2 cups long grain rice (uncooked)
Early Harvest Greek extra virgin olive oil
1 medium yellow onion, chopped (just over 1 cup chopped onions)
1 garlic clove, minced
1/2 cup orzo pasta
2 lemons, juice of (PLUS zest of 1 lemon)
2 cups low sodium broth (chicken or vegetable broth will work)
Pinch salt
Large handful chopped fresh parsley
1 tsp dill weed (dry dill)

Steps:

  • Wash rice well and then soak it for about 15 to 20 minutes in plenty of cold water (enough to cover the rice by 1 inch). You should be able to easily break a grain of rice by simply placing it between your thumb and index finger. Drain well.
  • Heat about 3 tbsp extra virgin olive oil in a large sauce pan with a lid (like this one) until oil is shimmering but not smoking. Add onions and cook for about 3 to 4 minutes until translucent. Add garlic and orzo pasta. Toss around for a bit until the orzo has gained some color then stir in the rice. Toss to coat.
  • Now add lemon juice and broth. Bring liquid to a rolling boil (it should reduce a little), then turn heat to low. Cover and let cook for about 20 minutes or until rice is done (liquid should be fully absorbed and rice should be tender but not sticky.)
  • Remove rice from heat. For best results, leave it covered and do not disturb rice for about 10 minutes or so.
  • Uncover and stir in parsley, dill weed and lemon zest. If you like, add a few slices of lemon on top for garnish. Enjoy!

This easy Greek style rice is so easy to make and makes the perfect side dish for your greek chicken or souvlaki. With just a handful of ingredients, you can make this restaurant style Greek rice pilaf at home! It is wonderful served hot or allow it to cool and serve it at room temperature as part of a picnic. Or portion it out with some grilled chicken and fresh spinach for your lunch prep!

1 onion
1 garlic clove
3 tbsp extra virgin oil
1 1/2 cups long grain white rice
1/2 tsp dried oregano
2 lemons
2 1/4 cups vegetable broth
3 tbsp chopped oregano
1 tbsp chopped parsley
1 tbsp extra virgin olive oil
Salt and pepper

Steps:

  • Peel and chop the onion into small chunks then peel and mince the garlic.
  • Heat the extra virgin olive oil in a large saute pan/ deep frying pan (Use one you have a lid for)
  • Add in the onions and cook over low heat for 4-5 minutes until soft, Add the garlic and cook for a further minute.
  • Pour in the rice and stir to coat in the olive and onion mixture.
  • Add the zest and juice of one lemon, the dried oregano and then pour in the hot vegetable broth.
  • Bring to a simmer then cover and cook for 15 minutes over low heat.
  • Once the time is done, remove the pan from the heat and leave it covered for 10 minutes.
  • Once this time is done, remove the lid and squeeze over the juice of the remaining lemon.
  • Taste the rice for salt, then garnish with your fresh herbs and finish with extra virgin olive oil and plenty of black pepper and salt if needed.

I created this on the fly one evening, and even my very picky son liked it well enough that he wants to have it again. You can save some time by cooking the lentils and couscous while the vegetables simmer. I serve it as a vegetarian main dish, but it could be a side dish just as easily. Za'tar is a mixture of thyme and sesame seeds, and sumac is a citrus-flavored spice that is made from crushed sumac berries--NOT to be confused with American poison sumac that is not edible. Both can be purchased in Mediterranean grocery stores or online.

2 cups plain yogurt
1 tablespoon ground sumac
1 garlic clove, minced
1 tablespoon onion, minced
1 cup dried red lentils
2 cups couscous, uncooked
1 tablespoon olive oil
1 onion, chopped
2 garlic cloves, minced
1 red bell pepper, diced
3 medium carrots, sliced
1/2 lb fresh green beans, trimmed and cut
2 cups spinach, raw, chopped roughly
1 tablespoon za'atar spice mix
salt and pepper, to taste
8 ounces feta, diced
2 fresh tomatoes, seeded and diced
1 large cucumber, peeled, seeded, and diced

Steps:

