HEARTY BUCKAROO BEANS



Hearty Buckaroo Beans image

When you've got all your favorite buckaroos in one place, have some of these warm and hearty, bacon-studded beans on hand.

Number Of Ingredients 8

1 pkg. (12 oz.) OSCAR MAYER Center Cut Bacon, cut into 1-inch pieces
1 lb. ground beef
1 medium onion, chopped
2 cans (15 oz. each) baked beans
1/3 cup firmly packed brown sugar
2 Tbsp. vinegar
1 Tbsp. BULL'S-EYE Original Barbecue Sauce
1 clove garlic, chopped

Steps:

  • Preheat oven to 350°F. Cook bacon in large skillet until crisp; drain. Set aside.
  • Brown ground beef in same skillet on medium heat; drain. Add onion; cook until crisp-tender, stirring occasionally. Add bacon and remaining ingredients; mix well. Spoon into 2-quart casserole dish; cover.
  • Bake 45 minutes.

Grandma's Beans image

Number Of Ingredients 9

5 cloves garlic
2 medium carrots
1 serrano chile
1 large white onion
3 tablespoons vegetable oil
2 teaspoons ground cumin, or more as desired
2 cups dried pinto beans, soaked overnight
1 orange, halved
1 tablespoon salt, or more as desired

Steps:

  • Rough chop the garlic, carrot, serrano and onion into small pieces. Heat the oil in a medium pot over medium-high heat. Add the chopped vegetables and 1 teaspoon cumin to the pot and cook until the onion starts to brown.
  • Strain the beans and add them to the pot. Pour in enough water to just cover the beans. Cover and bring them to a boil. Stir, then cover again and lower to a simmer. Simmer the beans until they start to burst, around 1 hour.
  • Uncover the pot and add the orange, squeezing the juice into the pot and then dropping the halves in. Stir in the remaining teaspoon cumin and the salt. Continue to simmer to allow the beans to thicken, about 45 minutes more. Add more cumin and salt to taste.
  • Serve as a side dish, over rice, or on their own on a taco.

SOUTHERN-STYLE GREEN BEANS WITH BACON AND NEW POTATOES



Southern-Style Green Beans with Bacon and New Potatoes image

8 small new potatoes, halved if large
Salt and freshly ground black pepper
4 slices bacon, cut into thirds
1 medium onion, finely chopped
2 pounds fresh green beans, ends trimmed

Steps:

  • In a large saucepan or medium Dutch oven, cook bacon over medium heat until it has rendered most of its fat and has begun to brown, about 5 minutes. Add the onion and saute until translucent, about 5 minutes. Add the green beans and potatoes and enough water to just cover them. Bring to a boil, then reduce the heat to low. Season with salt and pepper, to taste, then cover the pan and simmer until the beans are very tender, about 1 hour, stirring occasionally and adding more water if necessary to keep the beans covered. As the beans get close to being done they will become quite fragile, so take care when stirring.

Grandma's Green Beans with Bacon Vinaigrette image

Ridiculously good beans that make a great side dish to just about anything. One of those recipes that grandma made for years that we could never get enough of. Garnish with sliced or slivered almonds.

4 slices bacon
2 pounds fresh green beans, trimmed
½ cup finely chopped onion
½ cup brown sugar
¼ cup white vinegar
½ teaspoon salt
½ teaspoon dry mustard
ground black pepper to taste

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes.
  • Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add green beans, cover, and steam until tender-crisp, 3 to 5 minutes. Drain.
  • Drain bacon slices on paper towels, reserving grease in the skillet. Saute onion in the bacon grease until softened, about 5 minutes. Stir in brown sugar, vinegar, salt, mustard, and pepper. Stir well, scraping up any onion bits off the bottom of the skillet. Cook until bubbling, 3 to 5 minutes.
  • Add green beans to the skillet with the sauce; toss to coat well. Chop cooked bacon and stir into the beans. Serve hot.

This is a recipe request for pinto beans. It is from an old work cookbook that I have had for about 26 years. It is a treasured book full of wonderful recipes and wonderful memories of some really great people!

