2 long green chili peppers (about 4")
1 medium green bell pepper
1 1/2 cups cider vinegar
5 cups sugar
1 teaspoon cayenne pepper
1/2 teaspoon green food coloring
3 ounces liquid pectin

Steps:

  • Rinse, seed and chop the chili peppers and bell pepper.
  • In an electric blender, combine one-half cup of the vinegar, chili peppers and bell pepper.
  • Process until liquefied.
  • Pour into a large heavy saucepan or kettle.
  • Use remaining cup of vinegar to rinse the blender; pour into kettle.
  • Add sugar and cayenne pepper.
  • Cook, stirring constantly, over moderate heat, to slowly bring mixture to boiling.
  • Boil two minutes.
  • Remove from heat and skim off foam with a metal spoon.
  • Add green food coloring.
  • Stir in pectin, mixing well.
  • Pour into hot sterilized half-pint jars.
  • Seal immediately with two-part lids.
  • Process immediately in boiling water bath: five minutes at elevations from sea level to 1,000 feet; 10 minutes at elevations of 1,001 to 6,000 feet; and 15 minutes above 6,000 feet.

2 ½ cups finely chopped red bell peppers
1 ¼ cups finely chopped green bell peppers
¼ cup finely chopped jalapeno peppers
1 cup apple cider vinegar
1 (1.75 ounce) package powdered pectin
5 cups white sugar

Steps:

  • Sterilize 6 (8 ounce) canning jars and lids according to manufacturer's instructions. Heat water in a hot water canner.
  • Place red bell peppers, green bell peppers, and jalapeno peppers in a large saucepan over high heat. Mix in vinegar and fruit pectin. Stirring constantly, bring mixture to a full rolling boil. Quickly stir in sugar. Return to full rolling boil, and boil exactly 1 minute, stirring constantly. Remove from heat, and skim off any foam.
  • Quickly ladle jelly into sterile jars, filling to within 1/4 inch of the tops. Cover with flat lids, and screw on bands tightly.
  • Place jars in rack, and slowly lower jars into canner. The water should cover the jars completely, and should be hot but not boiling. Bring water to a boil, and process for 5 minutes.

1 ½ cups finely chopped green bell pepper
1 ½ cups distilled white vinegar
6 ½ cups white sugar
3 ounces liquid pectin

Steps:

  • In a large, stainless steel saucepan, combine green pepper, white vinegar, and white sugar. Bring to a boil, and cook for 6 minutes, stirring constantly.
  • Stir in liquid pectin, and continue to boil for 3 more minutes, stirring constantly. Skim off foam with a metal spoon, and remove pan from heat
  • Ladle jelly into sterilized jars, leaving a 1/2 inch space at the top. Seal, and process in a boiling-water canner for 5 minutes.

Number Of Ingredients 8

1 jalapeno pepper, seeded and chopped
7 medium green peppers, cut into 1-inch pieces
1-1/2 cups white vinegar
1-1/2 cups apple juice
1 package (1-3/4 ounces) powdered fruit pectin
1/2 teaspoon canning salt
5 cups sugar
About 8 drops green food coloring, optional

Steps:

  • Place the jalapeno, half of the green peppers and half of the vinegar in a blender or food processor; puree. Pour into a large bowl. Puree remaining green peppers and vinegar; add to the bowl. Add apple juice; mix well. Cover and chill overnight. Strain through several layers of damp cheesecloth. Measure 4 cups juice into a Dutch oven (add water if needed to make 4 cups). Stir in pectin and salt; bring to a rolling boil over high heat, stirring constantly. Add sugar; return to a rolling boil. Boil for 1 minute, stirring constantly. , Remove from the heat; skim off foam. Add food coloring if desired. Carefully ladle hot mixture into hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 5 minutes in a boiling-water canner.

I first had this recipe after buying it at our school fundraiser. It was so good that I went through the trouble of finding out who made it and got the recipe. Since then I have made it numerous times and given away lots of little jars at Christmas. It is delicious served with cream cheese and crackers. I am not absolutely sure of the yield, it could be more.

5 cups granulated sugar
2 cups finely chopped red peppers or 2 cups green peppers
1 1/2 cups white vinegar
1 (6 fluid ounce) bottle liquid pectin

Steps:

  • Chop peppers finely (It's faster to use a food blender to do this.) In a large saucepan, combine sugar, red or green peppers and vinegar.
  • Stir and bring to a full rolling boil.
  • Boil over medium-high heat for 15 minutes, skimming off foam.
  • Remove from heat; blend in pectin and stir for 2 minutes.
  • Pour into sterilized jars.
  • Keep in your refrigerator or freeze when cooled down.

  • Combine ground peppers and their juices with sugar and vinegar in 4 qt.
  • casserole.
  • Cover.
  • Microwave on High 12 minutes, stirring once.
  • Mixture must boil.
  • Let stand 5 minutes.
  • Add pectin and food coloring.
  • Mix well.
  • Pour into hot sterilized jars, seal with lids and store in refrigerator.
  • Pour jelly over cream cheese and serve with crackers.

  • Put It to Bed. When the pepper mixture has been thoroughly mixed with the apple juice, cover it with a lid or piece of aluminum foil. Place the covered bowl in the refrigerator and allow it to stand uninterrupted overnight.
  • Juice the Pepper Mixture. The birds are chirping. It’s a beautiful morning. But it’s also time to check your pepper mixture in the fridge. Remove the mixture from the fridge and place a cheesecloth or jelly bag over a colander.
  • Create the Jelly Mixture. Once the juice has been strained, pour it into a sauce pot along with the pectin and salt. Bring the mixture to a boil but be sure you stir the mixture constantly to deter sticking.
  • Give it a Bath. Be sure to clean and sanitize your canning jars, lids, and rings prior to canning. From there, put the hot jelly mixture into hot jars.
  • Let Stand. After the 10 minutes has passed, turn the stove off, and remove the jars from the canner with jar grabbers. Place the jars on a thick towel on a hard surface such as a countertop or a table top to keep from burning the surface.
  • Label and Store. After the 24-hour waiting period, check your jars. Each lid has a raised button in its center. When you run your finger over the top of the cap, it should feel smooth.
