GREEK STYLE TURKEY BURGERS

1 1/2 pounds ground turkey
1 large egg yolk
3/4 teaspoon dried oregano
1/2 teaspoon kosher salt
A few grinds black pepper
1 red onion
4 pitas with pockets
2 tablespoons olive oil
One 16-ounce package store-bought tzatziki
1/2 head Boston lettuce
1/2 medium seedless cucumber, chopped
One 4-ounce package crumbled feta (about 3/4 cup)
Potato chips, for serving

Steps:

  • Preheat the oven to 250 degrees F.
  • Place the turkey, egg yolk, oregano, salt and pepper in a large bowl. Grate half the red onion and add it to the bowl. Mix with your hands, then form into four 1/2-inch-thick patties. Place on a sheet pan or plate lined with parchment paper.
  • Put the pitas on a baking sheet and place in the oven to warm.
  • Heat the olive oil in a large cast-iron or other nonstick skillet over medium-high heat. When the oil is hot, add the patties and cook until they are brown on the outside and no longer pink in the center, approximately 5 minutes on each side.
  • Remove the pitas from the oven and cut the tops off. Slice the remaining 1/2 red onion. Spread some tzatziki inside each pita. Fill each with lettuce, a patty, some chopped cucumber, red onion and feta, then serve with chips on the side.

1/3 cup fresh parsley, chopped
1 lb lean ground turkey
3/4 teaspoon black pepper
1/2 teaspoon salt (optional)
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon garlic powder
1 3/4 ounces feta cheese, crumbled
4 slices red onions (optional)
4 whole wheat hamburger buns, toasted

Steps:

  • In a bowl, mix parsley, ground turkey, pepper, salt, Worcestershire sauce, dijon mustard, garlic powder and feta cheese until combined.
  • Use an ice cream scoop or 1/2 cup to make equal-sized patties. Place on a sheet and broil for 5 to 6 minutes on each side.
  • Place the burger on the bottom half of a toasted whole wheat bun. Top with onion slices and a mixture of Dijon and ketchup, if desired, garnish with more parsley.
  • Cover with the top half of the bun and enjoy!

Turkey burgers made with the Greek flavors of garlic, oregano, spinach, sun-dried tomatoes and feta cheese are a healthful option for burger lovers everywhere.

1 pound ground turkey
½ cup fresh spinach leaves (, chopped)
⅓ cup sun-dried tomatoes (, chopped)
1/4 cup red onion (, minced)
¼ cup feta cheese (, crumbled)
2 cloves garlic (, pressed or minced)
1 egg (, whisked)
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 soft whole-wheat hamburger buns
Bibb lettuce leaves
Sliced red onion
½ cucumber (, halved with skin and seeds removed)
3/4 cup low-fat plain Greek yogurt
2 cloves garlic (, pressed or minced)
1 tablespoon red wine vinegar
1 tablespoon fresh dill (, minced)
Pinch of kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, add the ground turkey, spinach, sun-dried tomatoes, red onion and feta. In a small bowl, whisk together the garlic, egg, olive oil and dried oregano and kosher salt and freshly ground black pepper then pour over the turkey and mix with your hands to combine.
  • Divide the burger mixture into 4 portions and mold into patties. Place on a cutting board or plate dividing the patties with parchment paper and refrigerated for 30 minutes up to overnight. You could also individually freeze the patties at this point for up to 3 months.
  • Prepare the tzatziki sauce by grating the cucumber. Gather the cucumber together and place in a paper towel and press the water out of the shredded cucumber and place in a medium size bowl. Add the yogurt, garlic, red wine vinegar, fresh dill, kosher salt and freshly ground black pepper and mix well. Cover and refrigerate for 30 minutes or up to 3 days.
  • Heat a non-stick grill pan over medium heat and spray well with cooking spray.
  • Place the turkey burgers on the grill, cover with an upside down sheet pan or lid and cook for about 5 minutes per side. Be sure to watch the burgers and monitor your heat as the burgers will brown quickly if the heat is too high.
  • Slather buns with tzatziki sauce and garnish with lettuce leaves and red onion. Or serve bunless in the bibb lettuce leaves.

These Greek Turkey Burgers with Feta are so juicy, delicious, and easy to make. They come together in under 30 minutes and are also prep-ahead and freezer-friendly! I like to serve them with homemade tzatziki sauce for extra amazing flavor!

1 pound ground turkey ((85% lean, 15% fat))
¼ cup finely chopped Italian parsley
1 tablespoon finely chopped fresh dill
½ teaspoon dried oregano
2 tablespoons very finely diced red onions
2 cloves garlic, minced
¼ cup crumbled feta cheese
½ teaspoon Kosher salt
¼ teaspoon freshly ground black pepper
Olive oil for pan
4 burger buns of your choice (I like sesame or brioche buns)
Tzatziki sauce (homemade or store-bought)
Crumbled feta cheese
Tomato slices
Cucumbers slices
Onion slices
Lettuce

Steps:

  • Make the the tzatziki sauce per the recipe link instructions. You can make this 1-2 days in advance, if desired. You can also use store-bought tzatziki. Set aside.
  • Make the turkey mixture: In a large bowl, combine the ground turkey, parsley, dill, dried oregano, diced red onions, minced garlic, crumbled feta, salt, and pepper. Mix with your hands until evenly combined, but do NOT overmix. Note: overmixed meat will result in dry and tough patties.
  • Form the turkey burger patties: Divide the mixture into 4 equal parts and form ½ inch patties with an indentation in the middle. Make them a bit wider than the buns (about ⅓ or ½ inch larger or so) - this is because burgers tend to shrink while cooking. Tip: an indentation in the center to prevent them from puffing up as they cook. This will also prevent them from shrinking.
  • In a large skillet, heat a few drizzles of olive oil over medium heat. Cook for 4-5 minutes on each side. Tip: Don't press down the burgers with a spatula as they cook - this will remove all the moisture.
  • Build the burgers on the buns along with the toppings. Serve immediately and enjoy! I like to build them in this order: bottom burger bun, lettuce, turkey burger patty, tzatziki, crumbled feta, tomato slices, cucumber slices, onion slices, more tzatziki, top burger bun.

1 tablespoon olive oil
4 pita bread
8 lettuce leaves (Romaine, Green leaf or Red leaf)
1 tomatoes, sliced thin into rounds
1/2 red onion, sliced thin into rounds
8 ounces Greek yogurt
1/4 English cucumber, peeled and grated
2 teaspoons chopped dill
2 tablespoons lemon juice
2 tablespoons olive oil
kosher salt
ground black pepper

Steps:

  • To make the Tzatziki:.
  • In a medium bowl, stir to combine all ingredients. Add 1-2 tablespoons water to thin sauce if needed.
  • For the burgers:.
  • Equipment: Nonstick skillet and mixing bowls.
  • In a large bowl, mix to combine ground turkey, olives, parsley, dried oregano, garlic, 1/2 cup crumbled feta cheese, salt and pepper. Divide into 4 portions and shape into burger patties.
  • Warm olive oil in a large nonstick skillet over medium heat, then fry turkey patties until cooked through, about 4 minutes per side.
