These chewy-crunchy, salty-sweet breakfast balls are great for eating on the go because they don't crumble and leave a mess. They take minutes to blend and a few more to roll, but if you make them a friends-and-family cooking project, the process can go even faster. Feel free to experiment here. You can swap out the almonds for cashews, the cherries for other dried fruits, and the sunflower seeds for shelled pumpkin seeds. Just keep the dates and make sure they're Medjool, which are softer and more thin-skinned than other varieties. The dates are the glue that hold the other ingredients together.

1 1/2 packed cup/205 grams pitted, stemmed Medjool dates
1 cup/140 grams roasted, salted almonds
1/4 cup/60 milliliters maple syrup
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
1/2 cup/75 grams dried cherries
1/2 cup/45 grams old-fashioned oats
1/2 cup/70 grams raw shelled sunflower seeds
1/3 cup/35 grams unsweetened finely shredded coconut

Steps:

  • Line a work surface or baking sheet with parchment or wax paper.
  • Pulse dates, almonds, maple syrup, vanilla and salt in a food processor until the mixture forms big sticky clumps. You want chunks of nuts left. Pulse in cherries, oats and sunflower seeds, scraping the bowl occasionally, until the mixture forms a shaggy mass around the blade.
  • Put the coconut in a shallow dish. Use a 1-ounce (1 1/2-tablespoon) cookie scoop or a heaping tablespoon to scoop the mixture into about 24 mounds and place on the parchment paper. Roll the scoops into balls.
  • Roll each ball in the coconut to coat completely, then transfer to an airtight container. Sprinkle any leftover coconut over the balls. Refrigerate until ready to eat.

My grandmother and I created this homemade granola recipe one day, and it is currently loved and requested by the rest of my family, including my other grandma who used to be anti-granola! My favorite ways to serve it are in coconut Greek yogurt or just in a bowl with milk. Simple and awesome.

nonstick cooking spray
4 cups old-fashioned oats
1 ½ cups chopped pecans
1 ½ cups slivered almonds
1 cup coconut flakes
½ cup vegetable oil
⅓ cup packed brown sugar
⅓ cup honey
¼ cup maple syrup
2 teaspoons ground cinnamon
2 teaspoons vanilla extract
¾ teaspoon salt
2 cups dried cranberries

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
  • Mix oats, pecans, almonds, and coconut flakes together in a large bowl. Set aside.
  • Combine vegetable oil, brown sugar, honey, maple syrup, cinnamon, vanilla extract, and salt in a medium saucepan over medium heat. Stir gently until it begins to boil; remove from heat. Pour over oat mixture and fold together until dry ingredients are well coated. Spread granola onto the prepared baking sheet.
  • Bake in the preheated oven for 20 minutes. Stir and continue to bake on the top rack until golden, about 5 minutes more.
  • Remove from the oven and let cool, 20 to 30 minutes. Toss with cranberries. Store in an airtight container.

This is a quick, no-bake granola bar recipe that works perfectly for picky eaters. Our family likes to roll the granola into bite-size spheres that mimic the "Granola Bites" from the grocery store.

1 1/4 cups crispy rice cereal (the kind that goes "snap, crackle, pop")
1 cup quick-cooking oats
1/4 cup raisins
1/4 cup brown sugar
1/8 cup corn syrup
1/8 cup honey
1/4 cup peanut butter (crunchy or smooth)
1/2 teaspoon vanilla extract

Steps:

  • Mix the cereal, oats, and raisins in a mixing bowl and set aside.
  • In a small pot on the stove, stir together the brown sugar, corn syrup, and honey over medium to medium-high heat and bring to a rolling boil.
  • Continue to boil for 1 minute, stirring constantly.
  • Remove from heat and blend in the peanut butter and vanilla.
  • Pour over the cereal/oat/raisin mixture and combine.
  • At this point, you can roll into 1/2 inch spheres to make granola bites, or press into a small square or rectangular dish to form bars.
  • Store tightly covered.
