PASTITSIO (GREEK LASAGNA)

This is truly a unique dinner recipe that is very different than traditional lasagna!

6 tablespoons unsalted butter
¾ cup all-purpose flour
1 quart whole milk, (warmed until hot)
1½ teaspoons salt
3 large eggs
4 tablespoons unsalted butter
2 medium onions, (chopped)
2 pounds 90% lean ground beef
⅛ teaspoon ground cinnamon
salt and pepper, (to taste)
½ cup water
2 tablespoons tomato paste
1 pound ziti pasta
3 large eggs, (beaten)
1½ teaspoons salt
12 to 16 ounces Kasseri or Kefalotiri cheese, (grated (see notes below))

Steps:

  • Melt the butter in a medium saucepan. Whisk in the flour and then gradually whisk in the hot milk. Cook, whisking constantly, until the sauce is smooth and thickened. Stir in the salt, remove from heat and let cool. When the sauce is lukewarm, whisk in the eggs. Set aside.
  • Melt 4 tablespoons butter in a large skillet. Add the onions and saute until softened and golden. Crumble the beef into the skillet and cook with the onions until the beef is browned. Stir in the cinnamon, salt and pepper. Stir in the water and tomato paste, and simmer for 5 minutes. Set aside.
  • Cook ziti according to directions on the package. Drain and rinse with cool water. When pasta has cooled down, stir in the beaten eggs and 1½ teaspoons salt.
  • Preheat your oven to 350 degrees F. Spray a deep 9x13-inch casserole dish with nonstick spray. You really need a deep casserole dish for this recipe (deeper than the usual 9x13-inch pyrex).
  • Scoop half of the pasta into the bottom of your prepared dish. Sprinkle generously with cheese. Spoon on the meat mixture to create an even layer; sprinkle with another layer of cheese. Scoop the remaining pasta on top of the meat and sprinkle with more cheese! Top with the cream sauce and sprinkle with the remaining cheese.
  • Bake 45 minutes, or until the sauce is bubbly and golden on top. Let sit at room temperature for at least 20 minutes before serving (but it is suggested that you refrigerate to let the layers set... and then warm up later to serve).

1 cup wide egg noodles
½ pound ground beef
4 ounces bulk Italian sausage
1 ½ cups marinara sauce
½ cup cottage cheese
⅓ cup grated Parmesan cheese, divided
¼ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon Italian seasoning
½ cup grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.
  • Bake in the preheated oven until cheese is golden brown, about 25 minutes.

This is the Greek version of Lasagna. A classic dish loved by all families and a firm favourite in our house.

Number Of Ingredients 16

1 packet of long macaroni - aka Perciatelli pasta
1 kilo of mince, preferably half pork and half beef or veal
2 garlic cloves
2 onions
2 cups of chopped tomatoes
1 teaspoon Olive Oil
2 cups of grated cheese
1 tablespoon of dried oregano
cinnamon
salt and pepper
1/3 cup of butter
1/2 cup of flour
4 cups of milk
2 eggs
More cheese - about 1 cup
Nutmeg

Steps:

  • Heat the oil in the pot
  • Saute the onions and garlic
  • Add the tomatoes, herbs, spices and salt and pepper and stir well
  • Simmer until aromatic and thickened
  • Turn off the heat
  • Boil the pasta in saltwater until just cooked and drain
  • Beat the two egg whites and add to the pasta along with the cheese and stir
  • For the Bechamel, melt the butter in another pot or saucepan
  • Add the flour and stir constantly with a whisk or wooden spoon until a smooth paste
  • Gradually pour in the milk and whisk over heat until a thick creamy sauce is achieved
  • Season with salt, pepper, and nutmeg
  • Add the eggs and 1/2 cup of cheese stirring constantly
  • In a large, deep pan arrange half the pasta evenly inside
  • Cover with the meat sauce
  • Cover with the rest of the pasta
  • Cover with the Bechamel sauce and garnish with the rest of the cheese
  • Bake for approximately 1 hour or until Golden Brown

2 tablespoons extra-virgin olive oil
¼ cup chopped onion
3 cloves garlic, chopped
2 (6 ounce) boneless, skinless chicken breasts, thinly sliced
1 (10 ounce) bag chopped fresh spinach
1 (8 ounce) can sliced black olives
1 ½ tablespoons fresh lemon juice
2 cups crumbled feta cheese

Steps:

  • Fill a large pot with lightly salted water, and bring to a rolling boil over high heat. Once the water is boiling, stir in the malfada pasta, and return to a boil. Cook the pasta, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 10 minutes. Drain well, and return pasta to the pot.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Combine olive oil, onion, and garlic in a large skillet. Cook and stir over medium heat until soft, about 3 minutes. Add the sliced chicken; cook, stirring, until chicken is lightly browned and no longer pink in the center, about 5 minutes. Mix in the spinach, black olives, and lemon juice. Cook until heated through, an additional 1 to 2 minutes. Stir the chicken mixture into the pasta, add the feta cheese, and mix well. Spoon into the prepared baking dish, and cover with aluminum foil.
  • Bake in preheated oven until the pasta is hot and the cheese is melted, about 30 minutes.

9 pieces lasagne pasta, uncooked
1 tablespoon vegetable oil
1 large onion, finely diced
2 garlic cloves, minced
1 lb eggplant, peeled and finely diced
3 cups part-skim ricotta cheese
4 ounces feta cheese, crumbled
1 cup plain low-fat yogurt
1 (28 ounce) can tomato sauce
1/2 cup parmesan cheese, grated

Steps:

  • Cook lasagne according to package directions; drain.
  • Preheat oven to 350ºF. Warm oil in a large saucepan over low heat.
  • Add onion, garlic and eggplant. Cover and let vegetables cook until very soft, about 10 minutes. Meanwhile, stir together the Ricotta, Feta and yogurt.
  • When vegetables are done, stir in tomato sauce. Remove from heat and set aside 1 cup of eggplant mixture.
  • In a 9 × 13 × 2-inch baking dish, spread a little of the eggplant mixture over the bottom and cover with 3 pieces of lasagne. Spoon some of the Ricotta over the lasagne. Continue to layer with eggplant mixture, lasagne, and Ricotta. Place a layer of lasagne on top. Spread the reserved eggplant over lasagne and sprinkle with Parmesan. Bake uncovered for 45 minutes, until cheese is brown.
