Easy Grape Jam is a classic American preserve, great on it's own but even better paired with peanut butter for that all American taste sensation!

Number Of Ingredients 3

1.7 kg / 3 lb 12 oz seedless grapes (I used equal quantities or red, black & green grapes)
1 kg / 2 lb 3 oz granulated sugar
3 tbsp lemon juice

Steps:

  • Place grapes, sugar and lemon juice into a preserving pan or similar.
  • Using a gentle heat dissolve the sugar slowly, stirring frequently.
  • As the mixture heats up break up some of the grapes with your wooden spoon or use a potato masher in order the release the grapes' juices.
  • Once all the sugar has dissolved fully (around 20 minutes) take the mixture off the heat and use a stick blender to blend the grapes to a juice like consistency.
  • Put pan back on the heat, bring to a rolling boil and then time for 25 minutes, stirring continuously. (You could start with 23 minutes as depending on freshness and variety of grapes the setting time can vary a little).
  • Take the pan off the heat and test for set by placing a few drops of the jam on a chilled saucer and place in fridge for a minute.
  • The jam should form a crinkle when you push your finger through it.
  • If not then boil for another 2 minutes and re-test until set is achieved.
  • Pot up in hot jars and place lids on immediately.
  • Store in a cool dry place and once opened keep in fridge.

GREEN GRAPE MARMALADE

Delicious over vanilla ice cream this caramel colored marmalade is worth making for the long winter days. You 'll need a candy thermometer for this recipe, to ensure the cooking time. The gel-point for this recipe is 220 degrees.

8 cups green grapes
4 cups sugar
1 cup water
1 lemon,squeezed

Steps:

  • Wash, stem, and measure your grapes.
  • In a heavy large pot add the grapes, water and cook for 5-10 minutes.
  • Add sugar and stir until all sugar is dissolved.
  • Continue cooking and stir occasionally until almost jellying point - 220 degrees.
  • This could take well over an hour depending on how many grapes you're cooking.
  • About 10 minutes before it's done add at least 1-2 tablespoons of lemon juice for above amount.
  • Pour, boiling hot, into hot canning jars and seal.
  • It will be a reddish caramel color when done.

1 package (8 ounces) cream cheese, softened
2 tablespoons orange marmalade
1 teaspoon sugar
8 sheets phyllo dough (14x9-inch size)
4 tablespoons butter, melted
1 cup seedless grapes
1 tablespoon honey
2 teaspoons coarse sugar

Steps:

  • Preheat oven to 350°. In a large bowl, beat cream cheese, marmalade and sugar until smooth; set aside., Place 1 sheet of phyllo on a parchment-lined baking sheet; brush with butter. Layer with remaining phyllo sheets, brushing each layer. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Spread cream cheese mixture over phyllo to within 2 in. of edges. Arrange grapes over cream cheese., Fold edges of phyllo over filling, leaving center uncovered. Brush folded phyllo with any remaining butter; drizzle with honey and sprinkle with coarse sugar. Bake until phyllo is golden brown, 35-40 minutes. Transfer to a wire rack to cool completely. Refrigerate leftovers.

6 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
4 teaspoons butter
2/3 cup white wine or reduced-sodium chicken broth
2 tablespoons orange marmalade spreadable fruit
3/4 teaspoon dried tarragon
2 teaspoons all-purpose flour
1/2 cup half-and-half cream
1-1/2 cups green grapes, halved

Steps:

  • Sprinkle chicken with salt and nutmeg. In a large non-stick skillet, cook chicken in butter over medium heat for 3-5 minutes on each side or until lightly browned., In a small bowl, combine the wine, marmalade and tarragon. Add to skillet; bring to a boil. Reduce heat; cover and simmer for 4-6 minutes on each side or until a thermometer reads 170°. Remove chicken and keep warm., Combine flour and cream until smooth. Gradually stir into skillet. Bring to a boil; cook 2 minutes longer or until thickened. Stir in grapes; heat through. Serve with chicken.

Grapefruit Marmalade image

Ruby red grapefruit and sugar is all you need to make a slightly bitter, sweet, and tangy marmalade. Try this on toast or, for a twist, use it in any recipe calling requiring orange jam or marmalade. I have used it on meatballs and chicken wings with delicious results. Make sure you use organic grapefruit to ensure an edible zest.

4 ruby red grapefruits
3 cups white sugar

Steps:

  • Inspect two 5-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until marmalade is ready. Wash new, unused lids and rings in warm soapy water.
  • Thoroughly wash and dry the grapefruits. Run a zester around 2 grapefruits to produce ribbons of zest. Set aside. Cut away thin strips of peel from the other two grapefruits with a sharp paring knife.
  • Peel off all remaining outer white parts of the fruit and discard. Cut the grapefruits into wheels. Remove any seeds.
  • Put grapefruit wheels and zest strips into a non-reactive saucepan. Add sugar and stir well to cover fruit. Heat over medium-high heat until bubbling, mixing constantly. Smash the heated fruit until it liquefies. Reduce heat to low and cook over a steady boil, stirring often. Remove and discard any persistent white froth that won't disappear after being stirred. Continue to cook for about 10 minutes until marmalade begins to coat the back of a spoon.
  • Add zest ribbons and cook for 5 minutes more. Place a small amount of marmalade on a plate and put it in the freezer. Test the consistency after 3 minutes.
  • Remove the marmalade from the heat when the freezer sample meets your desired consistency.
  • Pack grapefruit jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

8 medium carrots, sliced (14 ounces)
1/3 cup orange marmalade
2 tablespoons water
1/4 teaspoon salt
1 cup halved green grapes
1 tablespoon butter
Chopped fresh parsley, optional

Steps:

  • In a 3-qt. slow cooker, combine carrots, marmalade, water and salt. Cook, covered, on low heat until carrots are almost tender, 2-3/4 hours. Add the grapes and butter. Cover and cook on low until tender, 45 minutes longer. If desired, sprinkle with parsley.
