Grilled Fajita Tortilla Pizzas image

Cooked on the grill, these five-ingredient pizzas are a flavorful entrée or appetizer.

2 (9-oz.) pkg. frozen cooked chicken breast strips, thawed
1 1/2 cups frozen bell pepper and onion stir-fry (from 1-lb. pkg.), thawed, well drained
1/4 cup purchased fajita sauce and marinade
6 (8-inch) flour tortillas
12 oz. (3 cups) finely shredded taco-flavored cheese blend
6 tablespoons purchased fajita sauce and marinade

Steps:

  • Heat gas or charcoal grill. Spray grill basket (grill "wok") with nonstick cooking spray. In medium bowl, combine chicken strips, bell pepper and onion stir-fry and 1/4 cup fajita sauce. Place chicken mixture in sprayed basket.
  • When grill is heated, place grill basket onto gas grill over medium heat or onto charcoal grill 4 to 6 inches from medium coals. Cover grill; cook 8 to 10 minutes or until thoroughly heated, shaking basket or stirring chicken mixture occasionally.
  • Meanwhile, place tortillas on ungreased cookie sheets. Sprinkle with 1 1/2 cups of the cheese.
  • Divide grilled chicken mixture evenly onto cheese-covered tortillas. Top each with 1 tablespoon fajita sauce and 1/4 cup remaining cheese.
  • With wide spatula, carefully slide pizzas onto grill. Cover grill; cook 3 to 6 minutes or until cheese is melted and crust is crisp, rearranging pizzas occasionally. Slide pizzas back onto cookie sheets. Cut into wedges.

2 tablespoons lime juice
1/2 teaspoon ground chipotle chile powder
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1 pinch salt and ground black pepper
1 pound thin-sliced skinless, boneless chicken breast halves
1/2 seeded green pepper or red bell pepper
1/2 peeled sweet onion
2 tablespoons all-purpose flour
1 package (17.3 ounces) Pepperidge Farm® Puff Pastry Sheets, thawed
1 cup shredded Colby Jack cheese(about 4 ounces)
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Heat the oven to 400°F. Line 2 baking sheets with parchment paper. Stir the oil, lime juice, chile pepper, cumin, garlic powder, salt and black pepper in a large bowl. Add the chicken and toss to coat.
  • Heat a nonstick grill pan over medium-high heat. Add the chicken and grill for 8 minutes or until cooked through, turning the chicken over once halfway through the grilling time. Remove the chicken from the grill pan and coarsely chop.
  • Grill the pepper half and the onion half for 5 minutes or until tender-crisp, turning over once halfway through the grilling time. Remove the pepper and onion from the grill pan and coarsely chop.
  • Sprinkle the flour on the work surface. Unfold 1 pastry sheet on the work surface. Cut the pastry into 3 rectangles along the fold lines. Cut each rectangle in half crosswise, making 6. Place the pastry rectangles onto a baking sheet. Repeat with the remaining pastry sheet.

1 beef flank steak (about 1 pound)
1 envelope onion soup mix
1/4 cup canola oil
1/4 cup lime juice
1/4 cup water
2 garlic cloves, minced
1 teaspoon grated lime zest
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 medium onion, thinly sliced
Green, sweet red and/or yellow peppers, julienned
1 tablespoon canola oil
8 flour tortillas (8 inches), warmed
Sour cream and lime wedges, optional

Steps:

  • In a large shallow dish, combine the first nine ingredients; add steak. Turn to coat; cover and refrigerate 4 hours or overnight. , Drain and discard marinade. Grill over high heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, in a small skillet, saute onion and peppers if desired in oil for 3-4 minutes or until crisp-tender. 1/4 cup lime juice (about 3 limes)
1/4 cup extra-virgin olive oil
4 cloves garlic, minced
1 teaspoon salt, plus more for sprinkling
1/2 teaspoon freshly ground black pepper, plus more for sprinkling
4 boneless chicken breast halves, skinned (about 2 pounds)
4 scallions, tops removed
1 yellow onion, quartered
1 green bell pepper, halved, seeded
1 red bell pepper, halved, seeded
Shredded Cheddar, for serving
Sour cream, for serving

Steps:

  • Whisk the lime, oil, garlic, salt and pepper until combined in a small bowl. Place the chicken in a 1-gallon plastic bag. Pour half of the lime mixture over the chicken; turn to coat. Let the chicken marinate in the fridge for at least 2 hours and up to 8 hours.
  • Arrange the scallions, onions, green peppers and red peppers on a large rimmed baking sheet. Pour the remaining lime mixture over the vegetables; turn to coat.
  • Preheat the grill to medium-high heat. Remove the chicken from the lime mixture and bring to room temperature. Sprinkle each side of the chicken with salt and pepper. Grill the chicken until cooked through, about 7 minutes each side. Grill the vegetables until tender, turning frequently, about 10 minutes for the scallions and peppers and 15 minutes for the onions.
  • Transfer the chicken to a work surface and cover with aluminum foil. Set aside the chicken for 10 minutes. Meanwhile, slice the onions and peppers and arrange them on a platter with the scallions. Slice the chicken crosswise into strips and transfer to the platter. Serve with the Cheddar and sour cream.

