Steps:
- Make marinade: In glass baking dish, combine oil, lemon juice & zest, garlic, oregano, thyme, rosemary, dill, 1 Tbsp vinegar, S&P, Mix well.
- Place chicken in even layer in marinade, coat & refrigerate covered for at least 2 hours.
- Mix sliced cucumbers, red onion, 1/2 cup tzatziki sauce, 1 Tbsp vinegar, mix well, place in fridge.
- In a separate bowl combine tomato, kalmata, dill, feta, dill & a drizzle of EVOO, refrigerate.
- Bake chicken covered on 350 for 30 minutes. Uncover and broil on low for another 10.
- Place Naan in toaster oven for 5 min to heat through and crisp up.
- Layer on your plate:.
- Naan.
- 2-4 Tbsp tzatziki sauce.
- Distribute chicken evenly with some juices.
- Butter lettuce.
- Cucumber mixture with sauce.
- Top with tomato & olive mixture.

Steps:
- Mix self-rising flour and Greek yogurt together in a large bowl until combined. Transfer to a lightly floured work surface and knead until smooth, adding more flour as necessary to keep dough from sticking, 2 to 3 minutes.
- Pat dough into a rough 9x7-inch rectangle. Divide into 8 equal pieces. Lightly dust each piece with flour and flatten into a semi-rectangular shape, about 1/4 inch thick.
- Lightly grease a large skillet and place it over medium heat. Add 1 or 2 of the flattened dough pieces to the skillet. Cook until they begin to bubble and brown, 2 to 4 minutes. Flip over and cook an additional 2 to 4 minutes. Remove from heat and repeat with remaining dough until all pieces are cooked. Serve warm.

- For Hummus: put everything in a food processor and gently process, add the water as needed to allow the machine to produce a smooth puree. Taste and adjust the seasoning.
- For Naan: on a warm skillet, drizzle 1 tablespoon of olive oil and cook your Naan Bread for 2 minutes on both sides until lightly toasted. Make sure it doesn't burn.
- Once toasted, spread the hummus on top of the Naan, add the shredded chicken, sliced tomatoes, arugula and feta cheese. Warm the Naan again on top of the griddle before serving, cut in 6 pieces and serve!
EASY GREEK CHICKEN
These Greek Chicken Bites are a wholesome and delicious way to prepare a chicken dinner super quick. They are loaded with flavor and taste great on their own, or in pitas, wraps, gyros or your favorite greek dish.

- Cut the chicken breast into 1-2" chunks. Place them in an airtight container and add the greek seasoning, lemon juice, and 1 tbsp of olive oil. Mix to evenly coat chicken and let rest in the refrigerator for 15 minutes.
- Heat the remaining oil in a large skillet over high heat. Add the chicken spreading in a single layer. Let it cook without stirring for 3-5 minutes or until it gets a nice brown sear on the side touching the pan. Flip the chicken over and cook an additional 2-4 minutes or until the chicken is cooked through (165˚F internal temp.)
- Serve hot and enjoy!
