GRILLED MUSHROOM FLATBREAD WITH TRUFFLED PECORINO
Steps:
- For the pizza dough: Combine the water, sugar and yeast in the bowl of a mixer with a dough hook attachment. Let sit for 2 minutes to activate the yeast; it will begin to bubble. On low speed, add the flour and salt slowly, then add the olive oil. Once the dough is incorporated, about 4 minutes, remove from the bowl and knead on a lightly-floured surface for about 5 minutes. Place in a lightly-oiled bowl. Let sit in a warm place covered with a damp cloth until the dough has doubled in size, about 1 hour.
- For the cheese sauce: Cook the onions and garlic in the olive oil in a large saute pan until translucent, 2 to 4 minutes. Add the heavy cream and simmer until the cream has reduced by half, 12 to 15 minutes. Turn off the heat and add the cheeses. Stir very well until all the cheese has melted. Cover with a lid or foil until ready to use.
- For the flatbreads: Heat grill to medium heat. Toss the mushrooms lightly in the olive oil and some salt and pepper. Grill the mushrooms until lightly charred, turning occasionally, about 6 minutes. Cool slightly, then remove the stems from the oyster mushrooms and slice the cremini mushrooms.
- For assembly: Divide the pizza dough into two equal portions and roll them out on a lightly floured surface to 10 inches long and 4 inches wide. Lightly oil the grates of the grill. Grill the flatbreads for 2 minutes per side. Remove and add 1 cup of the truffled cheese sauce to each flatbread along with the mushrooms and Parmesan. Return the flatbreads to the grill in a low-heated area. Close the lid and cook for about 4 minutes. Sprinkle with the chives, cut each into 8 pieces and serve.
GRATED SUMMER SQUASH WITH TRUFFLE PECORINO
This salad is a wonderful way to venture into the world of raw squash. Using the truffle version of pecorino isn't absolutely critical, but its earthiness is a fantastic counterpoint to the brighter flavors of squash and lemon juice. For best results, use the smallest, firmest, freshest squash you can find- they're easier to grate and taste better than the more mature ones. And because this salad is so simple (almost minimalist), the quality of your olive oil really counts.

- Trim the squash, grate on the large holes of a box grater, and transfer to a medium bowl. Finely grate enough of the cheese to make 1/4 cup and add to the bowl. Use a vegetable peeler on the remaining chunk of cheese to make a small pile of cheese shards, and set them aside.
- Drizzle the lemon juice and olive oil over the squash, add a few large pinches of salt, and mix well. Taste and add more lemon juice or salt as needed. Transfer to a serving bowl, drizzle with a little more olive oil, and sprinkle the cheese shards over the top of the salad.
- Because squash has so much water, it starts to wilt and release liquid as soon as it comes into contact with salt. So for best results, serve this salad within minutes of making it.
ORZO WITH SUMMER SQUASH AND PESTO
There's still plenty of summer squash in the market. I like to dice it small for this dish, cook it with a little garlic and marjoram or mint and toss it with orzo, a pasta that looks like rice but tastes and feels like pasta. I love the textures of the two, and the pesto completes the dish. Make sure to dice the squash small so the pieces aren't much bigger than the grains of orzo.

- Bring a large pot of water to a boil for the orzo and salt generously. Meanwhile, heat a large, heavy skillet over medium heat and add olive oil and garlic. Cook, stirring, until garlic is fragrant, about 30 seconds, and add summer squash. Turn heat up to medium high and cook, stirring often, until squash is tender and translucent, 8 to 10 minutes. Stir in marjoram or mint and season to taste with salt and pepper. Turn off heat.
- When water in pot comes to a boil, salt generously and add orzo. Cook 9 minutes, until al dente. Stir 3 to 4 tablespoons of the cooking water into the pesto, then drain orzo and toss with squash. Heat through, add pesto, toss again and serve, passing more Parmesan or pecorino in a bowl.

TRUFFLED CAULIFLOWER GRATIN
In this otherwise humble gratin, we're going to use another, much more delicious delivery system of truffles: truffle pecorino cheese. For less than $10 worth of cheese, I think you can get a nicer, truer truffle flavor. By the way, if you know they actually make this cheese with synthetic truffle oil, please keep it to yourself, and don't spoil it for me.

- Preheat oven to 425 degrees F (220 degrees C). Butter a 9x13-inch baking dish with 1 tablespoon butter.
- Melt butter in a saucepan over medium heat. Whisk flour into butter; cook and stir until raw flour taste cooks off, 2 to 3 minutes.
- Gradually whisk milk into flour mixture. Increase heat to medium-high; cook and stir until mixture thickens and comes to a simmer, 5 to 10 minutes. Stir truffled pecorino cheese, salt, cayenne pepper, and nutmeg into milk mixture until cheese sauce is thick.
- Bring a large pot of salted water to a boil; add cauliflower and cook until slightly tender, about 6 minutes. Drain and transfer cauliflower to prepared baking dish. Spread cheese sauce evenly over cauliflower. Dust with bread crumbs, Parmigiano-Reggiano cheese; drizzle olive oil over the top and sprinkle with a pinch of cayenne pepper.
- Bake in the preheated oven until browned and bubbling, about 30 minutes. Garnish with chopped fresh chives.

LITTLE GEM LETTUCE WITH SUMMER SQUASH, WALNUTS, AND PECORINO
Little Gem lettuce, a smaller, sweeter, very crunchy variety of romaine, appeared recently in Los Angeles the way burrata did: one day nobody had heard of it and now it's everywhere. Also like burrata, I love it so much that I have found multiple uses for it in my restaurants. The first time I saw Little Gem lettuce was at the Atelier of Joël Robuchon in Paris seven or eight years ago, when I took my daughter Vanessa there for her birthday. A large percentage of Robuchon's perfectly simple, perfectly executed dishes came with a dressed quarter of this tiny oblong-shaped lettuce with a beautiful, pale green color; I fell in love with Little Gem at first bite.

- Place the onion slices in a small bowl of ice water and set them aside while you prepare the rest of the ingredients for the salad.
- Adjust the oven rack to the middle position and preheat the oven to 325°F.
- Scatter the walnut halves on a baking sheet and toast them for 10 to 12 minutes, shaking the pan occasionally for even toasting, until they're lightly browned and fragrant. Remove the walnuts from the oven and set them aside to cool to room temperature. Transfer the walnuts to a small bowl, drizzle with the walnut oil, sprinkle with salt, and toss to coat the nuts with the seasonings.
- Drain the onion, pat dry with paper towels, and place it in a medium bowl. Season the lettuce with salt and toss gently to distribute the salt evenly. Drizzle the remaining 1/4 cup of vinaigrette over the lettuce and toss, gently massaging the vinaigrette into the leaves. Taste for seasoning and add more vinaigrette or salt, if desired.
- Building the salads in three layers, place three of the largest lettuce leaves in the center of each of four plates like a triangle. Scatter one-third of the squash and onions on the leaves, dividing them evenly. Lay two onion rings and scatter several walnut halves on each salad. Build two more layers the same as the first, using the medium leaves for the second layers and reserving the smallest leaves for the top layers. Grate fresh pecorino romano and coarsely grind black pepper over each salad. Scatter the remaining walnuts around the salads, dividing them evenly, drizzle about a teaspoon of vinaigrette around each salad, and serve.
