Whole-wheat tortillas provide a tasty twist in this quick grilled chicken breast recipe that combines all the elements of a classic club sandwich into a wrap. Serve with extra napkins.

1 pound boneless, skinless chicken breast, trimmed
½ teaspoon freshly ground pepper, divided
3 tablespoons nonfat plain Greek yogurt
3 tablespoons cider vinegar
3 tablespoons minced onion
2 tablespoons extra-virgin olive oil
⅛ teaspoon salt
1 medium tomato, chopped
1 avocado, chopped
3 strips cooked bacon, crumbled
8 large leaves red- or green-leaf lettuce
4 10-inch flour tortillas, preferably whole-wheat

Steps:

  • Preheat grill to medium-high.
  • Sprinkle chicken on both sides with 1/4 teaspoon pepper. Oil the grill rack (see Tip). Grill the chicken, turning once or twice, until an instant-read thermometer inserted into the thickest part registers 165 degrees F, 15 to 18 minutes. Transfer to a clean cutting board and let cool for about 5 minutes.
  • Meanwhile, whisk yogurt, vinegar, onion, oil, salt and the remaining 1/4 teaspoon pepper in a large bowl. Chop the chicken into bite-size pieces and add to the bowl along with tomato, avocado and bacon; toss to combine.
  • To assemble the wraps, place 2 lettuce leaves on each tortilla and top with chicken salad (about 1 cup each). Roll up like a burrito. Serve cut in half, if desired.

1 large clove garlic, finely chopped
1 tablespoon fresh lemon juice
4 flour tortillas (10 inch)
8 leaves green leaf lettuce
1 package (9 oz) thinly sliced oven-roasted chicken breast
2 medium tomatoes, chopped
1/4 cup bacon flavor bits or chips

Steps:

  • In small bowl, beat aioli ingredients with wire whisk. Spread on each tortilla, leaving 2-inch border at bottom of each.
  • Arrange 2 lettuce leaves on each tortilla, leaving 2-inch border at bottom. Evenly top each with chicken, tomatoes and bacon bits.
  • Fold bottom edge of each tortilla up, and roll tightly. Secure, if desired, with toothpick, foil or waxed paper.

These grilled chicken wraps are perfect for a quick summer lunch! They're packed with flavor, really easy and quick to make, and perfect for packed lunches and picnics.

2 chicken breasts (sliced into cutlets)
1 teaspoon smoked paprika
¼ teaspoon chili powder
½ teaspoon garlic granules
½ teaspoon salt
⅛ teaspoon ground black pepper
1 tablespoon oil (if frying)
4 tortillas
4 large iceberg lettuce
1 cup cheddar or mozzarella cheese (shredded)
½ cup ranch dressing

Steps:

  • Season the chicken cutlets with smoked paprika, chili powder, garlic granules, salt, and pepper.
  • Heat oil in a pan, or a grill pan, or preheat your outdoor grill.
  • Place the seasoned chicken cutlets on the grill or pan, and cook on both sides until the chicken is cooked through. The internal temperature of the center of the chicken must be at least 165°F (75°C).
  • Remove the chicken from the grill, and allow it to rest on a plate for 5 minutes.
  • Cut the chicken up, and assemble the wrap.
  • To assemble, on a tortilla bread, layer lettuce leaves, followed by chicken, shredded cheese, and a drizzle of ranch dressing. Seal the tortilla and place the wrap on the grill (or lightly oiled grill pan). Cook for a minute or 2 on both sides, then remove and slice the wraps in halves and serve.

1/4 cup olive oil
3 tablespoons lime juice
2 garlic cloves, minced
1/4 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/2 pound boneless skinless chicken breast
2 flour tortillas (8 inches), warmed
Optional toppings: chopped green onions, sliced ripe olives, chopped tomatoes, shredded cheddar cheese, sour cream and/or shredded lettuce

Steps:

  • In a large resealable plastic bag, combine the first five ingredients; add the chicken. Seal bag and turn to coat; refrigerate for up to 2 hours. , Drain and discard marinade.   • Place the cubed chicken into a medium-size bowl, and drizzle in about 2 tablespoons of olive oil; add in the garlic, plus the remainder of the ingredients up to and including the paprika, and using your hands, toss all of the seasonings/spices very well to coat the chicken.
  • Using 4 bamboo skewers (you can soak these in water first to prevent burning), skewer the chicken so that there is equal portions of meat on each skewer, and allow the chicken to marinate for about 20 minutes, or even overnight, if making ahead.
  • While the chicken marinates, prep the garlic sauce by adding all the ingredients to a medium-size bowl, and whisking together until completely smooth and creamy; set aside, or keep in the fridge, covered. (I like to put mine in a plastic squeeze bottle, and keep any leftovers in the fridge to use for other sandwiches, or as a tasty condiment.)
  • When ready to grill, place a grill pan over medium-high heat (you can certainly use your outdoor grill, as well), and drizzle in a little oil; once the oil gets hot, place the chicken skewers into the pan, and cook them for about 6-8 minutes, turning them occasionally so that they get a bit charred on all sides, or until cooked through; allow them to rest, lightly covered with foil, for about 5-10 minutes; then, remove the chicken cubes from the skewers and set aside.
