GRAPE ROSEMARY FOCACCIA

1/4 cup garlic puree
1/4 cup olive oil
3 cups (1 lb. 2 oz.) California seedless grapes, halved
3/4 cup shredded Parmesan cheese
1 tsp. fresh rosemary, finely chopped
1 lb. 4 oz. ready-to-bake pizza dough

Steps:

  • 1. Saute garlic in olive oil. Add grapes and heat thoroughly. Remove pan from heat; add cheese and rosemary; mix well.
  • 2. Press pizza dough to fit two 12-inch pizza pans. Spread mixture evenly between the two pans.
  • 3. Bake at 400°F 10 minutes or until topping and edges of bread brown. Cut each into 8 pieces.

Yield Makes one 14-inch round focaccia

4 3/4 cups unbleached bread flour, plus more for dusting
3/4 teaspoon active dry yeast (not rapid-rise; from one 1/4-ounce envelope)
2 1/4 cups warm water (about 110 degrees)
1 tablespoon plus 1 1/2 teaspoons kosher salt
1/3 cup plus 1 tablespoon extra-virgin olive oil, plus more as needed
14 ounces seedless red grapes
Flaky sea salt and coarse sanding sugar, for sprinkling

Steps:

  • In the bowl of a mixer fitted with the dough-hook attachment, mix together flour and yeast. Add water and mix on medium speed until combined. Cover bowl with plastic wrap; let rise in a warm place until bubbling and doubled in volume, about 2 hours.
  • Add salt; attach bowl to mixer fitted with the dough-hook attachment and mix on low speed 3 minutes. Increase speed to medium and mix 30 seconds more (dough should be loose and sticky).
  • Using a dough scraper, turn dough out onto a lightly floured surface. Fold bottom edge of dough up toward center of dough and gently pat to deflate. Fold top edge down toward center, slightly overlapping bottom edge; pat gently, tapping off excess flour as you work (dough will be difficult to handle, but try not to incorporate too much flour). Gently transfer dough to a large bowl, seam-side down. Cover with plastic wrap; let rise in a warm place until doubled in volume, about 1 hour.
  • Turn dough out onto a well-floured surface and repeat folding process. Return dough to bowl and cover with plastic wrap; let rise in a warm place until doubled in volume, 1 hour.
  • Preheat oven to 450 degrees (425 degrees if using a convection oven) with rack in center lined with a pizza stone, for at least 45 minutes.
  • Coat a 14-by-3-inch round cake pan with 1/3 cup oil; turn dough out into pan, coating with oil. With oiled fingertips, push dough out toward edges of pan. If dough starts to retract, cover with plastic and let stand 5 minutes, then continue until it reaches edges of pan. In a bowl, toss grapes with remaining 1 tablespoon oil; arrange evenly on top of dough, gently pressing to adhere. Cover with plastic wrap; let stand 45 minutes.
  • Liberally sprinkle dough with flaky salt and sanding sugar. Dough should be well oiled; if necessary, drizzle with up to 2 tablespoons more oil.
  • Bake, rotating pan halfway through, until bottom is golden brown, 25 to 30 minutes. Immediately transfer focaccia to a wire rack. Drizzle with any oil remaining in pan; sprinkle again with more flaky salt and sanding sugar. Let cool slightly. Focaccia may be served warm or at room temperature.

GRAPE AND RICOTTA CROSTATA

1 pie crust (recommended: Pillsbury)
1 1/2 cups grape jam or jelly
1 cup whole-milk ricotta
1/2 cup seedless grapes, sliced in half
1 egg
Powdered sugar, for dusting

Steps:

  • Preheat oven to 375 degrees F.
  • Unroll pie crust and place on parchment-lined baking sheet. Spread grape jam over the pie crust leaving a 1-inch border around the edges. Randomly place tablespoon-sized dollops of ricotta over the grape jam. Fold in the edges of pie crust over the filling.
  • In a small bowl, beat the egg and brush over pie crust. Randomly place the grapes flat side down onto the crust. Bake for 20 minutes until crust is golden and filling is puffed slightly. Remove to a wire rack, cool 10 minutes. When cool, dust with powdered sugar and cut into slices.

