I found this recipe on the Food Network website on Throwdown with Bobby Flay. It is from Maroni Cuisine in Northport, New York. I saw the episode and was inspired to make the meatballs. Boy am I glad I did. They are so good! (Hopefully I have done it correctly, but it tastes good too with my measurements!)

1 lb ground chuck
1/2 cup fresh breadcrumbs (4 ounces) or 1/2 cup dried breadcrumbs (4 ounces)
4 large eggs
1/2 cup whole milk
3/4 cup grated romano cheese (6 ounces)
1/3 cup grated Spanish onion (3 ounces)
1/4 cup finely diced fresh garlic (2 ounces)
1/4 cup finely chopped fresh Italian parsley (2 ounces)
1/4 cup finely chopped fresh basil leaf (2 ounces)
6 ounces olive oil, not extra-virgin
12 garlic cloves, finely sliced
2 medium Spanish onions, finely diced
2 (28 ounce) cans imported crushed tomatoes
1 teaspoon salt
1/2 teaspoon white pepper or 1/2 teaspoon black pepper
julienned fresh basil leaf (a large handful)

Steps:

  • For the meatballs:.
  • Preheat oven to 350°F Spray a baking sheet with olive oil cooking spray.
  • Mix chuck, bread crumbs, eggs, milk, Romano, onion, garlic, parsley and basil thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
  • Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes.
  • To make the sauce:.
  • In a medium saucepan over medium heat, add oil. Once heated add the finely sliced garlic and onions to the pan. Cook over medium heat until soft and slightly brown. Next add the canned crushed tomatoes, salt and pepper and stir. Allow the sauce to come to a simmer and cook for 20 minutes. Remove from the heat and add the julienned basil.
  • Simmer meatballs in sauce for about 10 minutes, and then serve over al dente pasta. YUM!

These meatballs were a family Christmas Eve tradition for many years. We always spent Christmas Eve at Grandma Carr's house and she served these with homemade yeast rolls.

1 1/2 lb ground beef
1/2 c uncooked rice
1 tsp salt
1/2 tsp pepper
1/4 c finely chopped onion
1 can(s) tomato soup
1 Tbsp sugar
1/2 of a soup can of water

Steps:

  • 1. Combine meat, rice, salt, pepper, and onion. Shape into meatballs. Heat soup, water, and sugar in skillet. Drop in meatballs and cover. Cook at a simmer for 30-35 minutes.
  • 2. Serve with rice or potatoes and fresh yeast rolls.

This was my huband's grandfather's recipe. It is always a big hit when I make this or share the recipe. Very easy to make just slow cooks all day. Please don't the long list scare you this is very easy and well worth the wait. I am posting the original recipe.

1/2 lb lean ground beef
1/2 lb reg. ground beef
1/2 cup milk
1/4 cup grated parmesan cheese
1/2 cup breadcrumbs
salt and pepper
1 small onion, minced
2 garlic cloves, minced
1/4 teaspoon dried basil
1/2 teaspoon dried parsley
1/4 teaspoon dried oregano
1/2 cup olive oil
1 garlic clove, pressed
1 lb ground beef (browned and crumbled)
2 cups Italian tomatoes (I use whole)
1/2 cup italian tomato paste
1/2 cup water
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 bay leaf

Steps:

  • To prepare sauce, heat olive oil; add in garlic and brown the ground beef.
  • Once beef is cooked through add all additional ingredients for the sauce.
  • Simmer on low heat for at least one hour before adding meatballs.
  • to prepare meatballs: Just mix all ingredients in large bowl until well blended.
  • Shape into golf ball sized balls, you can stick them in the fridge until ready to add to the sauce.
  • Once the sauce has simmered for atleast one hour drop the meatballs in carefully. They must simmer in the sauce (over low heat) for atleast 3 hours. This makes a wonderful tasting sauce.
  • Serve over your favorite spaghetti noodle.

My husband would eat this for dinner every night if I would let him. It took his family 10 years of marriage to share this secret recipe with me (apparently, I wasn't family yet), so now I'm sharing it with the world. Hope you like it!

2 pounds ground beef
¾ cup rolled oats
6 tablespoons chopped sweet onion (such as a Walla Walla)
1 cup milk
1 ½ teaspoons salt
½ teaspoon ground black pepper
1 ½ cups ketchup
3 tablespoons Worcestershire sauce
3 tablespoons white sugar
4 ½ tablespoons chopped sweet onion (such as a Walla Walla)
4 ½ tablespoons apple cider vinegar
¾ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Mix together the ground beef, rolled oats, 6 tablespoons of sweet onion, milk, salt, and black pepper until thoroughly combined. Roll the mixture into 2-inch meatballs, and place meatballs into the prepared baking dish.
  • In a bowl, mix the ketchup, Worcestershire sauce, sugar, 4 1/2 tablespoons of sweet onion, apple cider vinegar, and water until the sugar has dissolved, and pour the sauce evenly over the meatballs.
  • Bake the meatballs and sauce in the preheated oven until the sauce is bubbling and thickened and the meatballs are no longer pink inside, about 1 1/2 hours. An instant-read thermometer inserted into the center of a meatball should read at least 160 degrees F (70 degrees C).

Olive oil or nonstick cooking spray
1 pound ground beef chuck
1 1/2 cups finely grated Pecorino Romano cheese
1 1/2 cups fresh breadcrumbs
3 large eggs
1/4 cup milk
1/2 cup minced fresh flat-leaf parsley
1/4 cup chopped fresh basil
1/2 small onion, grated
3 tablespoons minced garlic
Coarse salt
1 pound spaghetti
Maroni's Tomato Sauce
1/2 cup fresh basil leaves, julienned
Freshly grated Pecorino Romano cheese, for serving

Steps:

  • Preheat oven to 350 degrees. Lightly coat a baking sheet with olive oil or nonstick cooking spray; set aside.
  • In a large bowl, mix together beef, cheese, 1 cup breadcrumbs, eggs, milk, herbs, onion, and garlic; season with salt. If mixture seems too loose, mix in remaining 1/2 cup breadcrumbs as necessary.
  • Roll meat mixture into 2 1/2-ounce balls; transfer to prepared baking sheet. Transfer to oven and bake until beef is cooked through and lightly browned, 25 to 30 minutes.
  • Meanwhile, bring a large pot of water to a boil over high heat. Generously salt water and return to a boil. Add spaghetti and cook until al dente, according to package directions; Drain.
  • Heat sauce in a medium saucepan over medium heat. Transfer meatballs to sauce and cook for at least 15 minutes. Transfer meat balls and 1 cup of sauce to a bowl and set aside. Remove remaining sauce from heat. Stir in basil and add drained spaghetti; toss to combine. Transfer spaghetti to a large serving platter; top with meatballs and reserved sauce. Serve immediately, sprinkled with cheese.

1 medium onion, chopped
3 garlic cloves, minced
3/4 cup seasoned bread crumbs
