A light and flavorful pizza featuring feta, tomatoes, and spinach. I like to use a homemade whole wheat crust, rolled thin.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). If using a pizza stone, place in oven to preheat.
- Heat 1 tablespoon olive oil in a large skillet; cook and stir onion and garlic until tender, about 5 minutes. Add spinach and continue to cook and stir until all liquid has evaporated, 5 to 7 minutes. Remove from heat and season with basil, lemon juice, oregano, and pepper. Allow mixture to cool slightly.
- Unroll pizza dough on preheated pizza stone or a large baking sheet and brush with remaining 1 tablespoon olive oil. Spread spinach mixture over dough, leaving a small border at the edge of the pizza crust. Top with 1 cup mozzarella cheese.
- Press tomato slices into seasoned bread crumbs until coated; arrange tomatoes over pizza. Spread remaining 1 cup mozzarella cheese and feta cheese over tomatoes.
- Bake in preheated oven until pizza crust is golden brown and cheese is melted, about 15 minutes.

- Preheat oven to 425°. Place crust on an ungreased baking sheet. Brush with 1-1/2 teaspoons oil; sprinkle with 1/2 cup mozzarella cheese. Set aside. SHRIMP PIZZA

- Preheat an oven to 400 degrees F (200 degrees C). Stir together the cream cheese, Parmesan cheese, mayonnaise, garlic, and spinach until evenly mixed; set aside.
- Press the pizza dough onto a baking sheet, and brush with 2 tablespoons of olive oil. Sprinkle with 1 teaspoon Italian seasoning. Bake in the preheated oven until golden brown, 10 to 12 minutes.
- Meanwhile, heat 2 tablespoons of olive oil in a skillet over medium heat, and cook the bell pepper and onion until tender, about 5 minutes. Season with 2 teaspoons of Italian seasoning, and stir in the canned shrimp; cook until the shrimp are heated through.
- When the crust has baked, remove from the oven, and spread evenly with the spinach mixture. Spread the shrimp and vegetable mixture onto the pizza, and cut into pieces to serve.

I wanted pizza but not a heavy pizza. This was easy and tasted great. You could sub chicken or beef pounded thin and grilled. I forgot the artichokes and was mad because they were one of main ingredients when i was making this in my head. As usual the measurements are as close that i can get. I am one of those a handful of this a pinch of that. Adjust to your tastes. Please enjoy! ****** Zaar wouldn't let me use the greek season mix. I used Cavender's brand. - Peel and devein your shrimp. Rinse and pat them dry.
- Sprinkle with your greek seasoning. Set them aside.
- Preheat oven 400.
- Get your pizza pan ready for the dough (i use alittle olive oil and sprinkle with cron meal).
- Chop the olive salad and mix in your garlic. You don't want huge chunks (or mabe you do?).
- Drizzle the dough with olive oil.
- Spread your olive salad and garlic mixture.
- Sprinkle your feta (break up big chunks)and mozzeralla cheese.
- Spread spinach evenly.
- Take the next 5 ingredients and spread evenly.
- Top with the parm cheese.
- Put in the oven for 10-20 minutes depending on how you like your crust. Thick, thin, dark or light. Pull out about 3-5 minutes before you think it's done.
- Top it with the shrimp.
- Put back in the oven just til the shrimp is done. I turned my oven off and the shrimp cook in the hot oven in about 4 minutes. PLEASE don't over cook the shrimp.
- Take it out of the oven and drizzle with the fresh lemon juice. I just squeezed the lemon right on top.

- Shell shrimp and set aside.
- Heat oven to 425°F.
- Grease 12 inch pizza pan or 13x9-inch pan and sprinkle with cornmeal.

GREEK PIZZA WITH POURABLE CRUST
Yes, you really can make and bake homemade pizza crust in less than 30 minutes! The trick is whipping up a pourable crust. For this pizza, I was going for a Greek theme, so I went for toppings like roasted eggplant and bell peppers, feta, artichokes, mint and lemon.

- Heat the oven to 400 degrees F. Line 2 large rimmed baking sheets with parchment.
- Put the eggplant slices in a colander in the sink and sprinkle with 1/8 teaspoon salt; flip slices and sprinkle with another 1/8 teaspoon salt. (This step helps remove the bitterness.) Set aside.
- Put the bell peppers in a large bowl and toss with 1 teaspoon oil. Spread out on 1 large rimmed baking sheet.
- Rinse the salt off the eggplant and pat dry with a paper towel. Put the eggplant in a bowl and toss with the remaining teaspoon oil. Spread on the other lined baking sheet and bake the peppers and eggplant, flipping halfway through, 20 minutes. (Leave the oven on.)
- Meanwhile, spray a 15-by-10-inch (or 13-by-9-inch) rimmed baking sheet with cooking spray and sprinkle with the cornmeal; set aside.
- Combine both flours, the oregano, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Combine the milk and eggs in a small bowl; mix into the flour mixture until well combined. Pour into the prepared baking sheet and even out the dough. Top with the roasted eggplant and bell peppers.
- Bake the pizza for 10 minutes. Turn the oven to the broil setting, and top the pizza with the artichokes, red onion, cherry tomatoes and cheese. Broil until the cheese is melted and golden, about 5 minutes. (Watch carefully.)
- Top the pizza with the mint leaves and serve with lemon wedges if using.

- Put 4 tablespoons olive oil in a wide skillet over medium heat. Add shallots and garlic, season with salt and pepper and cook, stirring, until softened, about 5 to 8 minutes. Lower heat as necessary to keep mixture from browning. Remove from heat while preparing tomatoes.

- At least 45 minutes before cooking, preheat the oven and pizza stone to 550 degrees.
- Melt the butter in a small sauté pan over high heat until it foams. Add the shrimp and garlic, season with salt and cook for about a minute, shaking the pan, until the shrimp just start to color. Transfer to a bowl.
- Place the bacon in the pan and set over high heat. Cook, stirring occasionally, until brown and crispy. Using a slotted spoon, transfer the bacon to a small bowl.
