Steps:
- Set a rack in the center of the oven and preheat to 400°F.
- In a large bowl, whisk together the all purpose flour, whole wheat flour, baking powder and salt. Set aside.
- In a medium bowl, whisk together the maple syrup and melted butter. Whisk in the milk, followed by the egg and egg yolk. Add to the dry ingredients and whisk until just smooth. Stir in the walnuts, if using. Let the batter rest for 5 minutes.
- Meanwhile, grease the muffin pan generously with softened butter (see my note about the muffin pan below).
- Spoon the batter evenly into the prepared pan. The cups will be almost full. Bake for 10 minutes, then reduce the temperature to 375°F and bake for about 15 minutes more, or until the muffins are golden and a cake tester inserted into the center of a muffin comes out clean.
- Cool in the pan for 5 minutes, then remove muffins from the pan. Serve warm with butter, or place on a rack to cool.
- Note: My only quibble with this recipe is that the muffins tend to stick to the pan. I found that letting them cool for only 5 minutes (instead of the recommended 10) helped them release more easily. If they stick, take a butter knife or offset spatula and run it around the edges; and instead of pulling the muffins out of the pan, turn the pan over and knock it gently on the counter until the muffins drop out. Or, use paper liners and call it a day (but still butter the top of the pan!). I also found that the recipe is perfect for 12 muffin cups without the nuts; when you add the nuts, the muffins run into each other a bit, making them difficult to remove. So, if you're adding the nuts, you might want to bake the muffins in two pans, filling 6 cups in one pan and 7 in the other, for a total of 13 muffins.
- Freezer-Friendly Instructions: The muffins can be frozen in an airtight container or sealable plastic bag for up to 3 months. Thaw for 3 - 4 hours on the countertop before serving. To reheat, wrap individual muffins in aluminum foil and place in a preheated 350°F oven until warm.

GRANNIE STYLES' MAPLE BACON PRALINE MUFFINS
I Love BACON! I searched all over the internet for a yummy BACON muffin and nothing caught my eye. So I came up with this. Bacon and Maple flavored muffin, topped with a Praline & BACON crumb topping with a dallop of Bacon frosting. Taste close to Pancakes and bacon with lots of syrup.

Steps:
- 1. Preheat oven to 385 degrees Line cupcake pan with liners (this makes about 15 muffins) Prepare BACON and Topping First..... BACON- Take 5 slices of the BACON and cut in half cook thoroughly set aside to cool on a piece of paper towel. (I like my full slices of BACON baked, cooks more evenly which I bake in oven at 425 degrees on a wire rack placed on a cookie sheet lined with foil. Bake for about 10 min. flip and finish cooking for 10 min.) Cut up rest of BACON in cubes *I use scissors and take about 3-4 slices at a time and chop them into the pan. Cook until crisp (not undercooked or burnt). Set aside. When cooled crumble the pieces up. Topping- Mix Cornstarch, Flour, Sugar, Cinnamon, Pecan chips, then add melted Butter. Then add 2 tablespoons of the Bacon crumble pieces into the mixture. Set aside.
- 2. Batter- Mix Flour, Baking Powder, Salt and Sugar. In separate bowl beat 1 Egg, then add Milk, Vanilla, Maple Syrup, Applesauce. Stir the wet ingredients into the Flour mixture (do not beat, batter will be lumpy). Then fold about 4 tablespoons of crumb mixture and All of the BACON crumbles into batter. Spoon into liners filling about 3/4 of the cup. Add crumb topping mixture to top of each one, about 2 tbl each, I did not waste this some had a little bit more. Bake until golden brown about 20-25 min each insert toothpick in center and when it comes out clean, its done. Cool or like me could not wait I grabbed one and cut open and put a slab of Butter and OMGGGOOODNESS!!! While the Muffin goodness is cooking make frosting
- 3. Frosting- Mix Powdered Sugar, Butter, and warm bacon grease. This should be a thick frosting consistency. Put a dallop (I put in a baggie cut of tip) on each Muffin and top with pieces of the whole BACON pieces I had you reserve earlier. And you guessed it DEVOUR THE BACON GOODNESS!

MAPLE PRALINE BACON
I recently took a weekend trip, and I experienced one of the best meals of my life at a fine little establishment that specializes in Southern cuisine. One of the things that made this meal so memorable was the praline bacon that I had, so I took it upon myself to recreate it. The only difference is that I like mine better.

Steps:
- Preheat oven to 350 degrees F (135 degrees C). Line a baking sheet with parchment paper.
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels.
- Spread the pecans onto an unlined baking sheet, and toast 7 to 10 minutes in the preheated oven, until golden brown and aromatic. Watch the nuts carefully as they bake, because they burn quickly. Set aside to cool.
- Stir the maple syrup, butter, brown sugar, and white sugar together in a large skillet over medium-high heat and cook, stirring constantly, until the hot candy resembles foamy caramel and a candy thermometer reads 270 degrees F (130 degrees C) (soft crack stage). Quickly stir in the pecans.
- Toss the bacon in the candy mixture to coat each strip, and remove with tongs to cool and harden on the prepared baking sheet. Last but not least... eat up!

MAPLE BACON MUFFINS
A great grab'n'go breakfast muffin recipe born from the happy accident of getting maple syrup on your bacon after piling your brunch plate a little too full! (And yes, I'm speaking from experience!!) I often add more bacon than the recipe calls for and you can use whatever pancake syrup you like or have on hand.

MAPLE PRALINES
This recipe rekindles memories of my grandfather and his love for making maple syrup. When I was in college, my mother would send me a package of her pralines during sugaring season. They were so popular with my friends, I barely managed to tuck away a few for myself.
