GREEK STYLE POTATOES

Greek Style Potatoes image

Greek Style Potatoes is a simple recipe, and the closest I can get to the real thing. The best is that it can be adjusted to your taste as you bake it. I sometimes add a little more lemon. The potatoes are moist, and great with green beans and baked chicken with a little salsa and feta on top.

Categories     Potato

Time 30m

Yield 10 serving(s)

Number Of Ingredients 12

1 lb white potato, peeled (can use leftover mashed potatoes)
salt
fresh ground black pepper
2/3 cup feta cheese
2 spring onions, green and white parts, sliced thinly
2 tablespoons red onions, finely minced
2 tablespoons fresh dill, minced
1/2-1 tablespoon of fresh mint, minced
1 egg, beaten
1 tablespoon fresh lemon juice, to taste
flour, for dredging
olive oil (for frying)

Steps:

  • In large pot, boil the potatoes until soft. Do not salt the water until ready to mash the potatoes with the other ingredients.
  • While still warm, mash the potatoes with the feta cheese, green onion, red onion, dill, mint, egg, lemon juice, *salt and pepper. *Taste the mixture first before adding the salt because feta itself is quite salty. Place the potato mixture in the refrigerator to firm up. Refrigerate potato mixture until ready to fry.
  • Divide the potato mixture into little balls approximately 3/4"-1" in diameter. NOTE: The potato mixture can be prepared ahead of time and refrigerated until ready to cook.
  • Flatten the balls slightly and dredge in flour. Heat the olive oil in the pan and fry up the cakes until golden brown on both sides. Drain on paper towel.
  • Serve warm. I like to drizzle extra lemon juice on top of the potato cakes.
  • Yield is not known. Serving is estimated.

Time 2h30m

Yield 8 Potato Cakes

Number Of Ingredients 23

1/3 cup sour cream
1/3 cup diced seeded tomatoes
3 tablespoons minced onions
1/2 tablespoon vinegar
1 1/2 teaspoons chopped fresh cilantro
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 teaspoon dried dill
5 medium russet potatoes, with skins
1/3 cup shredded cheddar cheese
1/3 cup shredded monterey jack cheese
3 tablespoons shredded parmesan-reggiano cheese
2 green onions, chopped
1 teaspoon chopped fresh cilantro
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon garlic powder
1 cup unseasoned breadcrumbs
1/2 cup all-purpose flour
1 teaspoon dried dill
1 egg, beaten
1 cup milk
oil (about 2-3 cups, for frying)

Steps:

  • Boil potatoes for 25-30 mins or until mostly soft, but still slightly firm. Potato cakes will hold together best when the potatoes are not totally mushy.
  • As the potatoes boil make the Herbed Ranch Salsa by combining all the ingredients in a small bowl. Cover and chill till needed.
  • Drain potatoes and mash with skins on in medium bowl. and don't overly mash, just make sure there are small chunks of potato.
  • Add remaining potato cake ingredients and mix well.
  • Combine breadcrumbs with flour and 1 Teaspoon of Dill in large bowl.
  • Combine beaten egg & milk in another large bowl.
  • Measure approx 1/2 cup of potato mixture into your hands and shape into a patty about the size of a hamburger patty.
  • Drop potato mixture into breading mixture, then into egg & milk, and then back into breading mixture. Be sure to cover entire surface with breading. Arrange the potato cakes on a plate, repeat the process with remaining potato mixture.
  • Cover and chill the potato cakes for one hour so they will be sure to stick together when fried.
  • Heat up shortening in skillet over medium-low heat. There should be about 1" of shortening in the pan.
  • Fry the potato cakes in the oil 2-4 minutes or until golden brown, then drain on rack or paper towels.
  • Serve with Herbed Ranch Salsa drizzled over top.

SWEDISH SAUSAGE POTATO CAKES

Swedish Sausage Potato Cakes image

The source for this recipe is The Flavor of Wisconsin by Harva Hachten, a collection of recipes. This recipe was submitted by Dagmar Noel in Waukesha, WI. It can be a supper dish, as well as breakfast or lunch. The time indicated does not include mashing the potatoes. For best results, use a well seasoned raw pork sausage with plenty of flavor. That's what will season the dish. Also, be sure to use firm leftover mashed potatoes (definitely not potato puree). They will work much better to hold the patties together. Although the recipe didn't mention this, you can coat them in breadcrumbs before frying the patties to give them a crispy exterior and then serve them with a Swedish mustard sauce.