  • Make the yogurt-sumac sauce by mixing together yogurt, sumac powder, 1 clove minced garlic, and 1 tablespoon minced onion. Allow to sit at room temperature for about an hour. (Can be made ahead of time and refrigerated.).
  • Cook the lentils in simmering water until tender, following package directions. Drain and set aside.
  • Put couscous in a bowl with 3 cups of boiling water. Stir and let sit away from heat until all water is absorbed and couscous is tender. Set aside.
  • Heat olive oil over medium heat. Add chopped onion and sauté until onion is transparent. Add garlic and bell pepper, and sauté for 2-3 minutes, until vegetables are softened. Add carrots and green beans. Cover and simmer for about 10 minutes, until green beans are tender. Stir occasionally.
  • When green beans are cooked, stir in the spinach and simmer 1-2 minutes, until spinach is wilted. Stir in the za'tar, salt and pepper to taste, and remove from heat.
  • Mix the vegetable mixture with the lentils, couscous, and feta. Stir gently until well combined. Serve topped with diced tomatoes and cucumber, and with yogurt-sumac sauce to taste.

  • In a heavy saucepan, saute onion in butter until tender.
  • Add rice and orzo and cook, stirring, for 2 minutes.
  • Add chicken broth and lemon juice and bring to a boil.

  • Fluff pilaf up with fork and stir in chopped parsley.

6 carrots , cut lengthways into 6-8 wedges
3 red onions , cut into wedges
2 tbsp olive oil
2 tsp cumin seeds
4 cardamom pods
1 cinnamon stick
200g brown basmati rice , rinsed
400ml vegetable stock
400g can brown lentils , rinsed and drained
200g baby spinach
handful toasted flaked almonds , or a few whole almonds (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. In boiling water, cook carrots for 4 mins, tipping in onions for the last min of cooking. Drain and mix in a roasting tin with 4 tsp oil, the cumin and seasoning. Roast for 30 mins, while you cook the rice.
  • Heat remaining 2 tsp oil in a large pan. Add cardamom and cinnamon for 30 secs, then add rice and toast for 1 min. Pour over stock and 100ml water, then simmer, covered, for 25-30 mins, until rice is tender and the water absorbed. Remove cinnamon and cardamom.
  • Tip in lentils and fork through before topping with spinach. Put lid back on and cook over a low heat, stirring once, until spinach has wilted and lentils heated through. Fork through again before tipping the cumin roasted veg onto the top and sprinkling with almonds, if using.

1 ¼ cups millet, rinsed and drained
2 ½ cups vegetable broth
1 tablespoon olive oil
1 onion, chopped
6 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach
1 cup frozen peas
¾ cup white wine
1 teaspoon minced fresh rosemary
4 plum tomatoes, chopped
salt and ground black pepper to taste
½ cup grated Parmesan cheese

Steps:

  • Cook and stir millet in a large saucepan over medium heat until fragrant and toasted, 5 to 8 minutes.
  • Bring vegetable broth to a boil in a large saucepan; add millet and return to a boil. Reduce heat to medium-low, cover saucepan, and simmer until liquid is absorbed, 18 to 22 minutes.
  • Heat olive oil in a skillet over medium heat; cook and stir onion and garlic until onion is translucent, 5 to 10 minutes.
  • Stir onion mixture, spinach, and peas into millet; add wine and rosemary and stir. Increase heat to medium, cover saucepan, and cook, stirring occasionally, for 7 to 10 minutes. Add tomatoes, salt, and pepper; return cover and cook until tomatoes soften, 2 to 3 minutes. Remove saucepan from heat and stir Parmesan cheese into millet mixture.

1 cup orzo pasta, uncooked
2 tablespoons green onions, finely chopped
1 (14 ounce) can vegetable broth
1/3 cup white wine
1/4 cup bell pepper, chopped (green or red)
3/4 cup chickpeas (or garbanzo beans)
1/4 cup kalamata olive, chopped
1 tablespoon capers
2 tablespoons parmesan cheese

Steps:

  • In a 10 inches skillet over medium-high heat, heat the olive oil, then stir in the uncooked orzo, and green onion.
  • Cook, stirring frequently, until the orzo is lightly browned, about 3 minutes.
  • Stir in the broth and wine and heat until boiling, then reduce heat, cover and simmer about 6 minutes, stirring occasionally.
  • Stir in the peppers, chickpeas, olives and capers, and cook covered another 6 minutes, stirring occasionally, until most liquid is absorbed.
  • Pour into a bowl and sprinkle with the 2 T of parmesan cheese.
