GRANDMA PIETZ'S CRANBERRY CAKE PUDDING

3 tablespoons butter, softened
1 cup sugar
1 large egg, room temperature
2 cups all-purpose flour
2 teaspoons baking powder
Dash salt
1 cup 2% milk
2 cups fresh or frozen cranberries, thawed
SAUCE:
2 cups packed brown sugar
1 cup water
1/2 cup sugar
3 tablespoons butter
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. Grease a 13x9-in. baking pan., In a large bowl, beat butter and sugar until crumbly. Beat in egg. In another bowl, whisk flour, baking powder and salt; add to butter mixture alternately with milk, beating well after each addition. If desired, coarsely chop cranberries. Fold cranberries into batter., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 20-25 minutes., In a large saucepan, combine brown sugar, water, sugar and butter; bring to a boil over medium heat, stirring constantly to dissolve sugar. Cook and stir until slightly thickened; stir in vanilla. Serve warm with cake.

1 cup all-purpose flour
2 teaspoons baking powder
1/2 cup milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
3 1/2 tablespoons cocoa powder
1 3/4 cups sugar
1 cup hot water
1 cup whipping cream
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 375°F.
  • Combine first 5 ingredients, 1-1/2 Tbs.
  • cocoa powder and 3/4 cup sugar in a bowl.
  • Pour into an 8 or 9 inch baking dish.
  • Combine 2 Tbs.
  • cocoa powder, 1 cup sugar and hot water in a separate bowl.
  • Pour over cake batter and bake about 40 minutes.
  • Combine remaining ingredients in a chilled bowl.
  • Using chilled beaters, whip cream mixture until stiff.
  • Serve cake upside down with whipped cream.

This is my favorite cake recipe--my grandmother made it all the time. It is a great lemon pound cake that's not too sweet.

3 cups all-purpose flour
1 teaspoon salt
1 cup milk
1 ½ teaspoons lemon extract
3 cups white sugar
2 sticks butter
½ cup shortening (such as Crisco®)
5 eggs

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a tube pan.
  • Sift flour and salt together into a bowl. Mix milk and lemon extract together in a separate bowl.
  • Combine sugar, butter, and shortening in a large bowl; beat with an electric mixer until creamy. Add eggs one at a time, beating until well combined. Mix in the flour mixture alternately with the milk mixture, beginning and ending with flour. Spread batter in the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 2 hours. Do not open the oven door while the cake is baking. Cool briefly in the pan before inverting onto a wire rack to cool completely.

My grandma ran a country club and a restaurant in her day. She can make amazing food, but sometimes it's hard to get a recipe from her because she doesn't measure anything and makes everything from memory. While letting her talk it out, I was able to get this banana pudding and a few other recipes written down. Enjoy!

1 (12 ounce) package vanilla wafers, divided
1 cup white sugar
½ cup all-purpose flour
½ teaspoon salt
4 egg yolks
2 cups milk
1 teaspoon vanilla extract
1 tablespoon butter
4 bananas, sliced, or more to taste
4 egg whites
¼ teaspoon cream of tartar
5 tablespoons white sugar
½ teaspoon vanilla extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Line the bottom of a baking dish with some wafers. Combine sugar, flour, and salt in a bowl.
  • Beat yolks in a heavy saucepan over medium heat. Add flour mixture alternately with milk and vanilla extract, stirring constantly. Bring to a simmer and cook until slightly thickened, 8 to 10 minutes. Add butter; continue stirring until thickened to a pudding-like consistency, 5 to 7 minutes more.
  • Layer a portion of banana slices over the wafers and cover with pudding. Repeat layers with remaining bananas, wafers, and pudding.
  • Beat egg whites in a glass, metal, or ceramic bowl, gradually adding cream of tartar, until soft peaks form. Add sugar and continue beating on high speed until stiff peaks form. Fold in vanilla extract. Spoon meringue over the pudding.
  • Bake in the preheated oven until meringue browns, 15 to 20 minutes. Let cool before serving.

1 package lemon cake mix (regular size)
1 package (3.4 ounces) instant vanilla pudding mix
4 large eggs, room temperature
1 cup water
1/2 cup canola oil
1/4 cup poppy seeds
DRIZZLE:
2 cups confectioners' sugar
2 tablespoons water
2 tablespoons lemon juice

Steps:

  • In a large bowl, combine the cake mix, pudding mix, eggs, water and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in poppy seeds. Transfer to a greased and floured 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., For drizzle, in a small bowl, combine the confectioners' sugar, water and lemon juice; drizzle over cake.
