GRILLED CINNAMON APPLES
Great for fall and winter, this grilled apple recipe makes a wonderful dessert with ice cream or caramel sauce or a side dish for grilled pork.

Steps:
- Gather the ingredients.
- Prepare a medium (350 F to 375 F) gas or charcoal grill fire. Clean and oil the grill grates. Core unpeeled apples and cut them into 1/4-inch-thick slices.
- Combine water and lemon juice in a large bowl and add apple slices. This soak will keep them from browning.
- In a small bowl, combine brown sugar, cinnamon, and salt . Set aside.
- Grill the apples, turning once, 6 to 8 minutes total.
- Place apples on a large platter, sprinkle with the sugar-cinnamon mixture, and serve.

BLUEBERRY PIE WITH CHANTILLY CREAM
Steps:
- For the crystallized lemon: Prepare the garnish first so it has time to crystallize while you make the pie. Using a curly zester, zest the lemon into curly strips. On a plate, toss the zest in sugar and spread out evenly. Set aside and allow to crystallize.
- For the sweet crust: Using an electric stand mixer, mix the butter, flour and sugar on low speed until it is incorporated and makes pebbles. Then add the egg and salt, and continue to mix just until it's combined.
- Using your hands, form the dough into a small disc. Wrap in plastic wrap and allow to rest in the refrigerator for 30 minutes.
- Preheat the oven to 365 degrees F.
- Dust a rolling pin and surface with flour. Roll the dough out thinly to 1/4 to 1/8 of an inch. Continue to dust with flour as the dough becomes sticky. Cut out circles slightly larger than the size of your tart shells. If you can't find 3-inch tart shells, just use the next smallest size you can find and adjust your dough cut outs accordingly.
- Lay the sweet crust in the shells and trim any excess along the edges. Then line it with parchment paper and weigh it down with pie weights, coffee beans or dry beans. Place the shells on a baking sheet. Bake until golden brown, 10 to 12 minutes. Remove and let cool.
- For the blueberry compote: In a saucepan over low heat, add about a third of the blueberries, the sugar and juice of 1 lemon. Reserve the remaining blueberries. Using the back of a knife, scrape out the vanilla seeds and add the seeds and pod to the saucepan. Stir and continue to cook until the blueberries break down and the compote has a syrupy consistency, 5 to 10 minutes.
- Create an ice bath by placing a mixing bowl into a larger bowl filled with ice. Pour the compote into a strainer over the mixing bowl. Use a rubber spatula to help work the compote through the strainer. Let the compote cool until it's cold to the touch.
- Once the blueberry compote has cooled, add the compote to the remaining blueberries and gently mix together to create your pie filling.
- For the chantilly cream: Add the heavy cream, confectioners' sugar, vanilla and the zest from 1 lemon to an electric mixer. Mix until peaks start to form.
- Add the blueberry filling to the cooled pie shells and top with the chantilly cream. Garnish with crystallized lemon on top. Serve and enjoy!
CHICKEN WING SKEWERS
Steps:
- Preheat your grill (propane, charcoal or wood fired) to medium-high heat.
- Remove the wing tips from the chicken wings and save for another use, or freeze to make a stock. Cut the wings in half at the joint to separate the drums and the flats.
- Mix the vegetable oil, orange zest, fennel seeds, salt and pepper in a small bowl. Toss the drums and flats in this mixture to coat well.
- Separate the drums and flats to skewer. First skewer the flats using 2 metal skewers, one on each end of the flat placed lengthwise. You should be able to fit 6 flats per pair of skewers. Now, skewer the drums only with 2 skewers, one on each side of each drum. For even cooking, alternate the placement of the meatier end as you add on each piece. You should be able to fit 6 drums per pair of skewers. After the skewering assembly, you will have a total of 2 lines of flats and 2 lines of drums ready for grilling.
- Transfer the wings onto the grill over direct heat and grill for 6 minutes per side on medium-high heat. Remember the metal skewers will be hot; use sturdy tea towels or long tongs to help with flipping.
- Turn the heat down to medium. At this point (the wings will be about three-quarters done), brush the top side of the wings with the Honey Glaze. Grill for 8 to 10 minutes, then flip onto the other side and glaze again. Grill for another 8 to 10 minutes. Remove from the heat and let rest for 5 minutes; the glaze will still be very hot. Serve warm.
- Put the orange juice, honey and 1/2 cup water in a small pan on medium heat. Cook, stirring occasionally, until the liquid has reduced to maple syrup consistency, about 8 minutes (the glaze will thicken very slightly as it cools down). Season with salt and set aside.
SHORTCAKES WITH CHANTILLY CREAM AND PASSION FRUIT BASIL SYRUP
Steps:
- Place the sugar and 1/2 cup water in a small pot and bring to a boil. Once the sugar has dissolved, remove from the heat and add the basil stems. Allow the basil to infuse the simple syrup for approximately half an hour.
- Remove the basil stems and strain the basil syrup into a bowl. Add the passion fruit pulp to the syrup, stir to incorporate and set aside.
- In a chilled metal bowl, place the whipping cream, cream cheese, vanilla and sugar. Whip until medium-soft peaks form.
- To assemble, place a shortcake on a serving plate. Spoon the passion fruit basil syrup over and around the cake. Dollop the chantilly cream on the cake and garnish with a reserved basil leaf.
SWEET POTATO AND SPICED PECAN SOUP WITH CHIVE CHANTILLY

