Here's a light tasty recipe for chicken wings. I love ruby red grapefruits and I hope you do too. These wings are more delicate in flavor but a great compliment to heartier side dishes.

Number Of Ingredients 4

3 -4 lbs chicken wings, jointed (save the tips for stock if you want)
3 tablespoons olive oil
2 -3 tablespoons oregano (fresh or dried)
1 ruby red grapefruit, juice of

Steps:

  • Mix all the ingredients in a plastic bag and allow to marinate for at least 2 hours.
  • To bake: preheat oven to 375, spread wings out on foil lined cookie sheet and bake for 1 hour or until done.
  • To grill: grill on medium high heat for approx 30 minutes or until done.

Juice and some pulp from 1.5 grapefruits, (1 1/4 cups)
2 tbsp minced garlic
1 tbsp honey
1/4 tsp salt
6 full wings (12 split)
2 tbsp coconut oil or ghee
salt and pepper

Steps:

  • Preheat oven to 350 F.
  • Over medium heat melt coconut oil in a frying pan.
  • Carefully place chicken wings in the pan, sprinkle with salt and pepper, fry for aprox 2 minutes each side.
  • Place wings on a baking sheet and pop in the oven.
  • Over medium heat combine grapefruit juice, minced garlic, honey and salt, simmer for 20 min stirring regularly, it will start to reduce making more of a sauce.
  • Brush the sauce on the wings and pop them back in the oven for 5 minutes.
  • Repeat at 5 min intervals until you run out of sauce, the wings should be in oven a total of 45 minutes.

This is a twist on orange chicken and is a favorite of my family. You can use chicken pieces or even a turkey.

1 (3 pound) whole chicken, rinsed and patted dry
1 grapefruit, cut in half
1 tablespoon olive oil
½ teaspoon seasoned salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place chicken into a roasting pan, and squeeze the juice from the grapefruit halves all over and inside the chicken. Drizzle chicken with olive oil, and sprinkle with seasoned salt. Cover with aluminum foil.
  • Bake in the preheated oven, covered, for 45 minutes; remove foil, and bake until meat is no longer pink at the bone and the juices run clear, about 15 more minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

  • In a small bowl, stir together 1½ Tbsp salt, 1 tsp pepper, granulated garlic, marjoram, paprika, and cayenne and stir until combined. In another small bowl, stir together the grapefruit juice and 2 Tbsp of olive oil.
  • Place the chicken, breast side up on a baking sheet and drizzle with 1 Tbsp olive oil. Sprinkle the spice blend on both sides of the chicken and rub it all in well so that the chicken is coated with spices and oil. Cover the chicken and refrigerate for at least 2 hours or up to overnight.
  • When ready to cook the chicken, preheat oven to 350°F. Line a baking sheet with parchment paper and place the chicken on it.
  • In a medium bowl, add the carrots, potatoes, onions and garlic cloves, 1 Tbsp of olive oil, 1 tsp salt, ½ tsp pepper, toss to coat. Distribute them evenly around the chicken on the baking sheet. Fold a juiced ½ grapefruit and stuff into the opening of the chicken.
