Here's a decadent dessert that's sure to dazzle on any sideboard.

Number Of Ingredients 7

25 chocolate wafer cookies (such as Nabisco Famous) (from 1 [9-oz.] pkg.)
1/4 cup (2 oz.) unsalted butter, melted
8 ounces cream cheese, softened
1 cup creamy peanut butter
3/4 cup (about 3 oz.) unsifted powdered sugar
2 cups heavy whipping cream
2 tablespoons chopped salted dry-roasted peanuts

Steps:

  • Place cookies in a food processor; pulse until finely crumbled, 12 to 15 pulses. Add butter; pulse until crumbs are moistened, about 6 pulses. Transfer crumbs to a 9-inch pie dish, pressing firmly into bottom and up sides. Refrigerate for 1 hour.
  • Place cream cheese, peanut butter, and powdered sugar in bowl of a stand mixer fitted with a whisk attachment. Beat on medium-high speed until light and fluffy, 2 to 3 minutes. Transfer to a large bowl, and set aside. Clean mixer bowl and whisk attachment, and wipe dry.
  • Add whipping cream to cleaned mixer bowl; beat on medium-high speed until medium peaks form, 2 to 3 minutes. Gently fold 2 cups of the whipped cream into peanut butter mixture. Transfer filling to prepared piecrust, and gently smooth top using a rubber spatula. Top with remaining whipped cream. Refrigerate at least 3 hours or up to 8 hours (or overnight).
  • Sprinkle top with peanuts, and serve.

An old-fashioned peanut butter pie is a classic (and easy) Southern dessert!

2 cups vanilla wafer cookie crumbs ((I use 60 whole Nilla wafer cookies))
6 tablespoons salted butter, melted and cooled
¼ cup sugar
1 ½ cups creamy peanut butter
1 (8 ounce) block cream cheese, softened at room temperature
1 cup confectioners' sugar, sifted
2 cups heavy whipping cream
Optional garnish: chopped peanuts; whipped cream

Steps:

  • Preheat oven to 400° F.
  • In a bowl, combine cookie crumbs, melted butter, and sugar. Pat the mixture onto the bottom and sides of a buttered 9-inch pie plate. I use the flat bottom of a small measuring cup to press the crumbs in an even layer.
  • Bake the shell in the 400° F oven for 10 minutes, transfer it to a rack, and let cool completely.
  • Once the crust is completely cool, prepare the filling. In a large bowl, use an electric mixer to beat the peanut butter and cream cheese on medium speed until combined. Add confectioners' sugar, beat to combine. Add cream; mix on low speed until combined. Increase mixer to high speed; beat just until the mixture thickens (be careful not to overbeat).
  • Spread the filling in the pie crust. Cover and refrigerate until firm; at least 4 hours or overnight.
  • Garnish with chopped peanuts and whipped cream just before serving.

Steps:

  • The key to pleasing the pallet of a Peanut Butter Pie connoisseur is to not mix the peanut butter into the filling. Note that everything is made from scratch. This extra effort will reward you with excellent flavors. OVEN : 350℉ (180℃) for 15 to 20 minutes. Blend peanut butter and confectioners sugar together as for pastry until well mixed and mealy. Spread about ⅔ of mixture over baked pie crust. Reserve remainder for top. Combine flour, sugar, and salt together; blend in scaled milk. Blend mixture into slightly beaten egg yolks. Return to double boiler and cook about 2 minutes more. Add butter and vanilla. Turn into pie shell and top with meringue. For meringue, beat egg whites until stiff enough to hold their shape. Add cream of tartar and beat until blended. Mix sugar and cornstarch and add to egg whites. Beat until very stiff. Spread on filled pie shell and sprinkle on remaining peanut butter crumbs. Bake in 350℉ (180℃) oven for 15 to 20 minutes. Cool away from draft.

When I married my husband, he raved about his grandma's peanut butter pie. She brought it to almost every family gathering, and I quickly agreed with him! Grandma has not made it in a long time since she had a stroke, and the rest of the family doesn't make it (I think they are sad her tradition is no longer hers). I am so happy she shared it with me so that I can make it for my hubby!

1/2 cup(s) chunky peanut butter
1 cup(s) powdered sugar
1 - 9" pie crust
3 ounce(s) custard mix (like the pudding mix but custard flavored)
1 cup(s) heavy cream (i used cool whip instead of heavy cream)
2 cup(s) milk
- peanuts

Steps:

  • Combine peanut butter and sugar until crumbly. Reserve 1/4 cup. Sprinkle in pie crust. Mix custard mix with milk per package directions. Pour into crust. Chill to set. Beat cream until stiff. Cover the pie, sprinkle with reserved mix and peanuts.
  • Grandma Shipley told me that the custard mix is harder to find, so she would make it with vanilla and add an egg into the mix. I have never liked raw egg, so I chose instead to make it with a little more peanut butter and a rich vanilla filling if I can't find the custard.

1 (9 inch) prepared graham cracker crust
1 (8 ounce) package cream cheese, softened
½ cup creamy peanut butter
½ cup confectioners' sugar
1 (16 ounce) container frozen whipped topping, thawed
15 miniature chocolate covered peanut butter cups, unwrapped

Steps:

  • Mix the cream cheese, confectioners' sugar and peanut butter together until smooth. Fold in 1/2 of the whipped topping. Spoon the mixture into the graham cracker crust.
  • Place the remaining whipped topping over the top of the peanut butter mixture and garnish with the peanut butter cups. Chill for at least 2 hours or overnight before serving.

  • Cover this with small instant pudding, made according to package directions.
  • Spread with layer of whipped toping.

Dough for single-crust pie
1-1/2 cups light corn syrup
1/2 cup sugar
1/2 cup creamy peanut butter
1/4 teaspoon salt
4 large eggs
1/2 teaspoon vanilla extract
Optional toppings: Chopped peanuts, broken Nutter Butter cookies and whipped topping

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge., In a large bowl, beat corn syrup, sugar, peanut butter and salt until blended. Beat in eggs and vanilla until smooth. Pour into crust. Bake 60-70 minutes or until top is puffed and center is almost set; cover top loosely with foil during the last 30 minutes to prevent overbrowning., Remove foil. Cool on a wire rack. (Top may sink and crack slightly upon cooling.) Serve or refrigerate within 2 hours. Top as desired.
