GRANDMA MERTZ'S INSPIRED COUNTRY-STYLE SPARE RIBS

Grandma Mertz's Inspired Country-Style Spare Ribs image

Both of my grandmas were wonderful cooks, albeit with totally different styles & dishes. How lucky was I to grow up with them both! The smell of these spare ribs baking in the oven make me feel as if I'm back in my Grandma Mertz's kitchen. I've never had any I like even close as much as these -- they will fall apart & melt in...

Provided by Michelle Koletar/Mertz

Categories     Ribs

Time 3h50m

Number Of Ingredients 10

1 large onion, diced
3 stalks celery, diced
1 c water
1 c ketchup
2 Tbsp brown sugar
2 Tbsp vinegar
1/2 c lemon juice, fresh
1 Tbsp worcestershire sauce
1/4 tsp dry mustard
8-10 country style spare ribs

Steps:

  • 1. Heat oven to 275 degrees. Salt (lightly) & pepper spare ribs w/ some water for about 30/45 mins to get rid of some of the fat. Put spare ribs in a different baking pan or get rid of all water & grease & use same one.
  • 2. Meanwhile, cook all other ingredients in a pan on stove & bring to boil. Reduce to simmer.
  • 3. Pour the bbq mixture over the spareribs. Bake for about 3 hours, turning over once. You will note the meat becomes extremely tender & the tops will begin to get a bit brown. Keep basting the sauce over to ensure they stay nice & moist. That's it! I love to serve w/ sweet potato casserole & baked corn or a baked potato & then I put the yummy sauce on the potato 2. :) Enjoy!

Time 2h45m

Yield 8

Number Of Ingredients 16

¼ cup olive oil, divided
1 pound pork ribs, chopped
6 (3.5 ounce) links Italian sausages
1 large white onion, finely chopped
1 ½ teaspoons salt, divided
4 cloves garlic, minced
¼ cup red wine, divided
2 tablespoons tomato paste
1 ½ teaspoons dried oregano
½ teaspoon red pepper flakes
1 cup water
2 (28 ounce) cans whole peeled tomatoes in juice
1 teaspoon dried basil
1 teaspoon ground black pepper
1 pinch white sugar
¼ cup chopped fresh basil

Steps:

  • Heat 2 tablespoons oil in a pot and cook pork ribs until browned, about 5 minutes. Transfer to a plate. Cook sausages until browned, about 5 minutes. Transfer to the same plate as the ribs.
  • Drain off some of the excess fat. Reduce heat to medium-low and pour in remaining olive oil. Add onion and 1/2 teaspoon salt; cook and stir until translucent, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute; make sure not to burn. Pour in 1/2 of the red wine and scrape up any browned bits off the bottom of the pan.
  • Add tomato paste, oregano, and red pepper flakes. Stir until paste starts to darken, about 2 minutes. Stir in remaining red wine and water.
  • Add tomatoes and their juices, crushing by hand as you add them to the pot. Season with basil, remaining salt, and pepper. Bring to a boil; reduce heat to a low simmer. Taste and add sugar if sauce is too acidic.
  • Return ribs to the pot. Simmer, partially covered, adding more liquid if needed, for at least 2 hours. Add sausages back to the pot for the last 45 minutes of cooking. Add fresh basil during the last 15 minutes of cooking. Discard bones before serving.

SIZZLING SPARE RIBS WITH BBQ SAUCE

Sizzling spare ribs with BBQ sauce image

Some like it hot, so sizzle your ribs with BBQ sauce

Provided by Good Food team

Categories     Lunch, Main course

Time 35m

Number Of Ingredients 10

4 x 500g packs pork spare ribs
1 bunch of spring onions , roughly chopped (green stems and all)
1 Scotch bonnet chilli , seeded and finely chopped
4 garlic cloves , roughly chopped
6 tbsp Appleton rum
6 tbsp demerara sugar
6 tbsp dark soy sauce
6 tbsp clear honey
6 tsp Dijon mustard
1 tsp ground allspice

Steps:

  • Tip the ribs into a big bowl (not a metal one) and throw in the spring onions, chilli and garlic. Now spoon all the remaining ingredients over the ribs and sprinkle with salt and pepper. Get your hands in the bowl and turn the ribs over and over again until they're coated in the sauce. (You can keep the ribs uncooked - tightly covered - in the fridge for up to 3 days. You can also freeze them for several months.)
  • Cook the ribs over a moderate barbecue for 20-30 minutes depending on their size, turning them over frequently and brushing with sauce each time. The turning and brushing is important, so that all four sides of each rib get encrusted with the sauce, which builds up like a lacquer. If you have any leftover sauce at the end, heat it up in a pan and pour it over the ribs just before serving.
