1 1/4 c warm water
1/4 c dark molasses (unsulphured) grandma's brand works best
3 c bread flour
3/4 c rye flour
2 Tbsp packed brown sugar
1 1/2 tsp salt
2 Tbsp swedish mix (recipe follows)
1 1/2 Tbsp butter or margarine
1 1/2 Tbsp dry milk powder
2 1/2 tsp yeast (rapied rise) for bread machine
SWEDIS MIX (GROUND DOWN IN A COFFEE GRINDER OR MINI FOOD PROCESSOR
2 Tbsp fennel seeds
2 Tbsp caraway seeds
2 Tbsp anise seeds

Steps:

  • 1. Ground down your Swedish mix and place in an air tight container. (you will have extra)
  • 2. Follow instructions for your bread machine, mine says to put all liquids in first then add dry ingredient's.
  • 3. Place warm water in the bottom along with the molasses. then add flours, salt in one corner and butter in the other, brown sugar in the other. I sprinkle my Swedish mix and milk in the center before making my dwell for my yeast.
  • 4. Set bread machine to your desired settings, and let the machine do its job and you will have a perfect loaf of bread :)
  • 5. I pray your family enjoys my great grandmothers recipe that I have grown up on and love so dearly. This makes such a savory loaf of bread and tastes amazing with jams and honey too ! Enjoy!!

One day, I discovered a recipe for these tasty loaves. My wife, Sharon, challenged me to make them. It took a bit of time, but she said they were delicious.-Wade Harmon, Orange, Massachusetts

Yield 3 loaves.

Number Of Ingredients 17

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
2 cups warm milk (110° to 115°)
1/2 cup butter, melted
1-1/4 cups sugar
4 eggs, lightly beaten
1-1/4 teaspoons ground cardamom
1 teaspoon salt
10 to 11 cups all-purpose flour
TOPPING:
2 tablespoons all-purpose flour
2 tablespoons sugar
2 tablespoons cold butter
GLAZE:
1/4 cup water
2 tablespoons sugar
1 egg yolk

Steps:

  • In a large bowl, dissolve yeast in warm water. Stir in milk, butter, sugar, eggs, cardamom and salt; beat until smooth. Gradually add 8 cups of flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into nine equal portions. Shape each portion into a 14-in. rope. For each loaf, braid three ropes together on a greased baking sheet; pinch ends to seal. Cover and let rise for 30 minutes. , In a small bowl, combine flour and sugar; cut in butter until mixture is crumbly. Sprinkle over braids. Bake at 325° for 25 minutes or until golden brown. Combine glaze ingredients until smooth; brush some over loaves. Bake for 5 minutes. Brush with remaining glaze; bake 5-10 minutes more. Remove from pans to cool on wire racks.

This is a delicious Swedish coffee bread recipe converted for use with a bread maker! My family is Swedish, and ever year we make this recipe just in time for Christmas. We always enjoy it especially on Christmas morning. We used to make a long, drawn out version that was my great-grandmother's recipe, but thanks to modern conveniences like the bread maker it takes much less time and work! I hope your family enjoys this as much as mine has.

1 cup milk
½ teaspoon salt
1 egg yolk
2 tablespoons softened butter
3 cups all-purpose flour
⅓ cup sugar
1 (.25 ounce) envelope active dry yeast
3 teaspoons ground cardamom
2 egg whites, slightly beaten
pearl sugar, or other decorative sugar

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • When the dough cycle has finished, divide into three equal portions. Roll each piece into a rope 12 to 14 inches long. Lay the three ropes side by side, then braid together. Tuck the ends underneath, and place onto a greased baking sheet, cover loosely with a towel, and allow to rise until doubled in bulk.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush the braid with beaten egg white and sprinkle with pearl sugar. Bake in preheated oven until golden brown, 20 to 25 minutes.

This is an old Swedish recipe my husband's great grandma had. It is absolutely wonderful and they go very fast.

