1 lb dried great northern beans
2 tsp salt (can be omitted)
1 medium onion
1/4 lb lean salt pork
1 1/2 c very hot water
1/2 c molasses
1/4 c chili sauce
1 tsp prepared mustard
2 tsp worcestershire sauce
1 bay leaf (optional)

Steps:

  • 1. Sort and wash beans. Place in large pot, cover with water and let soak overnight.
  • 2. Pour off water and replace with fresh. Add salt to beans and bring to a boil. Cover, reduce heat and simmer 45 minutes or until the skin peels back when you blow on one of the beans. Drain.
  • 3. Slice onion into the bottom of a dutch oven. Pour drained beans over onion in dutch oven. Cut salt pork into 1/2 inch chunks and bury in the beans. Stir the molasses, chili sauce, mustard, and worcestershire sauce into the hot water and pour over beans. (Add bay leaf if using. Remove before serving.)
  • 4. Bake, uncovered, for 6 hours in a 300-degree oven. Do not let beans go dry. Add water as necessary.

1 pound dried navy beans
1-1/2 teaspoons salt
4 quarts cold water, divided
1 cup chopped red onion
1/2 cup molasses
6 bacon strips, cooked and crumbled
1/4 cup packed brown sugar
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.

Grandma Smith makes the best baked beans ever. She is not good about sharing her recipes, however. She gave me these ingredients but no proportions. So here is my best guess.

56 ounces pork and beans (van camp's)
1/2 cup brown sugar
1/3 cup ketchup
1/2 lb bacon

Steps:

  • Mix the beans, brown sugar and ketchup in a baking dish.
  • Pull the bacon apart and place on top of the beans.
  • Bake at 350 degrees until bacon is done and beans are bubbly. About 1 hour.

1 lb navy beans
2 large ham hock, smoked
1 large onion
1 c ketcup
3 Tbsp yellow mustard
1 c light brown sugar
1/2 c molasses
salt and pepper

Steps:

  • 1. Night before go threw beans and soak over night.
  • 2. In a large pot boil ham hocks and beans and onion use enough water to just cover hocks.
  • 3. After coming to boil turn down and simmer for 1 hour. Remove from heat.
  • 4. Take hock out , remove meat from hocks and cut in small pieces.
  • 5. Drain beans and onion saving about 1 1/2 cups of broth.
  • 6. Put ham , beans, and onion in large casserole dish.
  • 7. Mix together rest of ingredience add to beans, ham, and onion.
  • 8. Add saved broth a little at a time stirring well.
  • 9. Bake in 350 degree oven for 2 1/2 hours.

MAMAW'S OLD-FASHIONED BAKED BEANS

This recipe was my grandmother Lillian Smith's. These are always served at Thanksgiving and Christmas.

2 c great northern beans
1 c bean liquid
2 Tbsp brown sugar
1/4 c ketchup
1 tsp dry mustard
1 small onion, finely chopped
1 1/2 tsp salt
2 thick slice bacon
5 c water
1/4 c molasses

Steps:

  • 1. Wash and sort beans to remove stones. Place in slow cooker.
  • 2. Add water, salt, onion and bacon. Cook on high overnight (8 to 10 hours).
  • 3. Drain the beans reserving 1 cup of the liquid. Add remaining ingredients and mix well.
  • 4. Cover and cook on high for 1-2 hours.

8 slices crisply cooked bacon, crumbled

  • Bring 10 cups water and navy beans to a boil in a large pot; cook at a boil for 2 minutes. Stir bacon, onion, brown sugar, molasses, and salt into the water.
  • Carefully pour the mixture into a slow cooker.
  • Cook on High, stirring occasionally, for 4 hours.
  • Stir 3 cups water into the mixture. Continue cooking until beans are tender, about 2 hours 15 minutes more.

This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead.

1 -1 1/2 lb navy beans (2 1/2 to 3 cups measure)
bay leaf
2 garlic cloves
1/4 cup molasses
1/4 cup maple syrup
3/4 cup ketchup
1 medium onion, diced
2 teaspoons salt
2 teaspoons vinegar
1 1/2 teaspoons dry mustard (Keen's brand is what I use)
2 -3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
4 slices bacon (optional)
reserved bean liquid

Steps:

  • Cover beans with water and soak overnight.
  • Rinse beans then bring to a boil in approximately 1 quart of water, bay leaf and garlic - simmer for 30 minutes.
  • Turn off heat and let beans stand for approximately 1 1/2 hours until soft. Drain and reserve the bean liquid. Discard bay leaf and garlic.
  • Mix together remaining ingredients (excluding beans and bacon).
  • Add beans to bean pot (or any covered dish).
  • Stir in molasses mixture to beans. Top off with some of the reserved bean liquid.
  • Arrange bacon on top.
  • Cover and bake at 300 degrees for 7 hours. For the final hour of cooking, remove cover to let bean brown up nicely.
  • Note: check occasionally and keep beans covered with reserved bean liquid during cooking.

This is a recipe from Thompson beans, that is the old-time recipe for baked beans, before slow-cookers, and microwaves. They are so delicious, and the hit of Saturday night, you have to add fresh brown bread with raisins - I do use the breadmaker for this one - lol

2 cups thompsons white pea beans
5 cups cold water
1 medium onion, sliced
1 1/2 teaspoons salt
2 teaspoons cider vinegar
1 tablespoon brown sugar
1/2 teaspoon prepared mustard
1/4 cup crosby molasses
1/4 cup ketchup
1 pinch black pepper
1/4 lb pork, bellies or 1/4 lb lean pork

Steps:

  • sort and rinse beans. Soak beans overnight in cold water. Drain. Add 5 cups cold water, cover, heat to boiling, then simmer 30 minutes or until nearlu tender. Drain.
  • Place onion slices on bottom of 6-cup flameproof bean crock.
  • Mix together salt, vinegar, brown sugar, mustard, molasses, ketchup and pepper. Mix well. Add beans to mixture, and stir together. Pour this mixture over onions.
  • Add enough water to cover mixture, then place sliced pork on top. Cover with lid and bake in oven at 250F for 7 hours.
  • When beans are tender, remove 1 cup beans, mash, then stir back in pot carefully. Cover and continue to bake.
  • Add water as needed to keep beans covered.
  • One hour before serving, salt to taste.
