CHEESY GREEN CHILE CORNBREAD

Nonstick cooking spray, for spraying the baking dish
1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon fine salt
1 cup milk
1 cup sour cream or 2 percent Greek yogurt
2 tablespoons unsalted butter, melted
1 large egg
1/2 cup sauteed onions
1/2 cup canned chopped green chiles
3/4 cup grated Monterey Jack cheese

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 400 degrees F. Generously coat a 9-inch square baking dish or 9-inch cast-iron skillet with cooking spray. Whisk together the cornmeal, flour, sugar, baking powder, baking soda and salt in a large bowl.
  • Whisk together the milk, sour cream, butter and egg in a medium bowl. Add the wet ingredients to the dry ingredients and whisk to combine. Fold in the onions, green chiles and cheese.
  • Pour the batter into the prepared baking dish and bake until the cornbread springs back when pressed in the center, 25 to 35 minutes. Let cool in the baking dish for about 15 minutes. Loosen the edges, then slice into wedges or squares and serve warm or at room temperature.

1 cup butter
3/4 cup sugar
4 eggs
1/2 cup green chili, diced (may use canned)
1 1/2 cups cream-style corn
1/2 cup cheddar cheese, shredded
1 cup flour
1 cup yellow cornmeal
2 tablespoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 325 degree f.
  • Cream butter and sugar.
  • Add eggs slowly, one at a time.
  • Add chiles, corn and cheese, mixing well to incorporate.
  • Sift together dry ingredients, then add and mix until smooth.
  • Pour into well-buttered, square 9 inch pan and bake about 1 hour.

This is a recipe that has been handed down to 3 generations. It is wonderful! If you don't like it spicy, you can leave out the chilis and jalapenos.

1 bunch celery, chopped
2 tablespoons butter or 2 tablespoons margarine
2 onions, diced
16 ounces cornbread mix (Marie Callanders works best)
2 dozen small corn tortillas, ripped into small pieces
1 (10 ounce) box seasoned stuffing mix or 1 (10 ounce) box croutons
6 eggs, beaten
2 (4 ounce) cans diced jalapeno peppers
2 (7 ounce) cans diced green chilies
chicken broth

Steps:

  • Preheat oven to 350.
  • Boil celery until done.
  • In a skillet melt butter and sweat onions.
  • Add celery to onions and simmer.
  • In a giant mixing bowl mix corn bread mix, tortillas, stuffing mix, eggs, jalapenos and chilis.
  • Add celery and onion mixture.
  • Mix in 4 cans of broth, should be a soupy consistancy. Add more broth if needed.
  • Place mixture in a 11x13 glass baking dish and place in oven.
  • Check stuffing every 15 minutes, adding more broth when it starts to dry up. DO NOT LET IT DRY OUT!
  • Bake for a total of 1.5 hours.

This is a recipe from Southern Living 1994 Annual Recipes. I've adapted it to our tastes. It goes very well with Mexican Cranberries and Barbeque turkey.

1/4 cup butter or 1/4 cup margarine
2 cups finely chopped onions
1 cup sliced celery
1 (14 1/2 ounce) can chicken broth
1 (17 ounce) can whole kernel corn, drained
2 (4 1/2 ounce) cans of chopped green chilies, drained
3 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/4 teaspoon dried oregano
1/4 teaspoon pepper
6 cups cornbread, crumbs
1/2 cup chopped pecans, toasted

Steps:

  • Melt butter in a large Dutch oven; add onion and celery; and cook over medium-high heat, stirring constantly until tender.
  • Stir in broth and next 7 ingredients. Add cornbread crumbs and pecans, tossing until moistened; spoon into a greased 13x9x2 inch baking dish, and cover with aluminum foil.
  • Bake at 350 for 30 minutes or until thoroughly heated.