Using a grill-safe pizza stone on a grill is a great way to cook fajitas. It results in wonderfully charred chicken and blistered, caramelized veggies in no time. The tangy, spicy and salty marinade is super flavorful. This method for preparing fajitas might just become your new summer favorite.

3 tablespoons olive oil
1 tablespoon chili powder
1 tablespoon chipotle in adobo sauce, chopped
1 tablespoon ground cumin
1 tablespoon garlic powder
Juice of 1 lime
Kosher salt and pepper
1 pound bell peppers, cut into 1/4-inch-thick slices
1 small red onion (about 3 ounces), cut into 1/4-inch-thick slices
1 pound boneless, skinless chicken breast, cut into 1/2-inch-thick slices
8 fajita-size tortillas, warmed
Guacamole, pico de gallo, hot sauce and sour cream, for serving

Steps:

  • Place a grill-safe pizza stone (see Cook's Note) that is at least 14 inches in diameter on a grill. For gas grills with 3 or more burners: Turn all the burners to high heat and close the lid. Let the stone heat until the internal temperature of the grill is 500 degrees F, about 15 minutes. For charcoal grills: Fill a chimney starter with enough charcoal for high heat, then light it (be sure to consult the grill manufacturer's guide for the best results for high-heat cooking). Close the lid and let the stone heat until the internal temperature of the grill is 500 degrees F, about 30 minutes.
  • Meanwhile, make the marinade. Mix the olive oil, chili powder, chipotle in adobo sauce, cumin, garlic powder, lime juice, 2 teaspoons salt and a few grinds of black pepper in a medium bowl. Transfer half of the mixture (about 1/4 cup) to another medium bowl. Add the peppers and onions to one bowl and mix to combine. Add the chicken to the other bowl and mix to combine.
  • Place the chicken on one half of the pizza stone and the peppers and onions on the other half. Close the grill and cook until the chicken is cooked through, has a nice char on the bottom and the vegetables are softened and caramelized on the bottom, 10 to 12 minutes (3 to 5 minutes if using a charcoal grill).
  • Transfer the chicken and vegetables to a platter and serve in the tortillas with the guacamole, pico de gallo, hot sauce and sour cream, if desired.

Steps:

  • Place pizza stone on grill grate. Heat on high heat 30 min. Combine chicken, onions, peppers and seasoning mix; set aside. Spray baking sheet generously with cooking spray. (See Note.)
  • Pat dough into 12-inch round on prepared baking sheet. Slide dough from baking sheet onto hot pizza stone.
  • Grill 3 to 4 min. or until bottom of crust is golden brown. Use spatulas to transfer crust, grilled side up, to baking sheet on work surface.

1 tablespoon olive oil
1 lb chicken breast, skinned, boned, cut into 2 x 1/2 inch strips
1 -2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 cup thinly sliced onion
1/2 cup green bell pepper, strips
1/2 cup red bell pepper, strips
pizza dough, for 12 inch pizza (you can use refrigerated pizza crust if you like(I like Pizza Dough #8497 by Steve Sickenberger)
1/2 cup mild salsa
2 cups monterey jack cheese, shredded

Steps:

  • Heat oil in large skillet.
  • Add chicken and cook, stirring frequently until lightly browned.
  • Stir in seasonings.
  • Add onions and bell peppers, cook an additional minute or so until vegetables are crisp-tender.
  • Heat oven to 425°.
  • Sprinkle pizza pan with semolina flour and press dough into pan.
  • Pre-bake dough until it is a very light golden brown, about 6 minutes.
  • Remove from oven and scatter chicken over crust, spoon salsa over chicken, spread vegetable mixture over that, and finally, top with cheese.
  • Bake for another 15 minutes until crust is golden brown.

6 rhodes texas rolls or 9 rhodes dinner rolls, thawed to room temperature
vegetable oil
1 large boneless chicken breast, cut into strips

2 slices red onions
salt and pepper
1/2-2/3 cup salsa
1 1/2 cups grated monterey jack and cheddar cheese blend
1 tablespoon chopped fresh cilantro

Steps:

  • Spray counter lightly with non-stick cooking spray. Combine rolls and roll into a 12-inch pizza crust. Cover with plastic wrap and let rest.
  • Brush chicken, peppers and onions with oil and sprinkle with salt and pepper. Grill for about 8 minutes or until chicken is cooked. Cut peppers into strips and set aside with chicken and onions.
  • Remove wrap from dough and brush one side with oil. Carefully place oil side down on grill. Brush top of dough with oil. Grill 3-4 minutes on each side. Remove crust from grill and spread with salsa. Sprinkle half the cheese over the salsa. Top with chicken, peppers and onions and sprinkle with remaining cheese.
