Bacon adds a twist to this colorful green bean side dish - ready in just 35 minutes.

Steps:
- In 2-quart saucepan, place green beans in 1 inch water. Heat to boiling; reduce heat. Simmer uncovered 10 to 15 minutes or until crisp-tender; drain. Immediately rinse with cold water; drain.
- Meanwhile, in 10-inch skillet, cook bacon over medium-high heat, stirring frequently, until crisp; drain all but 1 tablespoon fat from skillet. Drain bacon on paper towels. Cook onion in bacon fat over medium heat, stirring occasionally, until tender.
- Stir tomato, garlic, oregano, salt and pepper into onion. Simmer uncovered 5 minutes. Stir in green beans; heat through. Drizzle with lemon juice; sprinkle with bacon.

- In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp, about 5 minutes. Add the beans, brown sugar and water. Stir gently; bring to a boil. Reduce heat; cover and simmer until beans are crisp-tender, 15 minutes. Remove to a serving bowl with a slotted spoon.

- Bring a large pot of water to a boil. Place the green beans in the pot, and cook briefly, removing after 3 to 4 minutes. Drain, and rinse with cold water.
- Heat the oil in a skillet over medium heat. Stir in the mustard seed and garlic, and cook until golden brown. Mix in the chile pepper. Place the green beans in the skillet, and season with salt and sugar. Cook and stir 8 minutes, or until tender. Season with pepper to serve.

- Preheat oven to 400 degrees F (200 degrees C).
- Pat green beans dry with paper towels if necessary; spread onto a jellyroll pan. Drizzle with olive oil and sprinkle with salt and pepper. Use your fingers to coat beans evenly with olive oil and spread them out so they don't overlap.
- Roast in the preheated oven until beans are slightly shriveled and have brown spots, 20 to 25 minutes.

- Trim the green beans. Mince the shallot.
- Place the beans in a large skillet and add 1/3 cup water. Heat over medium-high heat. Once the water starts boiling, cover the skillet and boil the beans for 4 minutes. Then uncover and cook until the water is fully evaporated, about 1 minute or os.
- Once all the water has cooked out, add the olive oil or butter, minced shallot and kosher salt (take care because any additional moisture can cause the beans to momentarily spit). Sauté for 2 minutes more until tender, stirring frequently.
- Turn off the heat and remove the beans to a bowl. Stir in the lemon juice and if using, top with grated lemon zest. Taste, then add plenty of fresh ground pepper and a few additional pinches of kosher salt. Eat immediately. Leftovers store 2 to 3 days refrigerated: though the bright green color is lost, they still taste delicious.
