These White Chocolate Chip Granola Blondies are a sweet and healthy dessert bar recipe! They're chewy, soft, and full of white chocolate & your favorite granola.

1/2 cup butter, room temperature
1 1/4 cups brown sugar, packed
2 eggs
2 tsp vanilla
1 1/4 cups all purpose flour
2 tsp baking powder
1 tsp kosher salt
2 1/2 cups granola of your choice
1 cup white chocolate chips

Steps:

  • Preheat oven to 350°
  • Line 9×9 baking pan with foil, allowing foil to hang over the side for easy removal and spray with cooking spray.
  • Cream butter and brown sugar in a mixing bowl for approx 1 min. Add in eggs and vanilla and mix until incorporated, scraping sides as necessary.
  • Turn mixer to low and add in baking powder, salt and flour. Mix until just combined.
  • Stir in granola and white chips.
  • Spread in prepared pan and bake for 25-30 minutes until edges start to golden.
  • Cool on wire rack and cut when cool.

1 large egg, room temperature
1 large egg white, room temperature
1-1/4 cups packed brown sugar
1/4 cup canola oil
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups granola with raisins
1 cup dried cranberries or cherries

Steps:

  • Preheat oven to 350°. In a large bowl, beat egg, egg white, brown sugar and oil until blended. Combine flour, baking powder and salt; gradually stir into sugar mixture just until blended. Stir in granola and cranberries (batter will be thick)., Spread into a greased 9-in. square baking pan. Bake until golden brown and set, 25-30 minutes. Cool in pan on a wire rack. Cut into bars.

1/4 cup vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 cups reduced-fat granola with raisins
1 cup dried cranberries or 1 cup cherries

Steps:

  • In a large mixing bowl, beat the egg, egg white, brown sugar and oil until blended. Combine the flour, baking powder and salt; gradually stir into sugar mixture just until blended. Stir in granola and cranberries (batter will be thick).
  • Spread into a 9-in. square baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until golden brown and set. Cool on a wire rack. Cut into bars.

From EatingWell July/August 1995: "Packed with dried cranberries and low-fat granola, these firm bars are excellent travelers, full of complex carbohydrates, vitamins and trace minerals." I haven't tried these yet, but they're on my list of things to make. We use a granola full of sunflower seeds, pepitas, almonds, flax seed and pecans -- so the additional seeds and nuts would add to the fiber content (well, and the fat too). Exchange one-half whole wheat flour for some of the AP flour for more fiber too. By using Splenda Brown Sugar, you can easily adjust this for a diabetic diet. Enjoy!

1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups packed light brown sugar (or equivalent Splenda Brown Sugar for Baking)
1/4 cup canola oil
3 large egg whites
2 cups low-fat granola with raisins, seeds and nuts
1 cup dried cranberries or 1 cup chopped dried tart cherry

Steps:

  • Preheat oven to 350 degrees F. Coat a 9 x 13 baking dish with cooking spray.
  • Whisk together flour, baking powder and salt in a small bowl. Beat together sugar, oil and egg whites in a large bowl with an electric mixer on high speed until smooth, making sure no lumps of sugar remain.
  • Add the dry ingredients to the wet and beat on low speed just until blended. Stir in the granola and dried fruit - the batter will be quite thick.
  • Transfer the batter to the prepared baking dish; smooth the top. Bake until golden brown on top and the bars feel set when lightly pressed in the center, 20 to 25 minutes. Let cool in the baking dish on a rack.
  • Cut into 20 bars.
