BASIC MEATLOAF

Whether you're a meatloaf lover or a meatloaf skeptic, give this recipe a try. It's simple and hearty. It can be fancy or basic. It tastes great as leftovers. And, it's the perfect meal to make for Sunday dinner.

Meatloaf:
2 lbs grass-fed beef, chicken, turkey, or a combination of all three
1 cup diced or pureed onion (I like to puree mine - hubby doesn't like onion chunks)
1 cup gluten-free cracker or bread crumbs (or use 1/4 - 1/3 cup of coconut flour)
2 pastured eggs
1/2 cup whole milk
2 tbsp. garlic powder
1 tbsp. all-purpose seasoning
1/2 tsp. blackening seasoning
Sea salt, to taste
Black pepper, to taste
Glaze (depends on how much you want):
Equal parts of ketchup, yellow mustard, barbecue sauce, Worcestershire sauce, and hot sauce. Stir together well.

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, combine the meat, onions, eggs, milk, garlic, and seasonings.
  • Using a fork (or your hands), gently combine.
  • Add the bread crumbs or coconut flour and stir until evenly distributed.
  • For one large loaf, pour ingredients on a sheet pan and shape it into a loaf - it will be about the size of a loaf of bread. If you want to cook in a loaf pan, make sure you oil the pan with a little coconut oil and then pack evenly into the pan. You can also make mini loaves by using smaller loaf pans - this method is perfect for freezing individual loaves for quick dinners.
  • Pour the glaze over the top.
  • Bake for 1 hour.
  • Remove from the oven and let stand about 10 minutes before serving. Goes great with garlic cheddar mashed potatoes or your favorite side.

Here's what you need: grass-fed ground beef, smoky bacon, extra virgin olive oil, garlic, large white onion, carrot, italian seasoning, worcestershire sauce, beef broth, heaping tomato paste, sea salt, pepper, dijon mustard, italian style breadcrumbs, egg, fresh parsley, ketchup, brown sugar, cayenne powder, paprika, dijon mustard, apple cider vinegar, salt and pepper

Number Of Ingredients 23

1 lb grass-fed ground beef
6 strips smoky bacon
1 tablespoon extra virgin olive oil
2 cloves garlic, minced
½ large white onion, minced
1 ½ tablespoons carrot, shredded
1 teaspoon italian seasoning
3 tablespoons worcestershire sauce
2 tablespoons beef broth
1 tablespoon heaping tomato paste, or marinara sauce
1 ½ teaspoons sea salt
2 teaspoons pepper
2 teaspoons dijon mustard
½ cup italian style breadcrumbs
1 egg
2 tablespoons fresh parsley, chopped
½ cup ketchup
¼ cup brown sugar
¼ teaspoon cayenne powder
⅛ teaspoon paprika
1 tablespoon dijon mustard
1 tablespoon apple cider vinegar
salt and pepper, to taste

Steps:

  • Preheat the oven to 350°
  • In a medium saute pan, heat the extra olive oil on med-high. Add garlic, onion, and carrot in oil and cook for 8-10 min or until soft.
  • Add the Italian seasoning, salt, pepper, and tomato paste,
  • Now goes in the Worcestershire sauce, Dijon mustard, and beef broth. Mix well and set aside to cool.
  • In a large bowl mix the grass-fed beef, onion mixture, bread crumbs and egg.
  • Lay out the bacon strips, barely overlapping each other
  • Form the meat into a rectangle loaf to fit the bacon. Now wrap one side with the bacon then the other. You want them to slightly overlap each other.
  • Move to a cooking sheet with a rack. Place seam-side down.
  • Bake for 30 minutes. While the loaf is cooking, whisk all the glaze ingredients in a bowl.
  • After 30 minutes up, turn the oven temp to 450°. Cook for 10 minutes.
  • After 10 minutes, brush on ¾ of the glaze around the whole meatloaf.
  • Bake for 10 - 15 minutes more or until the internal temp is 160°.
  • Let the loaf rest for 10 minutes.
  • Slice, and brush the remaining glaze on top if desired.
  • ENJOY!

