FISH TACOS WITH CABBAGE SLAW AND PICKLED RED ONIONS



Fish Tacos with Cabbage Slaw and Pickled Red Onions image

Number Of Ingredients 18

1/2 cup red wine vinegar
2 tablespoons kosher salt, plus additional for seasoning
1 tablespoon sugar
2 to 3 shakes hot sauce, such as Tabasco
1 red onion, sliced thinly
2 tomatillos
1 jalapeno
Juice from 1 lime, plus lime wedges for serving
1 bunch fresh cilantro, stems removed and leaves roughly chopped
1/4 green cabbage, thinly sliced
1/4 red cabbage, thinly sliced
1 carrot, grated
Olive oil, for drizzling
4 mild, flaky, white fish fillets, like tilefish
1/2 tablespoon smoked paprika
8 corn tortillas
1 avocado, thinly sliced
1/2 cup Cotija, crumbled

Steps:

  • Combine the red wine vinegar with 1/2 cup cold water in a small bowl. Stir in the salt, sugar and hot sauce. Add the sliced onion and let sit for at least 1 hour. These can be stored, refrigerated in an airtight container, for 1 week.
  • Preheat a grill pan over medium-high heat. Place tomatillos and jalapeno on the pan and allow to char on all sides, flipping with tongs as needed. Allow to cool slightly. Remove stems and add to a blender. Add half of the lime juice and half the cilantro. Pulse until combined and smooth (use caution when blending hot liquids; it's okay to have some lumps). Set aside to cool.
  • Add cabbages, carrot and 1/4 cup pickled onions to a medium bowl. Stir to combine. Drizzle olive oil and some of the pickling liquid into the bowl until everything is lightly coated. Set aside to marinate until ready to serve.
  • Clean grill pan if necessary, then heat it over medium heat and brush with olive oil. Sprinkle fillets with salt and smoked paprika. Grill fillets on both sides until cooked through and flaky, about 3 minutes per side. Warm tortillas on grill pan until soft and pliable.
  • Top each tortilla with 1/2 fillet of fish, tomatillo salsa and slaw. Garnish with sliced avocado, Cotija, remaining cilantro and lime wedges. Serve!

Steps:

  • Combine orange juice, lime juice, oil, spices, and cilantro in a shallow dish. Add the fish, turning to coat. Let marinate 15 minutes.
  • Meanwhile, in a small saucepan over medium heat bring to onion, vinegar, jalapeno, and sugar to a boil. Immediately remove from heat; let cool. Discard jalapeno.
  • Heat the grill to high. Cook the fish over indirect heat for 8 minutes, or until cooked through. Pull apart into large flakes. Cook the tortillas over direct heat for 20 seconds on each side, until soft and slightly charred in places.
  • To assemble tacos, spoon chicken onto center of each tortilla; top with pickled onions and salsa verde. Fold sides of tortilla over filling. Serve with lime wedges.

1 bunch cilantro, divided
1 (8 ounce) container reduced-fat sour cream
1 lime, juiced
1 jalapeno pepper, chopped, or to taste
½ teaspoon kosher salt
3 tilapia fillets, or more to taste
1 tablespoon onion powder
1 tablespoon herbes de Provence
1 teaspoon ground black pepper
1 teaspoon dried chives
½ teaspoon kosher salt
6 (6 inch) corn tortillas
1 lime, halved
1 ½ cups shredded cabbage
½ cup red onion, chopped
½ cup crumbled queso fresco

Steps:

  • Place most of the cilantro into a blender, reserving the rest for garnish. Add sour cream, lime juice, jalapeno, and salt. Blend until just liquefied. Place sauce in refrigerator until ready to use.
  • Preheat the grill for medium heat and lightly oil the grate.
  • Sprinkle tilapia fillets with onion powder, herbes de Provence, pepper, chives, and salt. Grill tilapia until fish flakes easily with a fork, 4 to 6 minutes.
  • Place each tortilla between 2 damp paper towels. Heat in the microwave, about 20 seconds.
  • Shred tilapia and arrange down the center of each tortilla. Squeeze lime juice over tilapia and top with cabbage and red onion. Spoon the cilantro sauce over the tacos and top with queso fresco. Garnish with the reserved cilantro.

1/2 orange, juiced (1-ounce)
1 lime, juiced (1-ounce)
1/2 cup achiote paste, 3 1/2-ounce package*
2 teaspoon ground cumin
2 teaspoon ground oregano, preferably Mexican
1 teaspoon kosher salt
3 whole striped bass, scaled, gutted and cleaned
Vegetable oil or canola oil
1 cup Pickled Red Onions, recipe follows
1 avocado, halved, pitted and sliced, for garnish
1 avocado, halved, pitted and sliced, for garnish
1/2 bunch cilantro, leaves cleaned and roughly chopped, for garnish
1/2 bunch cilantro, leaves cleaned and roughly chopped, for garnish
1 red onion, sliced thin
2 limes
1/2 orange habanero pepper or 1 whole jalapeno chile, seeded and chopped
1 teaspoon salt

Steps:

  • Preheat the grill to medium-high.
  • In a medium bowl add the orange juice and the lime juice. Stir in the achiote paste, cumin, oregano and salt. Mix into a smooth paste. Rub the paste all over inside and outside of the fish. Drizzle both sides of the fish liberally with vegetable or canola oil. Put the fish on the grill. Grill until golden, about 4 minutes and then carefully flip the fish over. Grill until the fish starts to separate when lifted with a spatula. Fish will be golden brown with some charring.
  • Lay the fish on a large platter. Cover with pickled red onions, sliced avocado and chopped cilantro and serve family style.
  • To make the Pickled Red Onions:
  • Add the sliced onions to a medium-size bowl large enough for the onions to be spread out into a thin layer. Juice the limes into the bowl, then add the chopped chile and salt. Stir to combine. Allow to sit at room temperature for 2 hours, stirring every 30 minutes or cover and refrigerate overnight. Onions are ready when they are bright pink and softened. Their flavor will be sweet and spicy with a little texture but not crunchy.
  • Yield: about 1 cup

Originating in Baja California, fish tacos are now served along Mexico's coasts and in Southern California. But unlike the deep-fried versions that are so common, ours entails grilling meaty mahimahi for a smoky char that contrasts deliciously with the fresh, clean Garnishes.