RED GRAPE FOCACCIA

1 medium potato
1 to 1 1/2 cups milk
4 cups bread flour
1 tablespoon salt
2 tablespoons olive oil
3/4 ounce fresh yeast
1 bunch seedless red grapes, cut in half if very large
1/4 cup coarse sugar

Steps:

  • On the day or the night before, cut up 1 potato into quarters and boil it with its skin on until fork tender. Chill until ready to use, if making the night before.
  • Warm together the potato and milk.
  • Meanwhile, place the flour, salt, olive oil, and yeast in a mixing bowl with a dough hook making sure the yeast isn't touching the salt. Pour in the warmed milk and potato and mix on low for 6 minutes. Cover the bowl with plastic wrap and let sit 1 hour or until double in bulk.
  • Turn the mixer on to punch down the dough, then turn it out onto a flour work surface. Roll the dough into a flat rectangular sheet. Grease a sheet pan well with olive oil and transfer the dough to that pan. Continue to roll the dough into the corners of the pan to fit it exactly.
  • Prick the dough all over then rub the surface with more olive oil. Dot the surface with grapes in even rows. Cover with plastic wrap and let rise in a warm place until it reaches the top of the sheet pan.
  • Preheat oven to 375 degrees F.
  • Sprinkle with coarse sugar and bake for 25 to 30 minutes until golden brown. Remove from oven and let cool in pan only a few minutes, then slide it out of the pan (steam gets trapped under the dough and can get soggy if you leave it in the pan too long). Cut into rectangular pieces and serve.

1 1/2 cups all-purpose flour, plus for dusting
1 tablespoon ground fennel
1 teaspoon flaky sea salt, crushed
1 stick (8 tablespoons) unsalted butter, cold, cut into cubes
1/4 cup white grape juice, cold
7 ounces almond paste, crumbled
1/3 cup granulated sugar
3/4 teaspoon flaky sea salt, crushed
1 cup strained whole-milk ricotta, at room temperature (drain off excess liquid through a sieve or cheesecloth before measuring)
2 teaspoons lemon zest (1 large lemon)
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 large eggs, at room temperature
2 cups halved seedless green grapes
2 cups halved seedless red grapes
2 tablespoons honey
2 tablespoons turbinado sugar
2 cups red wine, such as a Malbec or Pinot Noir
1 cup granulated sugar
1 tablespoon fennel seed

Steps:

  • For the fennel crust: Add the flour, ground fennel and crushed sea salt to a food processor and pulse to combine. Next add the butter and pulse to pebble-size granules. With the food processor running, slowly stream in the cold grape juice -- stop when the dough comes together, even if you haven't added the full 1/4 cup. Remove the dough from the food processor, form into a disc, and wrap with plastic wrap. Refrigerate for at least 2 hours or overnight.
  • For the grape and ricotta filling: To a stand mixer fitted with the paddle attachment, add the crumbled almond paste, granulated sugar and 1/4 teaspoon of the crushed sea salt. Turn the mixer on low speed and slowly increase the speed to medium-high. Continue to beat the almond paste on high speed for 3 to 4 minutes, until the sugar is completely combined with the almond paste. (The mixture will have softened for the most part, but some of the almond paste will still have the texture of sand.) Add the ricotta, lemon zest, cinnamon, nutmeg and one of the eggs. Beat on medium-high for an additional 3 to 4 minutes, scraping the sides and bottom of the bowl halfway through to ensure the almond paste is completely combined with the ricotta. Set aside at room temperature until ready to use.
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Remove the rested dough from the refrigerator and let it come to room temperature; this can take anywhere from 30 minutes to over an hour.
  • Just before rolling out the dough, combine the green grapes, red grapes, honey and the remaining 1/2 teaspoon crushed sea salt in a bowl. Set aside. (Do not let the mixture sit for any length of time or the grapes will release too much liquid.)
  • On a lightly floured work surface, roll out the dough into a 14-inch round. Roll the crust onto the rolling pin, then unroll it onto the prepared baking sheet; arrange in the center of the baking sheet (the sides will overhang by a couple inches). Using an offset spatula, evenly spread the ricotta frangipane onto the crust, leaving a 2-inch border. Mound the grape mixture (and any honey from the bowl) in the center of the frangipane, leaving at least a 2-inch border of frangipane. Gently fold the sides of the crust toward the center, covering 1 to 2 inches of the grapes. Allow the dough to fold over and land naturally; the galette doesn't have to look perfect, as long as all the sides are folded over to seal the filling inside the dough.
  • Whisk the remaining egg and brush it generously over the crust. Sprinkle the turbinado sugar over the crust and grapes. Bake for 35 to 40 minutes. When done, the crust will be a deep golden brown, the grapes will have browned slightly but still hold their shape, and the frangipane will look set except for a little bubbling in the center. Let cool.
  • For the red wine syrup: In a medium saucepan, combine the red wine, granulated sugar and fennel seed. Bring to a boil and cook until reduced to about 3/4 cup, 15 to 20 minutes. Strain the fennel seeds from the syrup and let cool; the syrup will thicken as it cools. If the syrup becomes too thick, stir in warm water, 1 tablespoon at a time, until it reaches the desired consistency. (Makes 3/4 cup.)
  • To serve: Slice the galette and drizzle with red wine syrup.
