GRANDMA'S CHEESY POTATOES

Grandma's Cheesy Potatoes image

My grandmother makes this every year with a brisket for Christmas dinner. This is hands down my favorite potato recipe ever. I leave the skins on the potatoes, but this is optional. Garnish with chopped green onions or Italian parsley, and top with more cheese for a restaurant 'look.' I hope you enjoy this recipe as much as we do.

Yield 12

Number Of Ingredients 8

cooking spray
1 pound medium yellow-flesh potatoes, scrubbed and chopped into 1-inch cubes
1 pound red potatoes, scrubbed and chopped into 1-inch cubes
1 cup shredded mozzarella cheese
½ cup shredded Cheddar cheese
½ cup sour cream
½ cup mayonnaise
4 tablespoons salted butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a deep 9x13-inch baking dish with cooking spray.
  • Place yellow and red potatoes into a large pot and cover with salted water; bring to a boil. Cook until soft, about 10 minutes. Drain.
  • Combine mozzarella cheese, Cheddar cheese, sour cream, and mayonnaise in a large bowl; mix well. Slowly add potatoes and toss; use a wooden spoon or flat spatula to avoid mashing the potatoes.
  • Pour potatoes into the prepared pan. Dot butter over the top and cover with foil.
  • Bake in the preheated oven, 25 to 30 minutes. Remove from oven and uncover. Preheat the oven's broiler. Return to the oven and broil until top is browned, about 5 minutes.

GRANDMA'S CASSEROLE

Grandma's Casserole image

This recipe goes back to when my family lived on the farm and was tight on cash. A delicious combination of just the right ingredients! YUM. Grandma is an amazing cook. Note-- For the vegetables you can substitute a bag or two of frozen vegetables. I like to use the new steam bags that you stick in the microwave!

Time 50m

Yield 6 serving(s)

Number Of Ingredients 7

1 lb ground beef
16 ounces instant mashed potatoes
16 ounces of mild shredded cheese
11 1/2 ounces cream of mushroom soup
14 ounces carrots (frozen or canned)
14 ounces green beans (frozen or canned)
14 ounces sweet corn (frozen or canned)

Steps:

  • Preheat oven to 350°F.
  • Brown the beef in a frying pan. While the beef is cooking, follow the directions on the instant potato box and prepare those in a separate pot. If you are using frozen vegetables, cook those now as well in a separate pot. If you use canned veggies, there is no need to cook them.
  • When the beef is browned, drain any grease from the pan. Add the can of creamed soup directly to the frying pan and mix the meat and soup together. (heat should be off now.).
  • On the bottom of a 13x9 baking pan smooth the beef mixture to cover the bottom. Add the vegetables on top of the beef. MAKE SURE TO DRAIN ALL LIQUIDS BEFORE ADDING TO THE DISH! On top of the vegetables smooth over the already prepared mashed potatoes. Sprinkle the cheese on the top and season with black pepper.
  • Stick 'er in the oven for 20-30 minutes or until the cheese is nicely tanned.
  • Enjoy!

  • Wash and peel potatoes, removing any eyes. Rinse and slice into quarters lengthwise. Place in an 8-quart stockpot. Add two inches of water and 1 tablespoon salt. Bring to a boil, reduce to a simmer, and cover until the potatoes are cooked through, 20-25 minutes.
  • Once the potatoes are cooked, remove them from the heat and drain. Reserve the potato water for another use. Pour the drained potatoes into a bowl and allow the steam to settle for 2 minutes. Using an electric hand mixer or mashing by hand, mash potatoes thoroughly. Add milk slowly and mix in, alternating with pieces of butter. Continue to mix until smooth.
  • Taste and adjust seasoning as needed, adding salt and pepper. Serve immediately as potatoes can become stiff the longer they sit.