1 cup cornmeal
2 tablespoons sugar, if desired
1/2 teaspoon salt
1 cup milk
1/4 cup vegetable oil
2 eggs
1 cup shredded sharp Cheddar cheese
2/3 cup corn, thawed and drained
2 tablespoons Old El Paso™ green chiles diced

Steps:

  • Heat oven to 400°F. Spray bottom of 9-inch square pan with cooking spray or grease with shortening.
  • Stir Bisquick mix, cornmeal, sugar, salt, milk, oil and eggs in medium bowl just until moistened. Gently stir in remaining ingredients. Pour into pan.
  • Bake 28 to 32 minutes or until light brown. Serve warm

Nonstick cooking spray
1/2 cup unsalted butter, melted
1/3 cup sugar
2 tablespoons honey
2 large eggs, at room temperature
2 cups all-purpose flour
1 3/4 cups fine yellow cornmeal
1 tablespoon baking powder
3/4 teaspoon fine sea salt
1/2 cup whole milk, at room temperature
1/3 cup sour cream or Greek yogurt, at room temperature
1 1/3 cup shredded cheddar cheese
One 4-ounce can chopped green chiles, drained
1 cup corn kernels (drained, if canned; thawed, if frozen)

Steps:

  • Preheat the oven to 375 degrees F. Lightly grease a 9-by-9-inch baking pan with nonstick cooking spray.
  • In a medium bowl, whisk the butter, sugar and honey to combine. Add the eggs one at a time and whisk well to combine.
  • In another medium bowl, whisk the flour, cornmeal, baking powder and salt together to combine. Add half of the flour mixture to the wet ingredients and stir with a rubber spatula until fully incorporated. Add the milk and sour cream and stir until the mixture is evenly combined.
  • Add the remaining flour mixture and stir until incorporated. Fold in 1 cup of the cheese, the chiles and corn, stirring just until the batter is uniformly combined.
  • Pour the batter into the prepared pan and spread into an even layer. Sprinkle the remaining cheese over the surface. Bake until a toothpick inserted into the center comes out clean, 20 to 24 minutes.
  • Let the cornbread cool at least 15 minutes in the pan and serve warm, or cool fully before serving.

3 poblano chilies (about 7 ounces total)*
1 cup yellow cornmeal
1 cup all purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup (packed) grated extra-sharp cheddar cheese (about 4 ounces)
1 cup buttermilk
2 large eggs
1/4 cup (1/2 stick) unsalted butter, melted, cooled
*Fresh green chilies, often called pasillas; available at Latin American markets and some supermarkets.

Steps:

  • Char chilies over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel, seed and chop chilies.
  • Preheat oven to 400°F. Butter 9 x 5 x 2 3/4-inch metal loaf pan. Whisk cornmeal and next 5 ingredients in medium bowl to blend. Stir in cheese. Whisk buttermilk, eggs and butter in another medium bowl to blend. Add egg mixture to dry ingredients and stir just until blended. Mix in chilies. Transfer batter to prepared pan.
  • Bake bread until deep golden brown on top and tester inserted into center comes out clean, about 45 minutes. Cool in pan on rack 10 minutes. Turn bread out onto rack and cool completely. (Can be prepared 2 weeks ahead. Wrap in foil; freeze. Unwrap and thaw at room temperature.)

3 large eggs room temperature
2 c buttermilk
1 large can cream style corn (15 ounces)
1/2 c mayonnaise (yes mayonnaise)
1 c chopped onions
1 can(s) 4 oz. green chilis, drained
8 oz roasted red peppers, drained & chopped (my addition)
1 1/2 c yellow corn meal
1 1/2 c all purpose flour
1/3 c sugar
2 Tbsp baking powder
cooking spray for baking dish
1 c mexican cheese blend, my addition
1 c shredded sharp cheddar cheese

Steps:

  • 1. Preheat oven to 375 degrees F. Grease or spray a 13 X9X2 inch baking pan with cooking spray and set aside. Some of the ingredients used to create the recipe.
  • 2. Add eggs and buttermilk to a large bowl and beat together until blended. Additional ingredients used. I decided not to use the Chili seasoning mix.
  • 3. Now add in the other ingredients. Combine the flour corn meal, sugar, & baking powder to a smaller bowl then stir till blended together BEFORE YOU ADD to the larger bowl, then add the corn & drained green chili's then stir till blended together.
  • 4. Add in the chopped roasted red peppers & mayonnaise shredded cheeses, then stir to blend.
  • 5. Don't forget to add in the chopped onions they add lots of flavor.
  • 6. Pour batter into prepared dish & bake for 50 minutes to an hour until golden brown, mine took 55 minutes, and tooth pick inserted in center comes out clean.
  • 7. Allow to cool for 15 minutes before serving.
  • 8. I served mine with HUNGRY MANS BEAN SOUP. Please NOTE I prefer using YELLOW CORN MEAL, but either will work. Also I didn't have Corn Meal Mix, so I created my own with the addition of flour, corn meal baking powder & sugar. Chose not to add salt.
