GRILLED BLACKENED CAJUN CHICKEN
This brined bird is full of flavor. Don't be scared if it blackens in some spots - that's the best part.

Steps:
- Brine the chicken: Combine 4 cups water, 2/3 cup salt, and the brown sugar in a medium saucepan. Bring to a boil and whisk until the salt and sugar are completely dissolved. Turn off the heat and transfer to a bowl or pot large enough to submerge the chicken. Stir in 6 cups of ice water and let cool completely. Submerge the chicken in the cooled brine, cover and refrigerate for at least 6 hours or up to overnight.
- Take the chicken out of the fridge 30 minutes before cooking. Remove from the brine and pat dry completely.
- Prepare a grill for medium-high indirect heat: For gas grills (with 3 or more burners), turn all the burners to medium-high heat; after about 15 minutes turn off one of the middle burners. For charcoal grills, bank one chimney starter-full of lit and ashed-over charcoal briquettes to one side of the grill. Set up a drip pan on the other side to avoid flare-ups. (Be sure to consult the grill manufacturer's guide for best results.)
- Whisk together the paprika, onion powder, dried oregano, dried thyme, cayenne, garlic powder, 1/4 teaspoon ground black pepper and the remaining 1/2 teaspoon salt in a small bowl. Brush the chicken all over with the melted butter, and then pat on all of the dry rub mixture.
- Grill the chicken: Place the chicken breast-side up on the indirect side of the grill, with the legs facing the hotter side of the grill. Cover and cook until an instant-read thermometer reads at least 165 degrees F in the thickest part of the thigh (avoiding the bone), 50 to 60 minutes. The chicken will be quite dark and blackened in spots.
- Remove from the grill and let rest on a cutting board for at least 20 minutes before carving.

Steps:
- 1. Marinate chicken wings in Italian dressing for at least 2 hours but up to 8 hours.
- 2. Remove the chicken from the marinade and shake off the excess. Sprinkle with the Cajun dynamite dust to evenly coat each wing. Allow to sit till dust appears "wet".
- 3. Preheat grill set up for indirect medium heat (300 degrees). Add apple wood chips soaked in water for 1 hour to create smoke. Arrange Chicken wings over drip pan and smoke for 40 minutes.
- 4. In aluminum foil pan over direct heat, melt butter, coat wings with butter. Cook chicken over direct heat 10 minutes. Just before serving, dip wings in sweet & sour sauce and cook 10 more minutes to "set" (to stick the sauce to them).
- 5. You may have to move the chicken wings around if you have hot spots in your grill, when grilling direct, just leave over coals long enough to char "Blacken" them with a bit of char. Do not burn. You are looking for a nice mahogany color. These wings are a little on the hot side, but my family tears them up!

VOODOO CHILD CHICKEN
Take up some of your sweet time with this peppery, garlicky, sweetish and spicy all-in-one entree. The voodoo rub also livens up mild white fish, such as orange roughy (being a "pesco-vegetarian", this is how I eat it). Plus it's tasty on the grill, too. By the way, this is the Stevie Ray Vaughan version ...

Steps:
- Saute chicken pieces in a skillet with butter and garlic until chicken and garlic are nicely browned.
- In the meantime, preheat oven to 350 degrees F and prepare the voodoo rub: Combine black pepper, paprika, thyme, oregano, parsley, garlic powder, crushed bay leaf, crushed dried chile, salt, Tabasco, brown sugar and tomato paste in a small bowl.
- Remove chicken from skillet and coat with voodoo rub (tomato paste mixture).
- Test your heat tolerance first!
- Bake covered at 350 degrees for 45 minutes to an hour (depending on which chicken pieces you're using).
- Alternatively, after sauteeing with garlic, this chicken can be grilled with the voodoo rub.
- I like to serve with plain white rice spiked with sliced scallions.
- Oh, and remember not to rub your eyes after handling that chile- or wear gloves while crushing!
GRILLED BLACKENED CHICKEN
This is one of the best if not the best stove top grilled chicken I've had in a long time. These pieces were very tender and moist, not to mention very tasty as well! Even though this was cooked on the stove top, I think it would work just as well on an outside grill. These 2 large pieces were more than we could eat. Would...

Steps:
- 1. Pull chicken breast from fridge 30 minutes prior to grilling to bring to room temperture.
- 2. Combine all seasoning and whisk; set aside.
- 3. Trim any excess fat from chicken and then rub evenly with olive oil. Sprinkle seasoning/rub evenly over chicken; rub to cover entire pieces.
- 4. Heat grill over medium/high heat until literally smoking. You want to hear the meat sizzle once it hits the grill.
- 5. Place breast on grill, cover and cook about 3 to 4 minutes on each side. Turn heat off and remove grill from heat. Leave meat in pan (covered) for abour 2 minutes and then remove to plate; cover with foil and let rest for 10 minutes before serving.
- 6. NOTES: 3 steps to insure a tender moist piece of chicken: 1. Remove chicken from fridge 30 minutes prior to grilling. 2. Make sure the grill is smoking hot before you place the chicken in it. 3. Let the chicken rest (covered) 10 minutes before serving. I used a cast iron grill.