Number Of Ingredients 15

1 (1/4 ounce) package dry yeast
1/4 cup water
1/2 teaspoon sugar
1 cup scalded milk
1/2 cup sugar
1 teaspoon salt
1/3 cup softened Crisco
1 egg, at room temperature and beaten
4 -5 cups white flour or 4 -5 cups bread flour
chopped walnuts
1 egg, beaten (for brushing over each roll before baking)
melted butter
sugar
cinnamon
walnuts

Steps:

  • Soften yeast with 1/4 cup warm water and 1/2 tsp sugar and set aside.
  • In mixing bowl combine scalded milk, sugar, salt and Crisco, cool to lukewarm, and add yeast and 1 of the eggs.
  • Gradually add flour to form a soft dough.
  • Knead in remaining flour until smooth and satiny, about 5-8 minutes.
  • Cover and let rise until double.
  • Divide dough in two and on a floured surface with a rolling pin roll out each dough to about 12x9 size.
  • Brush with melted butter, and sprinkle with cinnamon, sugar and chopped walnuts.
  • Starting with 12-inch side, roll up jelly roll style seal seams and ends and place each roll seam side down on cookie sheet (greased).
  • Take scissors (or knife) and snip part way through each bread roll one inch apart in a tractor tread style.
  • Cover and let rise again.
  • Brush both bread rolls with another beaten egg and sprinkle nuts over both.
  • Bake at 350°F for about 25 minutes.
  • Allow to cool slightly and if desired ice with favorite icing recipe.

Number Of Ingredients 11

1 cup whole milk
½ teaspoon kosher salt
½ stick unsalted butter, plus more for greasing
¾ cup sugar, divided, plus 1 teaspoon
¼ teaspoon ground cardamom
1 cup warm water
1 package active dry yeast, 1/4 ounce (7 grams)
1 large egg, lightly beaten
4 cups all purpose flour, sifted
water, for brushing
coarse sugar, for decorating

Steps:

  • In a medium saucepan, combine the milk, salt, butter, ¾ cup sugar, and the cardamom. Warm over medium heat, stirring until the butter melts and the sugar dissolves, about 5 minutes. Remove the pot from the heat and let cool slightly, about 5 to 7 minutes. Milk should be warm to the touch but not too hot.
  • In a liquid measuring cup, dissolve the yeast and remaining teaspoon of sugar in the warm water. Let sit until the mixture is foamy, about 3 to 5 minutes.
  • Once the milk mixture has cooled, pour into a large bowl and add the yeast mixture and the egg. Stir until well combined.
  • Add the flour, 1 cup (125 grams) at a time, stirring or kneading with your hands between each addition, until no longer sticky. Turn the dough out onto a lightly floured surface and knead for 15 minutes, or until it springs back when pressed. Transfer to a large bowl greased with butter, cover with plastic wrap, and let rise in a warm spot until doubled in size, about 1 hour.
  • Line a baking sheet with parchment paper.
  • Turn the dough out onto a clean surface and divide in half. Cut each half into 3 equal portions. Stretch and roll each piece into a 14-inch rope. Place 3 pieces parallel to each other and pinch together the ends on one side, tucking underneath to conceal. Braid the strands together, pinch the ends together at the other end and tuck underneath. Place the loaf on the prepared baking sheet and cover with a damp towel. Let rest until doubled in size, about 1 hour. Repeat with remaining dough.
  • Preheat the oven to 350°F (180°C).
  • Uncover the loaves and lightly brush with water. Sprinkle with coarse sugar, brushing the excess from the baking sheet.
  • Bake for 25-30 minutes, rotating halfway through, until the top is golden brown and the loaf sounds hollow when tapped on the bottom. Let cool before slicing.
  • Enjoy!

1/2 cup packed light brown sugar
1/4 cup dark molasses
1/4 cup butter, cubed
2 tablespoons grated orange zest
1-1/2 teaspoons salt
1 teaspoon aniseed, lightly crushed
1 cup boiling water
1 cup cold water
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
4-1/2 cups all-purpose flour
3 to 4 cups rye flour
2 tablespoons cornmeal
2 tablespoons butter, melted

Steps:

  • In a large bowl, combine brown sugar, molasses, butter, orange zest, salt, aniseed and boiling water; stir until brown sugar is dissolved and butter is melted. Stir in cold water; let stand until mixture cools to 110° to 115°., Meanwhile, in a large bowl, dissolve yeast in warm water. Stir in molasses mixture; mix well. Add, all-purpose flour and 1 cup rye flour. Beat on medium speed 3 minutes. Stir in enough remaining rye flour to form a stiff dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into 2 oval loaves. Grease 2 baking sheets and sprinkle lightly with cornmeal. Place loaves on prepared pans. Cover and let rise until doubled, about 30 minutes., Preheat oven to 350° . With a sharp knife, make 4 shallow slashes across top of each loaf. Bake 30-35 minutes or until golden brown. Remove to wire racks; brush with butter.