Number Of Ingredients 16

4 cups panko breadcrumbs
12 ounces whole milk
1 1/2 cups shredded Pecorino-Romano
1 1/2 tablespoons Worcestershire sauce
1 teaspoon freshly ground pepper
1 teaspoon kosher salt
6 large eggs, beaten
2 pasilla chile peppers, diced
1 1/2 bunches fresh Italian parsley, minced
2 pounds grass-fed ground beef
1 cup ketchup
1/2 cup dark brown sugar
2 teaspoons dry mustard
3 dashes hot sauce, such as Tabasco
9 slices extra-thick applewood-smoked bacon
Nonstick cooking spray, for the pan

Steps:

  • Preheat oven to 375 degrees F.
  • Combine panko, milk, pecorino, Worcestershire sauce, pepper, salt, eggs, pasilla chiles and Italian parsley in a large mixing bowl and mix well. Add the ground beef and hand-mix until well blended. Set aside.
  • To make the glaze, combine ketchup, brown sugar, dry mustard and hot sauce in a small mixing bowl. Stir well using a rubber spatula. Set aside.
  • Lay bacon down slightly overlapping side-by-side in a half-sheet pan. Spray a 9-by-4-inch loaf pan that's 6 inches high with nonstick spray. Place the beef mixture in the pan and pat down to form a meatloaf. Turn pan over and tap out the meatloaf into your hand. Place the meatloaf over the center of the bacon slices. Working with one slice at a time, fold ends of each bacon slice over the top of the meatloaf. Turn loaf over and place on a rack set in a baking sheet to allow the fat to drain while baking.
  • Using the rubber spatula, spread half the glaze over the meatloaf. Bake for 1 hour, then apply remaining glaze. Continue to bake until the internal temperature reaches 165 degrees F, about another 20 minutes.

• 2 egg, beaten

• 1 tsp salt
• 1 tsp black pepper
• 2 tbl fresh parsley
• pinch of cayenne
• 1 tsp oregano
• 1 tsp basil
• 1 tsp sage
• 2 pounds ground bison/buffalo meat
• For the Glaze:
• Honey BBQ Sauce

Steps:

  • 1. Prep the onions and mushrooms with a knife, or in a food processor. Add to a large sauté pan with the butter and oil, and cook on med-high heat, for about 10 minutes, until the moisture from the mushrooms is evaporated, and the mixture is lightly browned. Add to a large mixing bowl. Allow cooling for 15 minutes. 2. Add all the remaining ingredients, except the meat, and mix well. Add the meat and mix gently until combined. Do not over-mix. Preheat oven to 325 degrees F. - Lightly grease the bottom of a shallow roasting pan with a few drops of oil. Wet your hands with cold water and form the meatloaf mixture into a loaf shape, about 6 inches wide, by about 3 to 4 inches high

1 sleeve crushed buttery round crackers (such as Ritz®)
⅔ cup ketchup
½ cup chopped onion
2 eggs
1 teaspoon onion powder
1 teaspoon garlic powder
12 slices thick-cut bacon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C) .
  • Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
  • Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
  • Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

Five ingredients are all you need for this thrifty dish that makes the most of mince and has a great sage and onion flavour

sunflower oil , for greasing
85g pack sage & onion stuffing mix
1 beef stock cube
8 rashers smoked streaky bacon
500g pack beef mince (avoid very cheap packs; use one with less than 20% fat)

Steps:

  • Heat oven to 180C/160C fan/gas 4 and oil the inside of a 900g loaf tin. Tip the stuffing mix into a bowl, crumble in the stock cube and pour over 300ml boiling water. Give it a good stir, then set aside.
  • Stretch the bacon rashers a little by running the back of a spoon along their length, then use 6-7 to line the base and longest sides of the tin. Chop the rest.
  • Mix the chopped bacon and mince into the stuffing with some black pepper, then press into the bacon-lined tin and bake for 40 mins until firm. Turn out and serve sliced.

1/2 cup chili sauce
2 large eggs, lightly beaten
1 tablespoon Worcestershire sauce
1 medium onion, chopped

2 pounds lean ground beef (90% lean)
2 bacon strips, halved

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into a loaf in an ungreased 13x9-in. baking dish. Top with bacon., Bake, uncovered, at 350° for 70-80 minutes or until meat is no longer pink and a thermometer reads 160°. Drain; let stand for 10 minutes before cutting.
