GRILLED SALMON WITH DIJON MUSTARD

- Heat grill to medium-high heat.
- Mix first 3 ingredients until blended. Reserve half for later use; brush fish with remaining mayo mixture.
- Grill fish 14 to 16 min. or until fish flakes easily with fork, turning after 8 min.
- Meanwhile, bring 2 inches water to boil in large saucepan. Place peas in steamer basket; place over boiling water. Cover; cook 5 min. or until peas are crisp-tender.
- Place fish on plate; drizzle with reserved mayo mixture. Serve with peas.

SALMON WITH LEMON-DIJON CAPER SAUCE
Steps:
- Heat oil in large skillet on medium-high heat. Add fish; cook 4 to 5 min. on each side or until fish flakes easily with fork. Remove fish from skillet. Discard any grease from skillet.
- Whisk flour, mustard and chicken stock until blended.
- Add capers and 1 Tbsp. garlic to skillet; cook and stir on medium heat 30 sec. Stir in lemon juice; cook 1 min., stirring frequently. Add chicken stock mixture; mix well. Bring to boil, stirring frequently. Continue to cook and stir 1 to 2 min. or until thickened. Remove from heat. Stir in parsley.
- Heat remaining oil in medium skillet on medium-high heat. Add remaining garlic; cook and stir 1 min. Add spinach; cook and stir 2 to 3 min. or just until wilted.
- Serve spinach topped with salmon and caper sauce.

GREY POUPON CRAB CAKES
Steps:
- Mix yogurt, lemon juice, 1 Tbsp. (3 tsp.) mustard and 1/2 tsp. seafood seasoning until blended. Refrigerate until ready to use.
- Heat 1 Tbsp. oil in medium skillet on medium heat. Add vegetables; cook 5 to 8 min. or until tender, stirring occasionally. Cool.
- Heat oven to 400°F. Spoon cooked vegetables into medium bowl. Add crabmeat, mayo, parsley, 1 Tbsp. bread crumbs, remaining mustard and remaining seafood seasoning; mix lightly. Shape into 6 (3/4-inch-thick) patties.
- Spread remaining bread crumbs onto large plate. Add crab patties, 1 at a time; turn to evenly coat both sides of each patty with crumbs.
- Heat remaining oil in large ovenproof skillet on medium heat. Carefully transfer crab patties to skillet. Cook 3 to 5 min. or until bottoms of patties are golden brown. Turn patties over; place skillet in oven.
- Bake 5 to 7 min. or until crab cakes are heated through. Serve topped with yogurt sauce.

- Sauce: Put shallots into sauce pan with wine; Boil gently until wine has evaporated; Mix cream and mustard together and add to the shallots; Season with salt and peppier and bring to a boil; Boil over medium heat, stirring often, until mixture thickens (about 8 minutes); Cool.
