Greek-style Grilled Asparagus Salad with Tomatoes and Feta image

This asparagus salad is quick to make, visually beautiful, and fabulously delicious. Enjoy it as a side dish or as a light meal with some good crusty bread.

1 bunch asparagus, washed and trimmed
2 tablespoons extra virgin olive oil
Salt and freshly ground black pepper
1 pint cherry tomatoes (use red and yellow for more color if you can find them), cut in half
¾ cup sliced red onion
½ - ¾ cup diced Feta cheese
For the Vinaigrette:
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
2 teaspoons chopped fresh rosemary or ½ teaspoon dried
1 teaspoon sugar
½ teaspoon salt
¼ teaspoon freshly ground black pepper

Steps:

  • Turn the oven on to "Broil".
  • Spread the asparagus out on a lined baking sheet and drizzle with the olive oil, then sprinkle with a little salt and freshly ground black pepper. Toss to coat and spread the asparagus out in a single layer. Roast for 6-8 minutes (depending on thickness) or until the asparagus is lightly browned, tossing once or twice. Remove from oven and set aside to cool. Once cooled, transfer to a cutting board and cut into 1-inch pieces.
  • Place the asparagus, red onion and cherry tomatoes in a large mixing bowl.
  • To prepare the vinaigrette, combine all ingredients and shake until emulsified.
  • Pour the vinaigrette over the vegetables and gently toss to combine. Add the Feta cheese and very carefully stir to combine. Let sit for at least 30 minutes before serving. If serving later, refrigerate. Best served at room temperature.
  • Serve as a side dish or as a light meal with some good crusty bread.

  • Heat olive oil in a saucepan over medium heat and cook onions until soft but not browned, about 5 minutes. Add peas, tomatoes, potato, dill, salt, and pepper. Add water if there is not enough liquid from the tomatoes.
  • Stir thoroughly and bring to a boil. Lower heat and cook, partially covered, until peas and potato are soft, about 30 minutes. Ensure that any remaining water from the tomatoes has evaporated before serving.

1 tablespoon extra-virgin olive oil
2 teaspoons minced garlic

2 tablespoons balsamic vinegar
1 teaspoon dried thyme leaves
1 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon black pepper

2 cups grape tomatoes or 2 cups cherry tomatoes
2 bunches asparagus

Steps:

  • Preheat the oven to 300 degrees F.

1 medium onion, chopped
1/4 cup fresh Italian parsley, chopped
1 cup chopped ripe tomatoes
1 1/2 lbs asparagus

Steps:

  • Heat olive oil in a 3 quart pan and saute garlic and onion just until soft.
  • Add the parsley and tomatoes and simmer for about 25 to 30 minutes, or until the tomatoes are very soft.

3 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Cut salmon into 4 even pieces and place in the middle of the prepared sheet pan. Sprinkle with garlic salt. Scatter asparagus around salmon.
  • Stir together olive oil, lemon juice, and Greek seasoning in a small bowl. Combine feta cheese and olives in a second bowl.

100ml olive oil , plus extra for greasing
250g asparagus spears , each cut into 3 pieces
200g self-raising flour
1 tbsp thyme leaves
3 large eggs , lightly beaten
100ml milk
handful pitted black olives
100g sundried tomatoes , roughly chopped
100g gruyère or Beaufort, grated

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Oil and line the base of a loaf tin (approx 22 x 10 x 5cm) with baking paper. Cook the asparagus in boiling, salted water for 2 mins, drain, then cool quickly under cold running water. Pat dry.
  • Mix the flour and thyme with seasoning in a large bowl. Make a well in the centre, then add the eggs, milk and oil, stirring all the time to draw the flour into the centre. Beat for 1 min to make a smooth batter.
  • Reserve 5 asparagus tips and a few olives. Add the remaining asparagus, tomatoes, olives and two-thirds of the cheese to the batter. Pour into the tin, then put the reserved asparagus and olives on top. Sprinkle with the remaining cheese. Bake for 35-40 mins until the cake feels firm to the touch and is golden and crusty on top. Cool in the tin for 5 mins, then turn out and cool on a wire rack.
