieces to a large pot of water and bring to a boil. Simmer for 10 minutes, just to jump-start the cooking process. Drain.
  • Arrange 4 (12x18-inch) sheets of Reynolds Wrap® Heavy Duty Aluminum Foil on a clean work surface.
  • Divide the shrimp, slightly cooked potatoes, kielbasa and corn atop the 4 pieces of foil, piling in the center. Add 1 tablespoon butter to each pile. Drizzle each with 1 tablespoon olive oil, sprinkle with Worcestershire sauce and sprinkle generously with Creole seasoning. Squeeze a lemon wedge over each pile and add the rind to the mixture.
