GREEK STYLE TURKEY BURGERS

Steps:
- Preheat the oven to 250 degrees F.
- Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
- Put the pitas on a baking sheet and place in the oven to warm.
- Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.
- Remove the pitas from the oven and cut the tops off. Slice the remaining 1/2 red onion. Spread some tzatziki inside each pita. Fill each with lettuce, a patty, some chopped cucumber, red onion and feta, then serve with chips on the side.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Combine turkey, bread crumbs, spinach, Greek dressing, feta cheese, onion, egg, salt, and black pepper together in a bowl; form into patties.
- Cook turkey burgers on preheated grill until no longer pink in the center and the juices run clear, 5 to 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Combine turkey, parsley, Worcestershire, Dijon, 1 teaspoon salt, and 1/4 teaspoon pepper. Cover; refrigerate 20 minutes. Stir together yogurt, lemon juice, and zest; season with salt and pepper.
- Set a steamer basket in a wide pot containing 1 inch water. Bring to a boil, then reduce heat to medium. Form turkey mixture into eight 1/2-inch-thick patties. Steam, covered, until a thermometer inserted into patties reads 165 degrees, 3 to 5 minutes. Transfer to a plate; pat dry. Heat a large skillet over high; swirl in oil. Sear burgers, flipping once, until golden, about 2 minutes total. Cook breads over an open burner or under the broiler, turning occasionally, until charred in spots, 30 seconds. Spread with hummus; top each with 2 patties, cucumber, arugula, and parsley leaves. Drizzle with sauce and oil, season with salt and pepper, and serve.

- 1. Warm a pan over medium heat and coat with cooking spray.
- 2. In a bowl, combine first 5 ingredients and shape mixture into 4 patties. Place in pan, cover, and cook for 7 minutes. Uncover, flip, and cook for 5 more minutes.
- 3. In another bowl, combine lemon juice with yogurt. Set aside.
- 4. Serve burgers on rolls, topped with yogurt sauce, spinach, and cucumber.
GREEK TURKEY BURGERS W FETA/RED PEPPERS
Steps:
- 1. Heat a grill pan or frying pan over medium-high heat. Brush the onion slices with oil and grill/saute the onions until very tender, flipping the slices halfway. The longer you cook, the sweeter the onion will taste. Take 1/4 of the onions and finely chop. Reserve the remaining onions as rings to top the burger. 2. In a large bowl, combine the chopped onions, salt, pepper, ground turkey, Dijon mustard, coriander, parsley, garlic and cumin. Use your hands to mix thoroughly. Divide the mixture in 4 and shape into patties. With your fingers press down gently in the center of each patty to make a slight depression in the middle (the center of patty rises during cooking, so making a depression in middle will ensure an even patty). 3. Heat a grill pan or frying pan over high heat. Brush the burger with a little bit of olive oil. When the pan is hot, grill the patties for 2 minutes. Flip the patties and grill another 2 minutes. Turn the heat to medium-low, cover the pan and cook until the patties are cooked through, about 3-5 minutes, depending on how thick your patties are, what protein you use and how done you like your burgers. I suggest cooking pork, turkey and chicken all the way through. 4. Serve with the burger buns, Roasted Pepper and Feta Spread and the reserved grilled onions, tofu and sprouts.

- Prepare charcoal grill for direct heat cooking.
- Remove cooking rack from grill and spray with non-stick cooking spray.
- In medium bowl combine turkey, olives, parsley, garlic, cinnamon, nutmeg, salt and pepper.
- Evenly distribute mixture into four burgers (approximately 4 1/2 inches in diameter). Grill burgers 2 to 3 minutes per side until meat thermometer registers 160 to 165 degrees F.

- To serve, spread 1 tablespoon sour cream on pita.

- For cucumber sauce, in a small bowl, combine the first eight ingredients. Cover and refrigerate until serving. , In a large bowl, combine the onion, green pepper, cumin, salt, pepper and cayenne.