1 medium red onion
1/2 cup cider vinegar
1/4 cup sugar
7 tablespoons fresh lime juice, divided
1/4 cup chopped cilantro
1 tablespoon olive oil
1 1/4 pound (1-inch-thick) skinless mahimahi fillet or tuna steak, cut into 12 pieces
2/3 cup mayonnaise
2/3 cup crema or sour cream
12 (6-inch) corn tortillas
6 to 8 radishes
1 to 2 (6- to 8-ounce) firm-ripe avocados
4 cups thinly sliced green cabbage (1/2 small head)
Equipment: an adjustable-blade slicer; 12 (6- to 8-inch) wooden skewers, soaked in water 30 minutes
Accompaniment: lime wedges

Steps:

  • Very thinly slice onion crosswise into rings with slicer. Set slicer aside. Heat vinegar, sugar, and 1/2 teaspoon salt in a small heavy nonreactive saucepan until sugar has dissolved. Remove from heat and stir in onion, then let stand until ready to use (about 25 minutes).
  • Meanwhile, stir 1/4 cup lime juice together with cilantro, oil, and 1/2 teaspoon salt. Add fish and toss to coat, then marinate at room temperature 15 minutes.
  • Whisk together mayonnaise, crema, 1/2 teaspoon salt, and remaining 3 tablespoons lime juice to make sauce.
  • Preheat a gas grill with burners on high, covered, 10 minutes, then reduce heat to medium-high.
  • Thread each piece of fish onto a skewer (discard marinade). Wrap exposed part of each skewer in heavy-duty foil to protect it from charring.
  • Wrap tortillas in 2 foil packages and warm on grill, turning once, about 3 minutes total.
  • Oil grill rack, then grill fish, covered, turning once, until opaque and just cooked through (for mahimahi), about 6 minutes total; or until just pink in center (for tuna), about 4 minutes.
  • Very thinly slice radishes with slicer. Halve, pit, and peel avocados, then cut into 1/2-inch-thick slices. Drain onions.
  • Serve fish with tortillas, crema sauce, onions, and remaining toppings.

This spiced fish is served on a fresh corn tortilla with pickled red onion, Baja cream and slaw and a spoonful of your favorite tomato salsa-the best part of this taco is that most of the elements can be made ahead.

1 large red onion, halved lengthways, thinly sliced
2 small green jalapeños
2/3 cup rice vinegar
1 tablespoon lime juice
1 heaped teaspoon sea salt
Baja Cream:
1/2 cup mayonnaise
1/2 cup sour cream
2 teaspoons lime juice, plus extra to taste
1 teaspoon finely grated lime zest
Pinch of sea salt
Baja Cabbage Slaw:
2 tablespoons mayonnaise
3/4 teaspoon lime juice
2 drops jalapeño Tabasco sauce
1/2 small head green cabbage, thinly sliced
Sea salt and ground black pepper
Marinated Fish:
1/4 cup olive oil
1/2 teaspoon chili powder, or to taste
1 1/2 teaspoons dried oregano
1/2 teaspoon ground cumin
1/4 cup cilantro leaves, chopped
1 green jalapeño, chopped
1 lb flaky white fish filets
Sea salt and ground black pepper
Corn tortillas, for serving

Steps:

  • Pickled Red Onion:
  • To make the pickled red onion, place the onion and jalapeño in a heatproof medium bowl. In a small saucepan, combine the vinegar, lime juice and salt. Bring to the boil over high heat, stirring until the salt dissolves, then pour over the onion and jalapeño. Allow to stand at room temperature for at least 1 hour before using. (Leftovers will keep up to 1 week in the fridge.)
  • Baja Cream:
  • To make the Baja cream, whisk the mayonnaise, sour cream, lime juice, lime zest and salt in a small bowl, then taste for seasoning and lime juice.
  • Baja Cabbage Slaw:
  • To make the cabbage slaw, mix together the mayonnaise, lime juice and Tabasco in a bowl. Toss the cabbage with the mayonnaise mixture, season to taste and refrigerate.
  • Marinated Fish:
  • To marinate the fish, mix the olive oil, chili powder, oregano, cumin, coriander and jalapeño in a non-reactive dish. Add the fish and marinate for 20 minutes.
  • When ready to cook the fish, heat a non-stick frying pan over medium-high heat. Remove the fish from the marinade, place in the hot pan and season with salt.
  • Cook the fish for 4 minutes, then turn over, season again with salt and cook for another 2 minutes or until just cooked through, depending on the thickness.
  • Remove the pan from the heat and flake the fish with a fork, scraping up and mixing in any marinade that has stuck to the bottom.
  • Assembly:
  • Heat the tortillas according to the directions on the packet. To assemble the tacos, place a heaped spoon of the fish onto the centre of a warm tortilla. Top with the pickled onion and jalapeño, Baja cream, Baja cabbage slaw and tomato salsa.
