GREEK-STYLE GRILLED ASPARAGUS SALAD WITH TOMATOES AND FETA
This asparagus salad is quick to make, visually beautiful, and fabulously delicious. Enjoy it as a side dish or as a light meal with some good crusty bread.

Steps:
- Turn the oven on to "Broil".
- Spread the asparagus out on a lined baking sheet and drizzle with the olive oil, then sprinkle with a little salt and freshly ground black pepper. Toss to coat and spread the asparagus out in a single layer. Roast for 6-8 minutes (depending on thickness) or until the asparagus is lightly browned, tossing once or twice. Remove from oven and set aside to cool. Once cooled, transfer to a cutting board and cut into 1-inch pieces.
- Place the asparagus, red onion and cherry tomatoes in a large mixing bowl.
- To prepare the vinaigrette, combine all ingredients and shake until emulsified.
- Pour the vinaigrette over the vegetables and gently toss to combine. Add the Feta cheese and very carefully stir to combine. Let sit for at least 30 minutes before serving. If serving later, refrigerate. Best served at room temperature.
- Serve as a side dish or as a light meal with some good crusty bread.

This is a delicious way to take advantage of early spring's flavorful asparagus. - Place the asparagus in a large skillet and fill with about 1 inch of water. Cover the pan and set over high heat. When the water comes to a boil, cook for 2 minutes or until the asparagus is bright green and almost tender.

I found this recipe in an old magazine that was just laying around on my coffee table and it looked good so I decided to make it for Easter. What an absolutely awesome dish! Even the asparagus haters loved it. This recipe can be prepared ahead of time and reheated or served at room temperature. It is excellent served with roast lamb.

- Preheat the oven to 300 degrees F.
- Whisk together the olive oil, balsamic vinegar, thyme, garlic, salt, pepper and brown sugar.
- Cut the tomatoes in half and toss to combine with the olive oil mixture.
- Spread the tomatoes in a roasting pan and place in the oven.
- Cook, stirring occasionally, for 30 minutes, or until the tomatoes are shrivelled.

- Heat oven to 190C/fan 170C/gas 5. Oil and line the base of a loaf tin (approx 22 x 10 x 5cm) with baking paper. Cook the asparagus in boiling, salted water for 2 mins, drain, then cool quickly under cold running water. Pat dry.
- Mix the flour and thyme with seasoning in a large bowl. Make a well in the centre, then add the eggs, milk and oil, stirring all the time to draw the flour into the centre. Beat for 1 min to make a smooth batter.
- Reserve 5 asparagus tips and a few olives. Add the remaining asparagus, tomatoes, olives and two-thirds of the cheese to the batter. Pour into the tin, then put the reserved asparagus and olives on top. Sprinkle with the remaining cheese. Bake for 35-40 mins until the cake feels firm to the touch and is golden and crusty on top.
