Burritoville, a local joint down by Southeast University here, specializes in some of the oddest burritos I've ever tasted. From the BBQ chicken to the Buffalo burrito, I've had them all, but they've got only one type of quesadilla. So I've decided to take one of my favorite burritos from there, the cheeseburger burrito and apply it to quesadilla form. Served with a side of fries and a Coke®, it's what I call my most recent of culinary triumphs. Serve with a side of ketchup, yellow mustard, and sweet relish.

1 teaspoon butter
½ small yellow onion, chopped
2 pounds ground beef
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon garlic powder
cooking spray
8 (8 inch) flour tortillas
2 cups shredded Colby cheese
4 teaspoons ketchup, or to taste
4 teaspoons yellow mustard, or to taste
4 teaspoons sweet relish, or to taste

Steps:

  • Heat butter in a saucepan over medium heat; cook and stir onion until slightly tender, about 5 minutes. Add ground beef, Worcestershire sauce, salt, black pepper, and garlic powder; cook and stir until beef is browned and crumbly, about 10 minutes. Remove from heat, drain liquid from beef, and let sit for 2 minutes.
  • Heat a griddle or flat pan over medium heat and spray with cooking spray.
  • Place 1 tortilla on the hot griddle, top with some of the Colby cheese, 1/4 of the beef mixture, 1 teaspoon ketchup, 1 teaspoon mustard, and 1 teaspoon relish. Top with more Colby cheese and 1 tortilla. Flatten the quesadilla with your hand.
  • Flip quesadilla with a spatula and cook until browned and cheese is melted, 3 to 5 minutes more. Cut quesadilla into 4 pieces. Repeat with remaining tortillas, ground beef, cheese, ketchup, mustard, and relish.

1 lb. lean ground beef
2 tsp. LEA & PERRINS Worcestershire Sauce
4 KRAFT DELI DELUXE Process American Cheese Slices, cut in half
4 flour tortillas (6 inch)
1/4 cup HEINZ Tomato Ketchup
1 Tbsp. HEINZ Yellow Mustard
4 lettuce leaves
1 small tomato, cut into 4 slices

Steps:

  • Heat grill to medium heat.
  • Mix meat and Worcestershire sauce just until blended; shape into 4 half moon-shaped 4-inch patties. Grill 5 to 6 min. on each side or until done (160ºF). Remove from grill.
  • Place 2 cheese pieces on half of each tortilla; top with burger. Fold tortillas in half; grill 2 min. on each side or until cheese is melted.
  • Fill quesadillas with remaining ingredients before serving.

1 pound ground beef
1 cup ketchup
1/3 cup prepared mustard
4 bacon strips, cooked and crumbled
2 tablespoons Worcestershire sauce
2/3 cup mayonnaise
2 tablespoons 2% milk
2 tablespoons dill pickle relish
1/4 teaspoon pepper
8 flour tortillas (8 inches)
1 cup shredded cheddar cheese
Optional toppings: Shredded lettuce and chopped tomatoes

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 6-8 minutes, breaking into crumbles; drain. Stir in ketchup, mustard, bacon and Worcestershire sauce; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 5-7 minutes, stirring occasionally., Meanwhile, in a small bowl, combine mayonnaise, milk, relish and pepper; set aside., Preheat griddle over medium heat. Sprinkle 4 tortillas with cheese; top with beef mixture and remaining tortillas. Place on griddle; cook until golden brown and cheese is melted, 1-2 minutes on each side. Serve with sauce and, if desired, lettuce and tomatoes.

1 pound ground beef
2 teaspoons canola oil
1 cup mayonnaise
1/3 cup salsa
4 flour tortillas (12 inches)
4 slices pepper jack or cheddar cheese
4 tostada shells

Steps:

  • Gently shape beef into 4 balls, shaping just enough to keep together (do not compact). In a large skillet, heat oil over medium heat. Working in batches, add beef. With a heavy metal spatula, flatten to 1/4- to 1/2-in. thickness. Cook until edges start to brown, about 1-1/2 minutes. Turn burgers; cook until well browned and a thermometer reads at least 160°, about 1 minute. Repeat with remaining beef. Remove from skillet; wipe skillet clean., Combine mayonnaise and salsa; reserve half for serving. Spread remaining mixture over tortillas. On the center of each tortilla, place 1 slice cheese, 1 burger and 1 tostada shell. Fold sides of tortilla over burger; fold top and bottom to close, pleating as you go., In batches, place wraps in skillet, seam side down. Cook on medium heat 1-2 minutes on each side or until golden brown. Serve with remaining sauce.

1 pound ground beef, cooked and drained
2 tablespoons finely diced red onion
1 1/2 tablespoons ketchup
1 tablespoon yellow mustard
1 1/2 tablespoons dill pickle relish
1/2 teaspoon salt
1/4 teaspoon black pepper
2 (10-inch) flour tortillas
4 slices American cheese
1 cup shredded cheddar cheese

Steps:

  • Preheat a grill over medium heat. Combine the ground beef, onion, ketchup, mustard, relish, salt and pepper in a medium-size bowl. Place the tortillas on a clean work surface. Spread half of meat mixture on half of each tortilla, leaving about a 1/2-inch border. Top the beef with 2 slices of American cheese and 1/2 cup cheddar. Fold the empty side of each tortilla over the filled side. Grill for 1 to 2 minutes on each side, or until the cheese has melted and light grill marks appear. Cut into wedges before serving. Tip: I like to use 3 (5 ounce) Bobby Chez Smashed Burgers instead of ground beef because they're such a great quality. Cook and crumble, as directed.
