Grandmother's Old Fashioned Gingerbread Cake recipe brings back lots of memories, especially of Christmas. The cake is easy to prepare and great plain, or topped with whipped topping, apple butter, or applesauce.

Number Of Ingredients 8

1/4 cup Wesson Oil
1/4 cup Sugar
1/2 cup Grandma's Molasses
1-1/2 cup Self-Rising Flour
1/2 cup Milk
1 Egg
1/2 teaspoon Cinnamon
1/2 teaspoon Ginger

Steps:

  • Place Wesson Oil in a medium sized mixing bowl.
  • Add sugar.
  • Cream oil and sugar together with mixer
  • Add molasses. Mix together.
  • Add flour. Mix together.
  • Add milk. Mix together.
  • Beat egg and add to mixture.
  • Add cinnamon.
  • Add ginger.
  • Mix until well combined.
  • Grease and flour a 9-inch square baking pan.
  • Pour batter into pan. Spread out evenly.
  • Bake at 350F degrees for 35-45 minutes until done.
  • Remove from oven when done. Place on wire rack, cool 15 minutes.
  • Turn out of pan and continue to cool on wire rack.
  • Enjoy

OLD FASHIONED GINGERBREAD CAKE

This is the easiest gingerbread cake you'll ever make and the best tasting too. The texture is excellent. A family favourite.

Number Of Ingredients 15

2 cups flour
1 ½ teaspoon baking soda
½ teaspoon salt
½ cup sugar
1 teaspoon ginger
1 teaspoon cinnamon
½ cup soft butter
¾ cup Crosby's Fancy Molasses
1 egg
1 cup boiling water
1/2 cup butter
1/2 cup lightly packed brown sugar
3 Tbsp. Crosby's Fancy Molasses
1 cup plus 3 Tbsp. 35% cream (whipping cream)
1 tsp. pure vanilla

Steps:

  • Preheat oven to 350 F
  • Grease and flour an 8"x 8" square pan (or line the pan with parchment paper.) *
  • Sift together dry ingredients in a large bowl.
  • Add the butter, molasses and egg and beat for two minutes or 300 strokes by hand. (This is a very old recipe...)
  • Add the boiling water.
  • Beat for another two minutes and turn into prepared pan.
  • Bake 50-55 minutes, or until cake springs back when lightly touched.

GRANDMOTHER'S SOFT GINGERBREAD CAKE

Of all the sublime dishes that chef Nancy Oakes prepared during the 1997 Workshop, it is her warm gingerbread cake that has entrenched itself at Cakebread Cellars. The San Francisco chef says that the basic recipe is her grandmother's, although Chef Oakes sometimes dresses it up with a ginger syrup. Brian serves it often in the fall, sometimes with a scoop of honey ice cream or just a dollop of softly whipped cream. As dark as milk chocolate, this fabulous cake is moist, spicy, and not overly sweet. Don't worry if it sinks a bit in the center as it cools. Once it is cut, no one will notice.

Number Of Ingredients 15

2 cups unbleached all-purpose flour
2 teaspoons baking soda
1 1/4 teaspoons kosher salt
1 teaspoon ground cloves
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 cup sugar
1 cup dark molasses
1 cup vegetable oil
3 large eggs
1 cup boiling water
1 cup heavy cream
2 teaspoons sugar
1/2 teaspoon vanilla extract
Freshly grated nutmeg for garnish (optional)

Steps:

  • Preheat the oven to 350°F. Butter and lightly flour a 9-inch-round springform baking pan.
  • In a bowl, whisk together the flour, soda, salt, cloves, ginger, and cinnamon.
  • In a mixing bowl with electric beaters or by hand with a whisk, beat together the sugar, molasses, oil, and eggs until well blended and smooth, 1 to 2 minutes. Add the dry ingredients and mix just until blended, scraping the bowl once or twice. Add the boiling water and beat just until smooth. Don't overmix or the cake will be tough. The batter will be thin.
  • Pour the batter into the prepared pan and place on a baking sheet to catch any drips. Bake in the center of the oven until a toothpick inserted in the center comes out clean, 50 to 55 minutes. Let cool on a rack for at least 15 minutes before removing the pan sides.
  • For the whipped cream In a mixing bowl with electric beaters or by hand with a whisk, whip together the cream, sugar, and vanilla to soft peaks.
  • To serve, cut the cake into 12 to 16 wedges. Transfer to dessert plates and put a dollop of whipped cream and a few sprinkles of nutmeg on top.

9 tablespoons butter, softened
1/3 cup sugar
1 cup molasses
1 large egg, room temperature
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon salt
3/4 cup water
CARAMEL SAUCE:
1 cup packed brown sugar
1 tablespoon cornstarch
1 cup cold water
1/4 cup butter, cubed
1 teaspoon vanilla extract
Whipped cream, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in molasses and egg until well blended. In another bowl, whisk together the flour, baking soda, ginger, cinnamon and salt; add to creamed mixture alternately with water., Transfer to a greased 9-in. square baking pan. Bake at 325° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack., For caramel sauce, in a small saucepan, combine brown sugar and cornstarch. Stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter and vanilla until smooth. Serve with warm cake. Top with whipped cream if desired.

½ cup white sugar
½ cup butter
1 egg
1 cup molasses
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda

1 cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square pan.
  • In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses.
  • In a bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
  • Bake 1 hour in the preheated oven, until a knife inserted in the center comes out clean. Allow to cool in pan before serving.