- Stir the hot sauce, Worcestershire and 1/4 teaspoon black pepper in a small bowl. Add the pecans and toss to coat. Spread the pecans in a single layer on a jelly-roll pan.
- Bake at 250 degrees F for 15 minutes or until the pecans are toasted. Let cool.
- Heat the butter in a 6-quart saucepot over medium heat. Add the onions and garlic and cook until the onions are tender.
- Add the broth, bay leaves, remaining black pepper and potatoes. Heat to a boil. Cover and cook for 10 minutes or until the potatoes are tender.
- Add 1 cup cream and heat through. Discard the bay leaves.
- Place one-third of the broth mixture in an electric blender container or food processor work bowl. Cover and blend until smooth. Repeat with the remaining broth mixture. Return to saucepot and heat through. Season to taste.
- Prepare the Chive Chantilly. Serve the soup with Chive Chantilly and sprinkle with the pecans.
- TIP: Chive Chantilly: Beat the remaining heavy cream in a medium bowl with an electric mixer on high speed until stiff peaks form. Gently stir in the chives.
KING OYSTER BRUSCHETTA
Steps:
- Preheat the broiler and line a baking sheet with parchment paper. Heat the olive oil in a saute pan over medium-high heat.
- Add the whites of the green onions, garlic, thyme, and saute until they are a light golden brown.
- Add the mushrooms, and saute until golden brown. Drizzle in the soy sauce, and continue cooking, stirring for 1 minute.
- Sprinkle in the chopped green onion tops, season with salt, and pepper, to taste, and remove the pan from the heat. Transfer the mushroom mixture to a bowl, and allow the dish to cool.
- Fold the goat cheese into the mushroom mixture. Arrange the toasted baguette slices on the prepared baking tray, and top with a spoonful of the mushroom mixture. Broil the bruschettas in the preheated oven, until the cheese has softened, approximately 3 minutes.

- Heat grill to medium direct heat.
- In a snall bowl, combine melted butter, oil, cinnamon, salt, pepper, and cloves. Mix and set aside.
- Place apple and onion slices on the hot grill. Brush tops with half of butter/oil mixture. Cover and grill for 5 minutes.
- Turn apple and onion slices CAREFULLY with a meatal spatula so that onion rings do not seperate. Brush with remaining butter/oil mixture. Cover and grill for 5-7 more minutes.
- Remove from grill CAREFULLY so that onion rings do not seperate. Layer apple and onion slices on a serving platter.

Steps:
- Halve and core the apples, then either brush them with olive oil or spritz with Pam.
- Dust the halves with salt and pepper, then place cut-side down over direct heat on a hot grill. Cook with the grill covered. After about 3 to 5 minutes, the apples should have pronounced grill marks on their cut sides.
- Use tongs to flip the apples and reduce the heat under them to low or move to cooler part of grill. Close the grill and cook until the apples are just tender, about another 3 to 5 minutes.
- To serve, sprinkle grated cheddar cheese over the apples and offer as a side to pork, chicken or steak.
- Note: if you want a sweet option, sprinkle with cinnamon and/or nutmeg, grill about 3 minutes. Turn over, sprinkle with sugar or brown sugar, raisins and/or coconut, close and cook until tender, about another 3 minutes. Top w/ vanilla or cinnamon ice cream!
