Aebleskiver - a Danish dessert, like doughnut holes, but sweeter and much better traditionally served with glogg during the Advent. Cooked in a cast iron pan that resembles an egg poacher. Serve hot with syrup, jam or powdered sugar.

2 egg whites
2 cups all-purpose flour
2 teaspoons baking powder
1 tablespoon white sugar
½ teaspoon baking soda
½ teaspoon salt
2 egg yolks
4 tablespoons butter, melted
2 cups buttermilk
1 cup vegetable oil for frying

Steps:

  • In a clean glass or metal bowl, beat the egg whites with an electric mixer until they can hold a stiff peak. Set aside.
  • Mix together the flour, baking powder, salt, baking soda, sugar, egg yolks, melted butter and buttermilk at one time and beat until smooth. Gently fold in the egg whites last.
  • Put about 1tablespoon of vegetable oil in the bottom of each aebleskiver pan cup and heat until hot. Pour in about 2 tablespoons of the batter into each cup. As soon as they get bubbly around the edge, turn them quickly (Danish cooks use a long knitting needle, but a fork will work). Continue cooking, turning the ball to keep it from burning.

This Danish treat is essentially a pancake ball. They often had fillings like jams or applesauce but we always made them plain and dipped them in powdered sugar.

2 large eggs, separated
¾ cup all-purpose flour
1 tablespoon white sugar
½ teaspoon baking powder
1 pinch salt
¾ cup sweetened condensed milk
1 tablespoon shortening
¼ cup unsalted butter, melted, or as needed

Steps:

  • Beat egg whites in a bowl until stiff.
  • Mix flour, sugar, baking powder, and salt together in a second bowl. Mix in egg yolks, condensed milk, and shortening. Fold in egg whites.
  • Heat an aebleskiver pan over medium heat until hot. Brush each cup with a little melted butter using a pastry brush, then fill each with about 2 tablespoons of batter until almost full. Cook until they begin to bubble; flip over, allowing batter to fill the bottoms of the cups. Continue to cook, turning as needed, until golden brown. Repeat with remaining batter.

  • In a large bowl, whisk together the warm milk and yeast; set aside until the mixture begins to bubble, about 5 minutes. Whisk in the eggs and sugar until combined, then add the butter, vanilla, lemon juice and zest. Finally, add the flour and whisk until the batter is smooth.
  • Cover the bowl loosely with plastic wrap and set aside in a warm place until the batter is at least doubled in size, about 30 minutes. The batter will be thick and slightly sticky.
  • Heat the aebleskiver pan over medium heat, then brush each mold lightly with melted butter. When the butter just begins to brown, pour the batter so each mold is filled almost to the rim. (Start with the middle mold as it receives the least amount of heat and remember the sequence in which you fill each mold in the pan, as the aebleskivers will need to be turned in that order.)
  • When a solid crust has formed on the bottom of each mold, reduce the heat slightly and use a skewer to loosen and turn each aebleskiver by one-third. As the crust continues to form, turn each by one-third again. Finally, turn each mold again so the entire crust is formed. Reduce the heat to low and continue to cook until the interior of each aebleskiver is cooked through. A toothpick or skewer inserted should come out clean.
