AVOCADO GRILLED CHEESE
This avocado grilled cheese sandwich with goat cheese and herbs is the grown-up grilled cheese you've always wanted. Easy and delicious!

Steps:
- Spread one side of each bread slice with butter, ensuring you reach all the way to the edges. Set aside.
- Lightly mash the avocado with the salt, garlic powder, and black pepper. In a separate bowl, combine the goat cheese and herbs.
- For each sandwich, layer 1 bread slice (butter-side down), 1/4 of the goat cheese mixture, 1/2 of the avocado mixture, 1/2 of the spinach, another 1/4 of the goat cheese, then top with the remaining bread slice, butter-side up. Repeat for the second sandwich.
- To cook the sandwiches, melt 1-2 tablespoons butter in a large skillet over medium low. Place the sandwiches on top, then cook for 3-4 minutes on the first side until the bread is golden, checking often to see that the bread is cooking nicely and doesn't burn. Flip the sandwiches to the other side and cook an additional 2-3 minutes, or until the bread is toasted and the centers are hot. Let cool slightly and enjoy immediately.

GRILLED SWEET PEPPERS WITH GOAT CHEESE AND HERBS

- Preheat a grill to 350 to 400 degrees F, or medium-high heat.
- Place the peppers in a large mixing bowl and drizzle with the olive oil. Toss with the salt, pepper and paprika.
- Grill the peppers, without the grill lid and turning often, until just slightly softened, 2 to 3 minutes.
- Spoon the goat cheese evenly into the pepper halves. Sprinkle with the rosemary and thyme.
BABY BELL PEPPERS WITH FETA AND MINT
Steps:
- Preheat a grill to high. Toss 1 pound baby bell peppers or quartered regular peppers with 2 tablespoons olive oil; season with salt and red pepper flakes. Grill, turning, until blistered, about 10 minutes. Transfer to a bowl and toss with 1 tablespoon olive oil, some chopped mint and the juice of 1/2 lemon. Top with crumbled feta.
GRILLED GOAT CHEESE, ROASTED PEPPER, AND GREENS SANDWICH
The title of this recipe was getting very long, so I left the last option - roasted artichoke hearts - out of it. I included them in my sandwich because I had some shriveling artichokes in my produce bin (along with the shriveling red pepper I used) and it didn't take very long to trim and roast them. But it's not a must; the peppers and goat cheese with the greens are what really stand out. I stir everything together and spread it on the bread. It's always a good idea to have a roasted pepper on hand for quick dinners like this.

- Dice roasted red pepper small and toss with salt, pepper and a teaspoon of olive oil. Measure out 1/4 cup, tightly packed.
- If including artichoke hearts in the mix, preheat oven or toaster oven to 425 degrees. Cover a baking sheet with parchment and spread the artichoke hearts over the pan in a single layer. Roast for 10 minutes and turn over the pieces. Return to oven and roast for another 10 minutes, until browned and tender. Remove from heat and cut in small dice.
- Mash goat cheese in a bowl and add peppers, chopped greens, and diced roasted artichoke hearts if using. Mash together.
- If desired, rub 1 slice of bread with a cut clove of garlic, then purée garlic and stir into the goat cheese mixture. Spread goat cheese mixture over the bread. Top with the other slice of bread (rub it with garlic if desired) and press down firmly. Drizzle remaining olive oil over top slice of bread.
- Toast in toaster oven 3 to 4 minutes, until cheese has melted. Remove from oven, press down firmly, cut in half and serve.

MUSHROOM WRAPS WITH SPINACH, BELL PEPPERS AND GOAT CHEESE

- Heat oil in large pot over medium-high heat. Add mushrooms and sauté until tender, about 10 minutes. Add canned tomatoes with juices. Cook until liquid thickens slightly, about 15 minutes. Season mushroom mixture with salt and pepper.
- Heat large skillet over high heat. Add 1 tortilla to skillet and cook until pliable, about 15 seconds per side. Place on work surface. Spoon 1/6 of mushroom mixture in strip on lower half, leaving 2-inch border at sides. Top with 1/4 cup cheese, 2 tablespoons onions, 2 tablespoons cilantro, 1/6 of peppers and tomatoes, then 1/2 cup spinach leaves. Fold in sides of tortilla over filling; fold up bottom and continue to roll up, enclosing filling. Repeat with remaining tortillas and filling.

- Place mushrooms, red bell peppers, and red onion in a 9x13-inch baking dish. Whisk olive oil, lime juice, grill seasoning, garlic, and cayenne pepper in a small bowl; pour over vegetables. Toss to coat and allow vegetables to marinate for at least 30 minutes.
- Preheat grill for medium heat and lightly oil the grate.
- Remove vegetables from the marinade, and shake off excess. Reserve remaining marinade.
- Grill vegetables on preheated grill until tender, about 5 minutes. Transfer grilled vegetables to a large platter. Whisk remaining marinade with balsamic vinegar; pour over vegetables. Top with avocado and goat cheese, then season with salt and pepper. Sprinkle with basil to serve.
