Rhubarb is defined as 'the nectar of the gods,' well at least for our family. Long winters are tamed by beautiful springs, and there's no better or more welcome gift from Mother Nature than rhubarb. This is a family favorite and I hope you enjoy it as much as we do.

4 cups sliced rhubarb
1 ⅓ cups white sugar
⅔ cup all-purpose flour
1 cup all-purpose flour
½ cup butter, softened
½ cup firmly packed brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
  • Stir rhubarb, white sugar, and 2/3 flour together in a bowl; pour into prepared baking dish.
  • Mix 1 cup flour, butter, and brown sugar together in a bowl until mixture is crumbly; sprinkle over rhubarb mixture.
  • Bake in the preheated oven until golden brown and bubbling, about 1 hour.

Number Of Ingredients 9

2 cups finely chopped fresh or frozen rhubarb
2 cups finely chopped onion
2-1/2 cups packed brown sugar
1 cup vinegar
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon pepper

Steps:

  • In a saucepan, combine all ingredients. Cook over medium heat for 30 minutes or until thickened, stirring occasionally. Cool; store in the refrigerator.

Our family favorite on cold beef or pork. Grandma used to make jars and jars of it every year. I am posting her recipe as she wrote it out. I make mine in my slow cooker now. Grandma never put a cooking time in her instructions but it is a time consuming recipe but well worth the effort.

1 quart rhubarb
1 quart onion
3 cups brown sugar
1 pint vinegar
1 teaspoon cinnamon
1 teaspoon clove
1 teaspoon allspice
1 teaspoon salt
3/4 teaspoon pepper

Steps:

  • Chop rhubarb and onions in small pieces.
  • Add sugar, vinegar and spices.
  • Boil till tender over medium heat.
  • Stirring every few minutes so it doesn't stick to bottom of pot.
  • Seal hot in sterilized jars and process for 15 minutes in a canner. Label jars.
  • Cooking time is a guesstimate. Cook until rhubarb and onions are very soft.

2 cups all-purpose flour, plus additional flour as needed, up to 1/4 cup
1/2 cup cake flour (recommended: Soft As Silk)
3 teaspoons sifted powdered sugar
1/2 cup butter-flavored shortening (recommended: Crisco)
1/4 cup salted butter
Pinch salt
1 egg
2 teaspoons vinegar
1/4 cup ice cold water
2 1/2 cups chopped red rhubarb, fresh
2 1/2 cups de-stemmed, washed and cut strawberries (in larger pieces)
1 1/2 cups sugar (1 1/4 cups for high altitude)
2 tablespoons minute tapioca
1 tablespoon all-purpose flour
1/2 teaspoon lemon zest
1/2 teaspoon lemon juice
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 tablespoons butter, cubed small
1 egg white beaten with 1 teaspoon water
Large granule sugar

Steps:

  • Crust Preparation:
  • Using 2 pastry blenders, blend the flours, sugar, shortening, butter and salt. Whisk the egg, vinegar and water in a 2-cup measure and pour over the dry ingredients incorporating all the liquid without overworking the dough. Toss the additional flour over the ball of dough and chill if possible. Divide the dough into 2 disks. Roll out 1 piece of dough to make a bottom crust. Place into a pie dish. Put dish in refrigerator to chill.
  • Preheat oven to 425 degrees F.
  • Filling Preparation:
  • Mix the rhubarb, strawberries, sugar, tapioca, flour, zest and juice of lemon, dash of cinnamon, and vanilla. Mix well in a large bowl and pour out into chilled crust. Dot the top of the filling with the butter. Brush edges of pie crust with egg white wash. Roll out the other piece of dough and place over filling. Crimp to seal edges. Brush with egg white wash and garnish with large granule sugar. Collar with foil and bake at 425 degrees F for 15 minutes. Decrease temperature to 375 degrees F and bake for an additional 45 to 50 minutes, or until the filling starts bubbling. Higher altitude will take 450 degrees F and 400 degrees F respectively. Also, you can use a pie bird for extra decor. Let cool before serving.

Grandmas always have a hard time giving a recipe away because its a little bit of this and a handful of that, but I was able to get this out of MY Grandma! If you like it sweeter, use 1 cup of sugar. I like it tart so I use 3/4 cup sugar. Frozen rhubarb works fine.

1 lemon, juice of

  • Cover and cook rhubarb in water over low heat until tender (about 15 minutes).
  • Cut candy orange slices (gumdrop type) into rhubarb.
  • add lemon and cook slowly--stirring frequently--till thick.

1 cup brown sugar
¾ cup rolled oats
½ cup melted butter
2 eggs
⅓ cup milk
2 cups diced rhubarb
2 cups diced strawberries
1 cup white sugar

½ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir 1 cup flour, brown sugar, oats, and melted butter together in a bowl. Press 1/2 to 3/4 of the mixture into the bottom of a 9-inch square baking dish.
  • Beat eggs and milk together in a large bowl until smooth. Stir rhubarb, strawberries, white sugar, 1/4 cup flour, and allspice into the egg mixture until the flour and sugar dissolve completely; pour over the crust. Sprinkle remaining crust mixture over the top of the fruit layer.

This is scrumptious. It is my Grandma Florence's, and she called it "Hamburger Relish". Simple and easy, I can it in pints and give it for Christmas. I've never found any as good.

4 quarts ground cucumbers
1 quart ground onion
4 cups ice cubes
5 tablespoons sea salt
6 cups vinegar
6 cups sugar
2 teaspoons turmeric
1 1/2 teaspoons celery seeds
3/4 teaspoon ground cloves
2 tablespoons mustard seeds

Steps:

  • Combine cukes, onions, ice and salt.
  • Let stand for 2 hours,.
  • then drain.
  • Mix the next 6 ingredients in a large pot.
  • Bring to a boil, add ground cuke mixture, and cook for 20 minutes, or until it begins to thicken.
  • While still hot, seal in sterilized jars.
  • As far as preparation time, I use Grandma's old hand grinder, so I'm sure it would be much faster with a motorized food grinder.

1 medium onion, chopped
2 cups sugar
1 cup cider vinegar
