SWEET AND SOUR GREEN BEANS

Steps:
- In a large skillet, cook bacon over medium until browned, 3 to 4 minutes per side. With tongs, transfer to a paper-towel-lined plate (reserve skillet with pan drippings).
- Add onion to skillet; season with salt and pepper. Cook, stirring occasionally, until onion starts to brown, 3 to 5 minutes. Add green beans and 1/4 cup water; cook, tossing occasionally, until beans are bright green and tender, about 10 minutes.
- Crumble bacon into skillet; add vinegar and sugar. Cook until a syrupy sauce forms, 2 minutes, tossing to coat. Serve immediately.

- Drain on paper towels.
- Saute onion in drippings.
- Add brown sugar, vinegar and green beans.
- Crumble bacon into mixture.

- Garnish with almonds and pimento, if desired.
SWEET & SOUR GREEN BEANS
I found several Sweet & Sour Green Bean recipes over the years. Like any cook, I liked certain things about certain ones, and decided to make my own. So, here is the result! But, I dare you to have leftovers; as when you are lucky enough to, they are great cold!

Steps:
- Fry BACON and remove from fat.
- Mix SUGAR, VINEGAR and GARLIC; add to hot BACON FAT.
- Cook mixture for about 5 minutes over medium high heat.
- Place BEANS in a shallow baking dish.
- Sprinkle ALMONDS over BEANS.
- Place ONION rings on top of ALMONDS.
- Crumble BACON over the top of the ONIONS.
- Pour SUGAR/VINEGAR/GARLIC/BACON FAT mixture over the top of the BACON.
- Bake at 250 degrees for 4 hours.
- For a better presentation, I would drain the liquid off of the beans before serving, or serve the beans in soup bowls. But, keep the liquid, just in case you do reheat the beans.

- Cook bacon in a medium skillet over medium-high heat, stirring occasionally, until well-browned. Add onion and cook until translucent. Stir in flour and cook 2 minutes more.
- Pour vinegar and 3/4 cup of the reserved green bean liquid into the pan. Add sugar, salt, and pepper, and stir to combine. Bring to a boil, reduce to a simmer, and stir in the green beans. Continue cooking at a low simmer until beans are hot.

SWEET - SOUR GREEN BEANS LOADED WITH BACON
Green beans never had it so good! If this doesn't convert your hard-core bean-hater into a bean-lover, I don't know what will! We rarely have leftovers of this recipe, and when we do, they're GREAT the second time around. NOTE: You can substitute canned beans for fresh, just skip the directions for cooking the beans.

- In a large cast-iron skillet, fry bacon until nearly crisp; reserve at least 2 T. bacon fat in the pan.
- Meanwhile, prepare beans: cut into 1-inch pieces; place in skillet with reserved grease, boiling water, and salt. Cover and heat quickly until beans steam (boil), then turn heat down and cook for 15-20 minutes (tender-crisp) DO NOT DRAIN.
- Mix cornstarch with sugar, vinegar, soy sauce and water; pour over beans; stir and cook until slightly thickened and clear.
- Crumble at least 4 slices of bacon into the beans; stir to mix. Use MORE bacon if this is more of a "main dish"
- OPTION: Fry 1 medium chopped onion in the bacon grease; remove from pan BEFORE cooking the beans; add with the bacon at the end.

SWEET & SOUR BACON GREEN BEANS
I don't recall where this recipe came from, but I've had it for many years. Great taste. I usually manage to have it half gone before it's time to serve. The beans can be left whole (for effect) or cut - it's your choice. Note that the marinating time is very important, and is included in the cooking time.

- Trim beans, steam for 15 minutes, and set aside.
- Fry bacon till crisp; remove from pan, crumble, and set aside.
- Cook onion in the bacon fat until limp.
- Dissolve the sugar into the vinegar and add, with the beans and bacon, to the onions.
- Place in covered container and let marinate for two hours.
- Reheat just before serving.

GREEN BEANS WITH SWEET-AND-SOUR BACON DRESSING

- Directions: In a large Dutch oven over medium heat, cook the bacon until browned and crispy, 8 to 10 minutes. Transfer to a paper towel-lined plate. Reserve 2 Tbs. of the bacon fat in the pan. Pour the remaining fat into a heatproof container and set aside. Return the pot to medium heat, add the onion and cook, stirring occasionally, until lightly browned, 3 to 4 minutes. Stir in the vinegar and, using a wooden spoon, scrape up the browned bits from the pan bottom. Stir in the sugar, bring to a simmer and cook until the mixture is reduced by half, about 10 minutes. Add the stock and half of the bacon. Simmer over medium heat until the liquid is slightly reduced, about 5 minutes. Add the reserved bacon fat and season with salt and pepper. Add the green beans and bring to a simmer over medium heat, stirring occasionally to coat them with the dressing. Cook until the beans are crisp-tender, about 20 minutes. Remove from the heat and let the beans stand in the dressing for at least 30 minutes or up to 1 hour, stirring occasionally to coat them with the dressing. - Place green beans in a microwave-safe bowl and add enough water to make a layer in the bottom; heat in microwave until green beans are tender yet firm to the bite, 1 to 3 minutes. Drain.
- Heat peanut oil in a large wok or skillet over medium heat; cook and stir onion until tender, 5 to 10 minutes. Transfer onion to a bowl and discard any remaining oil.
- Place the bacon in the wok or skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and cut into bite-size pieces. Reserve 4 to 5 tablespoons bacon drippings in the wok.
- Mix onion, brown sugar, vinegar, and liquid smoke in the reserved bacon drippings; cook and stir until sauce is bubbling and brown sugar is dissolved, about 5 minutes. Add green beans to sauce and stir to coat; cook until green beans are heated through, 2 to 3 minutes.
