RECIPE FOR GREEN MILK TEA JELLY



Recipe for Green milk tea Jelly image

Bittersweet with crunch jelly and enticing herbal/spice flavor from the combination of matcha (green tea), ground cinnamon, anise, and cardarmom. The whole thing is then sweetened with condensed milk and excitement from sea jelly. Swirl all the flavor together to make this fun, sweet and cool drink for spring/summer.

Number Of Ingredients 9

6 g carrageenan (~ 1 tsp)
100 g sugar
3 cups water
⅓ tsp any green flavor such as pandan, matcha or juice
1½ tsp matcha powder
4 cups hot water
¼ tsp ground cinnamon, star anise and/or cardamom
2 Tbsp condensed milk (or more if desire)
1 cup crushed ice

Steps:

  • Heat water and bring to boil.
  • Measure and mix carrageenan with sugar in a small bowl. Doing this to prevent carrageenan clumping when adding to boiling water.
  • When water is boiled, gradually pour in the above sugar mixture while stirring.
  • Keep on stirring for 3-5 minutes, then add extract flavor and/or food color.
  • Remove from heat and carefully pour into mold.
  • Let cool to room temperature and chill in the fridge 30 minutes to an hour before cutting/serving.
  • Cut jelly into thin strips if you haven't done so.
  • Carefully pour hot water into green tea and whisk to mix.
  • Add ground cinnamon/cardamom/star anise to add to the flavor.
  • While liquid still warm, mix in condensed milk and stir.
  • Set aside a couple of minutes to cool down to room temperature.
  • Prepare two tall glasses or cups
  • Divide and spoon some green jelly in, probably halfway.
  • Add crushed ice, then pour green milk tea on top.
  • Enjoy while it's chilled with big straws.

This is the one pudding i cant resist! I love the bitter tea and sweet milk combination. i make this really soft and serve over a milk sauce. If you are using vege-gel or similar please follow the instructions on the packet

1 -2 g powdered agar (or 5g gelatin)
1 tablespoon green tea powder (aka macha)
4 tablespoons caster sugar
50 ml boiling water
300 ml tap water
100 ml condensed milk
100 ml milk

Steps:

  • put 2 tbsp of the cold water in a small bowl with the agar/gelatin and microwave until dissolved.
  • mix the green tea powder and sugar. Add the hot water little by little to make a paste. then add the tap water and mix well.
  • quickly mix in the agar/gelatin and place in a mould. chill in the fridge stirring occasionally to prevent separating.
  • while setting make the milk sauce by combining the ingredients.
  • serve the jelly topped with the milk sauce. Try to serve in shot or cocktail glasses to get the contrast of the green jelly and white sauce.

I was intrigued by the idea of making jelly out of tea when someone posted a request for recipes. I tried this one, and I like it alot. Obviously, it all depends on the quality of your tea. 1 3/4 cups water
12 tea bags
1/4 cup juice (flavor should compliment the tea flavor)
3 cups sugar
1 (3 ounce) package liquid pectin

Steps:

  • (If not including juice and using a tea infusion as your only liquid, increase the amount of water to 2 cups.).
  • Bring water to boil, add tea bags and steep for 30 minutes.
  • Discard tea bags. Add sugar (and optional juice) to brewed tea and bring to a boil.
  • Boil for 2 minute stirring.
  • Remove from heat and add pectin, return to boil and allow to do so for 1 minute.
  • Skim off any foam.
  • Pour hot jelly into jars and process for 20 minutes.

1 cup sifted cake flour
1 teaspoon baking powder
2 eggs, separated
½ cup white sugar
¼ cup water
1 tablespoon green tea powder
1 teaspoon vanilla extract
1 (4 ounce) package cream cheese
1 tablespoon strong brewed coffee, or more to taste
1 tablespoon sifted confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line a 15x10x1-inch jelly roll pan with waxed paper.
  • Combine flour and baking powder in a small bowl.
  • Beat egg yolks in a bowl using an electric mixer until light in color. Add 1/2 cup white sugar, water, green tea powder, and vanilla extract. Beat on low speed until well combined.
  • Beat egg whites in a small bowl using clean beaters until soft peaks form. Fold egg whites into the egg yolk mixture.
  • Sprinkle flour mixture over the egg mixture; fold until just combined. Spread batter evenly into the prepared pan.
  • Bake in the preheated oven until top is golden and cake springs back when lightly touched, about 12 minutes.
  • Mix cream cheese and coffee together in a separate bowl to make the filling. Sprinkle a piece of aluminum foil the size of the cake with confectioners' sugar.
  • Immediately loosen edges of cake from the jelly roll pan and turn cake out onto the sugared aluminum foil. Roll up foil and cake, starting from the cake's short end. Let cool to room temperature, at least 20 minutes.
  • Unroll cake and spread filling over the inside, within 1/2 inch of the edges. Roll up cake. Wrap in plastic wrap and refrigerate, about 30 minutes.

Invented one day when I was craving a sweet dessert but had very little ingredients. Internet didn't have any recipes that matched my pantry contents so I got creative! Took a few goes, but here is my final recipe.

2 green tea bags
250 ml boiling water
2 teaspoons gelatin powder
1/4 cup sugar
200 ml cold water
squeeze lemon juice

Steps:

  • Brew tea with boiling water in a microwave safe container for about 5 minutes, or until tea is very strong.
  • Add gelatine, stir to dissolve and microwave for about 30 seconds, stir again.
  • Add sugar and stir until dissolved.
  • Add cold water and lemon juice and stir.
  • Place in moulds (optional) and refrigerate until set.
