Panera might be known for bread but I love their salads!!!! This Copycat Panera Greek Salad (with dressing!) recipe is a classic and so delicious - their Greek dressing is also super simple to make! It's under 300 calories and ready in 15 minutes!

Ingredients

1 head romaine lettuce
1 tomato (diced)
1/2 cup feta (crumbled)
1/4 red onion (sliced)
4-5 pepperocinis
1/3 cup kalamata olives
1/3 cup apple cider vinegar
1/4 cup white vinegar
1/8 cup olive oil
1 tsp minced garlic
3 tsp lemon juice
1/2 tsp crushed rosemary
2 tsp Greek seasoning
1/2 tsp coarse sea salt

Steps:

For Dressing: Mix together all ingredients in mason jar, cover and shake
For Salad: Combine ingredients, layering as you go and top with dressing

Copycat Panera Greek salad recipe with a handful of vegetables and a delicious fresh Greek salad dressing.

Ingredients

GREEK SALAD DRESSING
1/3 cup red wine vinegar
1/2 cup extra virgin olive oil
1 teaspoon oregano
1 teaspoon basil
1 teaspoon ground mustard powder
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
GREEK SALAD
1 large head romaine lettuce, diced
1 cup cherry tomatoes, sliced lengthwise
1/2 small onion, sliced
1/2 cup kalamata olives, pitted
1/2 cup feta cheese, crumbled
6 Pepperoncini peppers, whole

Steps:

Clean salad, dry and chop into bite size pieces.
Slice onion and tomatoes in half.
In a small mixing bowl add red wine vinegar, olive oil, oregano, basil, garlic, salt & pepper.
Whisk together until all ingredients are incorporated. Place in a jar with a lid until ready to use.
In a large salad bowl add salad and all the ingredients, except the dressing.
Gently toss the ingredients together with salad tongs.
Shake or whisk salad dressing, and pour desired amount over the prepared salad.
Garnish with pepperoncini peppers before serving.

2 teaspoons shallot, minced
2 teaspoons fresh oregano, finely chopped
2 teaspoons fresh basil, chiffonade
1 teaspoon dijon or whole-grain mustard
Salt, to taste
Pepper, to taste
1 to 1/2 cup EVOO

Steps:

Combine all ingredients except oil in a medium mixing bowl with a wire whisk. Once combined, slowly pour in olive oil while whisking to form an emulsion.