Number Of Ingredients 12

1 lb dry pinto beans
6 cups water
1 large onion
2 garlic cloves
1 bay leaf
1/2 lb salt pork
2 cups canned tomatoes, diced
1/2 teaspoon dry mustard
1/2 cup green peppers or 1/2 cup red pepper, diced
2 teaspoons chili powder
2 tablespoons brown sugar
1/4 teaspoon oregano

Steps:

  • Add washed beans to water in large heavy pot; bring to boil.
  • Boil for 2 minutes, then remove from heat and cover.
  • Let stand an hour.
  • Slice onion thick and garlic thin; add them along with the bay leaf and salt pork and bring to a rapid boil.
  • Reduce heat to a simmer; cover tightly and cook until beans are tender.
  • Add tomatoes, dry mustard, green pepper, chili powder, brown sugar and oregano.
  • Cover and simmer for about 2 hours to get full rich flavor.
  • Beans should cook until there is just enough liquid left to resemble thick gravy.
  • You may have to remove cover at the last hour of cooking to thicken beans.

GRANDMA'S GREEN BEANS

5 slices thick-cut bacon
1 red onion, sliced thin
1 jalapeño, seeded and diced small
1 1/2 pounds green beans, trimmed
1 cup chicken stock
1 teaspoon garlic powder
Kosher salt and freshly ground black pepper
1/4 cup fried onions

Steps:

  • Place the bacon in a large cast-iron skillet over medium heat and cook until crisp, 8 to 10 minutes. Remove the bacon and all but 2 to 3 tablespoons of the bacon grease.
  • Add the onion and jalapeño and cook for a minute or two, then add the green beans. Cook until the green beans are bright green, an additional minute. Add the chicken stock, garlic powder and a good pinch of both salt and pepper. Bring to a simmer and lightly cover, allowing the some of the steam to escape. Cook until the liquid is evaporated and the beans are starting to soften, but still have a bite, 10 to 12 minutes.
  • Transfer the beans to a serving vessel. Crumble the bacon and sprinkle it over the top of the beans, along with the fried onions.

2 Tbsp vegetable oil
2 1/2 Cups chopped white onions
1 1/2 cups chopped red bell pepper
1/1 /4 cups chopped green bell pepper
1 28-ounce can diced tomatoes in juice
2 15-ounce cans kidney beans, rinsed, drained
2 8-ounce cans tomato sauce
1/2 cup mild-flavoured (light) molasses
1/2 cup bottled mesquite barbecue sauce
2 Tbsp freshly ground coffee beans
1 Tbsp hot pepper sauce
1 Tbsp chopped fresh oregano
1 tsp chopped fresh thyme
5 Tbsp chopped fresh basil

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions and bell peppers. Sauté until tender, about 10 minutes. Add tomatoes with their juices and next 8 ingredients. Reduce heat to medium-low. Simmer uncovered until mixture thickens slightly and flavours blend, stirring often, about 30 minutes. Stir in 3 tablespoons basil. Season to taste with salt and pepper. Transfer mixture to large bowl. Sprinkle with remaining 2 tablespoons basil and serve.

IDAHO BUCKAROO BEANS



Idaho Buckaroo Beans image

Number Of Ingredients 12

1 pound (2 cups) pink, red, or pinto beans, soaked overnight in 6 cups water
1/2 pound smoked ham, salt pork, or slab bacon, cut up
1 large onion, coarsely chopped
2 garlic cloves, sliced
1 small bay leaf
2 cups solid-pack or fresh-peeled tomatoes
1/2 cup chopped green pepper
2 teaspoons chili powder
2 tablespoons brown sugar
1/2 teaspoon dry mustard
1/4 teaspoon crushed oregano leaves
salt (optional)

Steps:

  • Drain beans and add fresh water to 2 inches above beans. Add meat, onion, garlic, and bay leaf. Heat to boiling and cover tightly. Cook over low heat for 1 1/2 hours or until beans are almost tender. Add all remaining ingredients, except salt, and more water if necessary. Simmer, uncovered, for 2 hours, stirring once or twice. Taste and add salt, if necessary. There should be enough liquid left on the beans to resemble a medium-thick gravy. If desired, the beans may be baked, covered, at 325° after the first step is completed. Note: Long, slow cooking helps to give a rich, full flavor. May be made ahead and refrigerated, then reheated, even on a barbecue grill.

2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
¼ cup onion, diced
1 cup sour cream
3 (14.5 ounce) cans French style green beans, drained
2 cups shredded Cheddar cheese
½ cup crumbled buttery round crackers
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
  • Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.
  • Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.
